I really appreciate your videos. I also have Hashimoto's, NCGS, and T1D. I was diagnosed with diabetes last spring at the age of 44. Interestingly I strictly ate organic foods with no artificial ingredients for many years before my T1D diagnosis and have gotten much laxer to allow for candy, etc. to correct for low blood sugar.
I’ve heard that freezing rice and then reheating it before eating chemically changes the rice in a way that causes it to not cause as high a blood glucose rise. I’ve mentioned in another of your video comment section that the cooling effect also reduces the glucose rising effect of pasta and potatoes also. I also use cauliflower rice but may also try the rice product in this video

Have you tried the grain free Purely Elizabeth granola? I believe most varieties are 8g carbs/4g sugar per serving, and it tastes great.
