  • There is something rotten in David Chang’s kitchen and that’s a good thing. Rotten is delicious; katsuibushi in Japan, XO sauce, rotten bananas with Chef Christina Tosi, and kimchi. [Originally aired 2012]

when she said “people think im crazy” about her downright flacid bananas and i laughed out loud because she’s just objectively correct. that is the IDEAL stage for using bananas in cooking. you want em to look like theyre saying “sorry, this doesn’t usually happen…” because thats when theyre at their strongest

I made banana bread with some bananas that had been forgotten in a sack that looked like the rotten ones in this video. It was the best banana bread I have ever eaten.

in that this video was eye opening to me, but as soon as she said it, it made sense. Thinking of all the old bananas i have throuwn away and how intensly they smelled. Not bad just very intense for the most part. If therefor the flavors also intensified i had thrown away still perfectly usable bandanas -_- damm it ^^

@@kinngrimmmy great grandma would always take the bananas that would go to waste and make a walnut banana bread that was still the best I’ve ever had in my whole life… I miss that women and her baking dearly

try putting some in the freezer (no skin, in a plastic bag). let em get "weird", then thaw them and make banana bread. The liquid/syrup that comes off the thawed bananas is INSANE
