    Made this gum paste two months ago...best thing I've EVER made in life! Flowers. Figurines. Sculptures made from this were absolutely flawless! Mixes well with fondant, modeling chocolate and gel coloring.

    Just another thought, our family raises chickens. . .i can tell everyone first hand, the contents of the inside of an un cracked chicken egg does not cause salmonella, it's the outside of the egg shell or a cracked egg shell that causes salmonella...pasteurize a fresh egg by looking up the youtube video that describes the process of bringing your egg up to a certain temperature. If the egg has a stream of air bubbles coming from it while in the water, it probably has a crack in it, don't use it.

    I have been making my gumpaste for years following the instructions on the tylos container. Kneading in the shortening and using grams made a world of difference. It was so much fun kneading. The result was just perfect. Thanks for sharing.

    This is the best gum paste recipe. Im a first time gum paste maker and tried a few and failed each time. This one was easy and worked perfectly for me. For people complaining that it dried out, make sure you are adding enough shortening to the gumpaste. After adding the tylose powder when the gum paste forms, you may need to knead in more shortening into the dough than the recipe calls for. On the opposite side you may need less confectioners sugar. Mine didnt use the last 100g as it was fairly dry outside. Before placing the gum paste into a plastic bag I coated my ball with shortening and wrapped it in two layers of plastic wrap to rest overnight.

    If you want to color the entire batch at the beginning, and do not have a clue how many drops of color you want , etc., definitely add it in with the egg whites before you ever get started. . .i was adding color stirring the mix over and over again till I got the color I needed, but that causes the mix to be too stiff and had to work like heck to fold in the remaining 100 g powdered sugar. I don't even know if it will be too stiff tomorrow when I pull it out of the fridge to work with it. Don't even know how I would fix it other than add more shortening!

      Try freezer-safe plastic bags, and keep it in the freezer. Then let it thaw and knead as usual. It should keep for a very long time!

    TRADUCCIÓN AL ESPAÑOL: la receta como en el video: 125 g de proteína (claras de huevo), 725 g de azúcar glass tamizado, 30 g de cmc, tylosa, otros 100 g de azúcar en polvo sobre la mesa, un par de cucharaditas de margarina vegetal (20 g).
    (Esta usando 4 claras de huevos grandes y 750 - 800 gramos de polvo, si se me pega a las manos, agrego más polvo y luego agrego 12 cucharaditas de tylosa/ CMC, revuelvo y saco, trabajo con margarina y un poco todavía en polvo y paquete) =)

      No, you must have tylose or CMC for your gumpaste to be successful.

    I know this video is old but I just discover it and need help!! My gum paste came sticky and not stretchy enough. When I thin flower petal it does not stretch, just ripping. Very sticky, need to add a lot of starch. Any advice? Thank you

      Tylose is the brand name for the product containing carboxyl methyl cellulose (CMC).

      Yes, it is the same thing.This CMC (Carboxyl Methyl Cellulose) or Tylose powder by is a man-made gum used as a flower glue or a hardening agent which when added to fondant, creates a quick version of gumpaste/modelling paste. Refrence:bakingpleasures.com.au/p7016/cmc-tylose

      +Deepa Joseph When I don't have tylose powder, I use 220g confectioners sugar, 30 ml water, 1/2 tsp unflavored gelatine, 1/2 tsp of corn syrup. Good luck!

    I always used fondant on covering my cakes but I have a big problem. when I get my cake covered with fondant from the fridge, just a few minutes it has a moist texture it doesn't dry at all.

      once yu cover your cake with fondant, dont put it in the fridge

    Followed this recipe exactly. Used hardly any of the extra icing sugar/confectioners sugar at the end as my mixture was so firm and I could barely knead it before it became hard and crumbly. I worked quickly to prevent it drying out. Now after just over 24hrs it is too brittle and crumbly. After adding lots of water to try and bring it back to a pliable dough to work with, it is now rubbery and completely useless to work with, especially for making flowers as once rolled out it stays flat even after shaping and cupping petals.
    Please, have I done something wrong? Should I try working it into normal fondant and hope it resembles gumpaste? Should I just start again? Any help or advice from anyone would be extremely grateful.

    125 grams of egg whites,
    725 grams of powder sugar, after mixed for 2 min, gumpaste, than 30 grams of tylose powder after all mixed add 100 grams of powder sugar, take out and use, than 4 tsp vegetable shortening, mix with my hands.

      I think it would dry and start cracking while you were modelling so maybe add fondant to it to increase drying time

      Better to use fondant, since gumpaste dries firm and it would be hard to cut!

      Marshmallows are used to make fondant, tylose powder gives the gumpaste it's stretch a pliability.

    can this gumpaste be used for sculpting figurines (such as babies, bears, mermaids, shells ect...) to be placed on fondant covered cakes? if so how long in advance can I make flowers and figures before they go bad?

      Yes you can use it. You can make in advance and after drying it you can store in air tight container and use accordingly. :)

      If you have to make a large quantity of gumpaste flowers, for instance, you cant put them in a sealed container and store them in the refrigerator or freezer...indefinitely :) The will retain there shape, and since it's not recommended to eat them, you aren't worrying about the taste.

      They recommend that you don't eat gumpaste, it's made out of edible ingredients because your flowers are brushing up against a cake that will be eaten.

    I have a problem with my fondant. when i get my fondant cake out from the fridge, just a few minutes it has moist texture and it doesn't dry at all. What should I do????

      you shouldn't put fondant cakes in the fridge. Fondant can't stand drastic change of temperature. It somehow the fondant sweats, i would powder the fondant with cornstarch. Constarch will dy them in no time

      Jade Polendey, you can put sugarpaste/fondant covered cakes in the fridge. I have been doing it forever esp because I live in the tropics.
      When you take the cake out of the fridge, don't touch it, lthe condensate will dry off. You can also put a cool fan on it but no heat.
      alternatively put the cake in its covered box and seal it totally with clingwrap. Put whole thing in fridge. When ready take out of fridge and bring to temp in wrapped box.

      When I take my fondant covered cakes out of the fridge, I cover them with a large pot or bowl. Let them rest for about an hour or so and you won't have a problem with condensation :) Condensation kills!

    If 'm using egg powder, how much do i have to add n how much water? And once we take out of refrigerator n use it do we put the balance fondant again in the fridge?

    You say to add egg whites but then when the written recipe comes on screen it says pasteurized eggs whites ? can you please tell me the difference as I dying to try this recipe

      Pasturized egg whites are generally the ones that are sold pre-separated in the milk like carton as opposed to cracking and separating eggs yourself. They should be labelled pasteurized. Pasteurization is a a heating process that slows food spoilage and helps stop food born illness like salmonella, which common with eggs (and why they say don't eat raw eggs!). Because the gumpaste needs to be foodsafe and in contact with the outside of a cake, it's best to use the pasteurized eggs because there will be less of a chance of contamination. Hope that helps!

    Oh that's too much of tylose powder! Tylose powder makes your fondant firm and hard to work with. You can try adding just a little at a time until you reach the desired firmness.

      Hi could i half the measurements as im just learning to make flowers with this and wont need all that much. Im asking you as you sound like you know what your doing, i will only add a little at a time of that tylose powder like you suggested.
