Tried this recently and it was amazing! I didn’t have coconut sugar , but used light brown sugar instead and added pumpkin seeds and coconut flakes to some of them , they came out so good! Thank you 😊
I made this today and I tell you it’s the best cookie recipe using almond flour ever! I used dark chocolate chips and put some almond nuts on top too. The recipe yields 12 large cookies. This will be my go to recipe from now on. As a matter of fact I am going to make them again tomorrow to stock up and put on the freezer. Thank you so much!

Thank you - your base is easy to make and modify. I added walnuts and coconut. In another batch , I added pumpkin spice. I made in my air fryer over at 350 for 8, 10 and 11 minutes. 11 minutes gave me the crispness I was seeking.

I just made these and they were delicious!! Soft and cakey. Not overly sweet. I used 1/2c monkfruit sweetener, 1/2 cup butter, and I chopped a tablespoon of Stevia choc chips with 2 tbs of pistachios so that I could incorporate bits of each throughout the dough without using a bunch of whole chocolate chips or big pieces of nuts. Wanted to cut down on sugars. Sooooo good!!!! This will be my cookie of choice from now on. No more store bought.
For being gluten free, these are excellent. Made them today and added salted peanuts along with the chocolate chips to half the batch and so good. Thank you for the recipe 💜

Made some substitutions: Instead of 3/4 cup coconut sugar I did 1/4 brown and 2/4 coconut Did half butter and the rest coconut oil cuz I ran out of butter And did 1 cup of almond and 1 cup of plain flour And they were extremely delicious 💕 1 did only end up with 15 average sized cookies instead of 24 tho
Did them today. Used 2/3 cups sugar and it was enough sweet for me. Used also almond meal and they were soft but not too much. But I liked that. Froze half of the batch which is a great tip. The only thing is that I got 20 cookies out of this batch and I use a 1 tablespoon cookie scoop 🤷🏻♀️. I’ll be making this again for sure 👌🏻
The faster way to cool the cookies slide them with their parchment paper on your marble counter the counter usually it’s very cold and the cookies get cool faster, I just needed a recipe for almond flour to make cookies tomorrow. I like that they are super easy to make too…they were super chewy and I added pumpkin seeds and sunflower seeds and used dark chocolate chips…i also added a bit of a blend of other seeds and nuts that I have pre ground for my oatmeal etc that consists of sunflower,pumpkin,flax,hemp and chai seeds, walnuts and almonds and I used butter and dark brown sugar and wow…making them again right now …they didn’t last long lol
So I am diabetic recently diagnosed. I have completely changed my diet. But for Christmas I do want to bake cookies. And I am curious does almond flour work the same as normal flour? Or would the cookie break down after a day or two? Would putting the baked cookies in the fridge keep them firm?

Just made a batch of 18 cookies, in my 21"X15" cookie sheet. The only ingredient I added was the zest of one orange, because I love citrus. They smell amazing and are sure to be kid pleasers, including Gramps! 😄
Sooo delicious😋 . The almond flour I used was old so it has a weird after test but yet so delicious. I sprinkled it with kosher salt to balance the sweetness from the sugar. 💕🌿
You can leave almond flour in the freezer and use it as needed. Nuts have oils that seep out over time, making the flour rancid. Keeping it cool helps it last longer.

Healthy Chocolate Chip Cookies Ingredients: ⅓ cup Unsalted butter softened ½ cup Palm /brown/ white sugar or use some Monkfruit extract as well to drop GI levels 1 large Whole egg 1 tsp Vanilla extract 1 cup Almond flour (ground blanched almonds)* ½ cup Coconut flour ½ cup All purpose flour ¼ cup Wheat germ or bran or some fiber ½ tsp Baking soda ½ tsp Sea salt ⅓ cup Semi sweet chocolate chips ½ cup Walnut pieces Method: Preheat oven to 180 C or 400 F. Cream softened butter and sugar with whisk or beater. Add egg, vanilla extract, and beat some more. Mix almond flour, coconut flour, wheat germ fiber, white flour, salt, and baking soda together well. Mix flour and butter mixture together using a beater. Mix in the chocolate chips and walnuts into the sticky mixture. Using a spoon, drop clumps of dough onto a wax papered baking sheet. Flatten slightly using a wet spatula. Bake for 10-12 minutes at 180 C or 400 F. Test inside with toothpick. It should come out clean. Let it cool for 5-10 minutes before serving or storing. *Note: Almond Flour is blanched ground almonds. This makes it more crispy. Almond Meal is ground whole almonds. This makes it more moist and soft. You can also freeze the dough after making cookie drops, then store them in a bag till ready to bake fresh. MY first batch of cookies that are actually EDIBLE. However two issues, hoping the recipe host can address - 1) the batter was not thick pliable like shown in video, so I added few drops of almond milk. I followed instructions and used almond flour as mentioned in the video. I used less sugar, they are still very sweet. 2) they are crumbly, not as formed like shown in the video. Why the batter was not like shown here? 2)
Can I make the dough today and freeze whole thing and bake it after a week? Will that work? We are travelling next week, so I wanted to bake them the day before we are travelling
Hi! I like to freeze cookie dough in mounds (as if you were about to bake them on a pan) so they will thaw and bake easier in the future. We always have cookie dough in the freezer like that, so you can make it up to 3 months ahead of time!
