Many stores over here (in Canada) utilize the name "魚塘米綫" but allows you to pick the noodles, the toppings, soups, extras (and includes a drink and even Bubble Waffle for two dollars more), I suspect they are in the same market if not the same concept.

There are some cart noodle restaurants in Singapore. Pricey but nice
