I am so glad you guys are documenting and capturing what's left of all that is good of old Hong Kong. So much of this reminds me of when I grew up there as a child. The culture,people and food are everything that's precious.

Thank you for creating this video! My mother's parents (gong gong and paw paw) were both in the fishing industry from what I was told and I've been fortunate enough to see the area once back in 2019. I wish I had known more about it to see more places to see what my family is from as my Dad and I both visited, but we did not do as much as planned. One day, I hope to visit again soon and explore on my own!
I enjoyed the interview with Gui Je who dries fish on Cheung Chau island. I have visited a few times and noticed all the dried seafood. My parents roots are in Hong Kong and I’m grateful for all the fresh seafood I have eaten while growing up in California. Great videos!
This is so athentic and sweet! I grew up in HK but migrated to the US years ago. I stayed in a Aberdeen hotel opposite the market several years ago and eally enjoyed visiting the market but apparently came a little late to be able to buy fresh fish. There were some limited ones left when I got there. I visit fish markets every chance I get when I travel to Spain, France, Japan, etc., but none compared to Aberdeen (as it felt so much like home). Thank you! This make me hungry.....
In Korea the most famous fishing places are not international financial, arts, and intellectual centers, like HK and Sing - its like a city that is also a country and so rich!
Salted fish have existed all around he world for centuries: before the fishing boats had ice on board, they would preserve the fish in salt directly on board, else the catch would have gone bad before they return to the port.
It would have been nice if you could have asked obvious questions about the fishing industry in HK like what started the decline of the HK fishing industry from "hundreds of fishing boats" to "only a few dozens" today. Was it overfishing? Was it pollution? How sustainable is the way they're fishing, all wild caught and no farm raised fish at the rate they're going. And since César is European I would have asked if he ever ate Bacalhau or Baccala and how it's different from the HK dried salted fish.
If you think using msg in fried rice like uncle Roger makes the dish delicious, wait till you try using salted fish instead. Oil, salted fish and whatever you want to stir-fry in that order will knock your teeth out with that flavour bomb.
Cleaner is better, but not with those new-style posters on the wall. As for the food, just ask yourself if you prefer authentic Italian pizza and pasta or those Americanise ones.
