With enough data, the information can show us where opportunities lie to double-down on certain content and focus less on low performing content. Making sure you understand the data before taking action and test any hypothesis based on the data. The key thing is to make sure you have a healthy amount of videos out so that the data is meaningful before going down this road.

In your Studio dashboard in Analytics Advanced Mode. Clicking on your Channel Name in the top left opens a window with several options, tap on Groups to get started. These are unrelated to anything UA-cam does and unrelated to Playlists which is for presenting videos around particular topics and in particular playback order. Groups can be made for anything you want to track - color of the thumbnails, video series, long videos, short videos, etc.

Or does UA-cam categorise the entire channel into a specific category and then assigns a given CPM as a whole based on that? I've finally decided to pull the trigger after overcoming 'analysis paralysis', and decided to tackle UA-cam seriously. I wasn't sure whether I should experiment with videos on this channel I created back in 2006, or should I create a brand new one entirely and experiment with different types of content. Your guidance and feedback are tremendously valued and appreciated ❤️
CPMs are not "assigned". They can fluctuate video to video based on the audience watching, the topic, ad inventory, and so many other factors. Every ad that plays has its own rate, so the CPM is going to fluctuate continually as more ads are served over time. That fluctuation will be seen on each video as it gets more views, the average CPM for your channel as a whole will fluctuate as well.
I had never created group, I am posting videos and putting them into the relevant Playlist. What you suggest shall I create groups similar to Playlist ??? Looking forward to hear from you.
Grouping content in your analytics is for doing comparisons between different sorts of content, thumbnails, etc. A good example would be grouping a set of thumbnails with your face v's without your face. You can then see which group, on average has a higher CTR. You can also group by topic to see what topics tend to get more engagement, a higher average view duration, etc. Playlists are grouping content for the benefit of the viewers - sorted by topic, series, etc. Groups for analysis - Playlists for discoverability.

You have to remember to create the groups and THEN add the videos to them. I wish YT would add a feature during uploading where you can do it then.

It's great but you have first to setup "Group".
All you have to do is click “create group” and pick the videos for comparison.
