    In this tutorial I'll show you how to make these gorgeous isomalt sails to top your cakes or simply to add to your dessert table. You can also use isomalt to make sugar free candy or lollipops.

    I made this with my daughter for her 9th birthday cake and it turned out fantastic (even though we cracked some of the edges accidentally when we were first handling it. All her friends were amazed and she was so proud!!

    lovely tutorial. thank you for sharing. I just have a question if I may ask. once we have delivered the cake, the customer will store it in the refrigerator until its needed. wouldn't isomalt melt ? is there a solution

      Hi, yes it would melt. The customer has to know in advance that isomalt can not be refrigerated. I usually send it in a separate box and let them place it on top when they take the cake out of the fridge.

      Yes you can reheat it and pour it again. The only issue will be if you've added colour, the new sail will be a solid color, not streaked.

      Hi, humidity is the culprit. This is why I spray mine with cake gloss after set to stop the humidity from making it tacky.

    My isomalt sails are very sticky even after spraying with the gloss spray, do you check the temperature of the isomalt when melting it, i don't know what i am doing wrong.

      I'm so sorry I didn't see your question. It could be related to the environment you live in. The more humidity, the stickier the sail will be. The cake gloss should make a big difference though, but you have to use small sprays, not too much at once or it can compromise the sail.

      Hi. You cannot put the completed sails in the fridge as the moisture will soften it. Please store it at room temperature. 😊

      Your best bet is to spray it with cake gloss. It was always get sticky otherwise. 😊

      It can feel sticky. It has to do with humidity. It doesn’t hurt it, however it might weaken it if you live in a very humid climate. It’s better to keep it in a closed container until you need it. Cake gloss is a game changer though. It seals it up perfectly.

    I’m doing a coca-cola themed cake soon and it will be “gravity-defying” as if the can of coke is pouring down and wanted to use the isomalt bowl method to be like a “splash” but I was wondering, after the bowl has been made, I will need to add the bowl to the top of the cake and then a wooden dowel will need to go through the middle so that the coke can spill down so I was wondering once the bowl is made could I use the torch to heat the center just a bit and then make a hole for the dowel to go through? Is that how you would do it? I hope I explained that well! 😅

      Hmmm this is tricky. That could work but the bowl can be so fragile that it’s a bit risky. You might want to consider making a hole in the bottom of the bowl while it’s still firming up. I think it might be easier. You could put a small piece of a straw in the center when your pouring to maintain the hole. Or something else that won’t melt. That way you could slip the dowel through easily.

    How long before it mealts? Does it stand high heat like weather wise like if I use it for topping a cake and it’s hot outside will it mealt really easy?🙏🏼

      Hi. I’ve never had one melt but I think very hot humid temps might be a struggle. Room temperature is best.

    Hi, could u share information, i do isomalt until became glasses, but after 3 hour the isomalt start melt and stiky, need some advice

      You must live in a humid environment. I suggest using a cake gloss spray to seal it and keep it out of the fridge in a cool dry place. Spraying it seems to preserve it.

      Yes it can. The only issue is that the colour will all blend together. You can remelt isomalt over and over.

      Just store them in a dry, room temperature place. No refrigeration. If you choose to spray them with Cake Gloss, they will last for months. :)

      Hi. I apologize for missing your comment. I hope you’ve had success since then. The only thing I can think of is not cooking it long enough. High humidity climates can also make it more difficult. Have you been able to make one since?

      It cannot go in the fridge. Since it’s a hard candy, it also won’t need to. It will last for months on a container with lid. The cake will not affect it but don’t put it on until you’re ready to display the cake out of the fridge.

      You can also use PME glaze spray in small light coats. It is not absolutely necessary to spray them, I never did for the first two years that I made them. I only started spraying them recently.

      It was a small amount of water. No more than a tablespoon. It’s ok to eliminate the water altogether too.

      It can if you live in a very humid climate. I spray mine with cake gloss to prevent. I’ve had isomalt display toppers for months without issue. Of course they are only for display at that point.
