1- I always use separate tawa for chapati and dosa. 2- wash with mild soap, after washing quickly wipe with tissue paper and grease with oil.after greasing heat up on medium flame and keep it aside.Do it 2 times in a week.(for new tawa) 3-Do as much as greasing work as you can , more greasing work will seasoned your tawa properly. It will help in making a nonstick layer on you tawa. 4- don’t was after every use. Soon i will share a separate video for maintaining cast iron. Hope this help

Can you pls guide me. I was always told to soak lentils to get rid of the phytates present that may cause gas and bloating. So if we use the same water we soak the lentils in does it not defeat the purposie? Would the batter still ferment?

First wash them properly then soak .
If you want you can skip the same water for grinding.
Batter will ferment no worries
