This is not how traditional jowar roti is made. In Maharashtra it's called jwarichi bhakari. It's made by kneading dough very well ( to avoid cracks on side) and spreading by hand on rolling surface. For beginners it may be of help.
It's not about authenticity but about allowing beginners to make it easily. There can be many ways to make something with the same or similar outcome. There is no room or time for rigidity in today's world.

Hi, her proportion is not totally accurate. The measurement is one cup flour - one cup water. Also, there's no need to let it sit for ten minutes. U can take it out into your parat immediately. Wet your palm & fingers lightly & start to knead. In a few minutes the heat will leave the dough. Knead while it is still hot, roll the balls in flour. Then how u make the roti is up to u. I do the hand patting method, but u can use a rolling pin if you want. My maid had taught me how to make jowari rotis several years ago & I make them regularly. Within 2 - 3 attempts, u will get the hang of it. But yes, pls do remember, for each cup of flour, measure the exact amount of water using the same cup.
