What a lovely, spacious workshop you have, your choice of closed cell foam is the very best of all insulation for this application! Given the sheer volume in need of insulation, I too would be inclined to bring in a professional applicator rather than to attempt it myself with the domestic foam kits (of which you'd need gazillions!). Thank you for sharing the video of your excellent workshop, it looks to be a wonderful size to equip to your preferred layout.
I had this done to my building and car shed several months ago. The difference is night and day. My RV storage barn is an all metal 65x20 with a 14'x16' door. It was an original car shed that has been added to 4 different times with a concrete floor and no insulation. In the summer that building would sweat so bad it was almost raining inside and the heat inside was unbearable. After the insulation I am 15-20 degrees cooler in the summer and no more condensation. My car shed is 20x20 and it has the same results. Now in 80 degree weather the car shed is like sitting in the shade. I highly recommend this option for metal car sheds and buildings. My cost was $1.50 per square foot.
I’m thinking of doing the spray foam in my building like yours. Just curious, why did you only do the ceiling and how much of a difference is it with just the ceiling done?

I've only had the building up for a couple months but I have not noticed any condensation on the walls
I noticed your metal building is a vertical panel. Is that normal as far as the rain/snow can flow down?
