  • Being able to eat profiteroles and eclairs on the keto diet is a dream come true for me!
    This recipe was made after I saw a beautiful eclair in the window display of a famous bakery shop. I knew it wouldn't be healthy for me to eat this high sugar and high carbs pastry and decided to find a solution instead of having to prevent myself of this pleasure.
    So I made this recipe and now you can enjoy it too!

    Ingredients:
    3 large egg yolks
    1/3 cup powdered xylitol
    1/2 tsp salt
    1 cup heavy cream
    6 oz unsalted butter
    vanilla extract
    1/4 tsp xanthan gum
    1 1/2 cups almond flour
    1/4 cup coconut flour
    1 1/2 tsp baking powder
    1 1/2 tsp xanthan gum
    3 tbs xylitol
    1 1/2 cups water
    3 large eggs
    11 1/2 oz heavy cream
    1/2 cup xylitol
    1 1/2 oz sugar free dark chocolate

    Are they freezer friendly once baked? Would love to make these in advance👏🏼👏🏼👏🏼

      Haven't tried it but I suggest freezing the cream and pastries and fill it right before serving. Otherwise the pastries might get soggy 😊

      I haven't tried it so I don't know for sure. But I do recommend using it to get the right texture😊
