I made birria tacos last week! Haha. I smoked some brisket flat and some beef short ribs for my meats. They were so good. My wife said I have to make them again very soon lol
I made this today on my Big Green Egg, this was something I had never made and it was oh so good. They fell apart while I tried to pull them out using tongs so I used a spatula. This was amazing!! Thanks for sharing!!!!
@@utah123ify Ah, I see. Thats is how summer is here. That is why we make it on the stove. We use a griddle to do the cooking. We never use a BBQ grilling pit as shown in the video. Just crank up the fan on the range intake and get to cooking. BTW, we use corn tortillas as he used FLOUR. Never soak flour tortillas in that juice to cook. It is Sacrilegious. Flour tortillas are for breakfast tacos only.

I made this a couple weeks ago. Used Chuck and we loved it. I ate it for a week! Tacos just like you showed. Nachos, birria on rice, tostada style, every which way. Copied the recipe and added some clarification and a couple steps so I don’t mess up. Can’t wait to make it again and freeze half so I can have it on hand.
Taco heaven! I did some beef cheeks a while back and after smoking braised in beer with onions. Tasted great nearly like brisket point. Hard to source and very tough to trim up but a great option for shredded beef recipes
Quesabirria is my new obsession...it's so good. We usually have them with pork at the food trucks in south Louisiana, but beef cheek sounds AMAZING for this. Definitely gonna have to try making my own.
I put some of the cheese on the cooking surface itself and put the tortilla on top, just wait for it the miard reaction to let the cheese release and flip it normally. It makes it that much better.
I have that same smoker and can't wait to try it! The only thing I would change is to add some lime to the taco and use corn tortillas. Maybe have a dipping consomé with fat skimmed too.
That looks amazing. You really, really need to try Birrira tacos the way it's done in Mexico, with a fresh (homemade is best) corn tortillas. The corn tortilla adds a flavor which flour tortillas can never emulate. Great work, excellent video.
I’m with Malcolm on this one. Corn tortillas have a gritty texture that just turns me off. Flour tortillas are so much more flavorful and have a wonderful soft texture that just melts in your mouth.
Nice birria work for a gringo!! LOL......Another nice addition to the birria taco is guacamole, and instead of raw onion, try caramelizing Maui sweet onions. You got me started trying to BBQ beef & pork cheeks, and the braising makes them incredibly tender. Keep up the good work, mi amigo!

Melt the cheese b4 u put the beef on and then add cilantro and onion with a Lil more consume, then fold and finish, looks good though!
