I love this channel. As a food lover who used to live in Hong Kong as a kid, this series brings back many very special memories of when I was living there. Sad to see the series come to an end, but I’m excited for the direction in which your channel is going.
Those two sauces that were poured onto the roast pork at the 4:05 mark definitely caught my eye. Particularly, that first brownish beige sauce or gravy. I can't recall if I'd ever seen that done here in the U.S. Apparently, there are a lot of "spices" or aromatics in it as the owner said in his voiceover narration at that point. That second sauce, which is something like a sticky sweet soy sauce, although fairly light in color here, is a more common finishing sauce on roast pork in the U.S. based on my experience over the years. Very interesting.
they prob won't give out their secrets for that specific sauce but almost all of these places will give you "duck juice" (not the plum sauce) and "charsiu juice", which are their respective braising liquids, upon request. just ask for both on the side and you can pour as needed, otherwise they dump it directly on top, which if you ordered the 2 or 3 delicacies plate, will make the rice soggy in minutes.
Food is definitely a Language we all speak and according this clip these meat 🍖 dishes are certainly speaking back!! I love the open fire/ smoke pit concept on the Pork!! the greyish sauce has an offally taste kind of like the inside of a roast duck

I would eat it without the sauce. You want to taste the roasting quality on its own.
