In this series we are diving deep into steaming milk to bring out the best in your coffee and help you up the game with your latte art pouring skills. In part one we are teaching you very simple methods to practice and froth your milk. This includes the position of the milk jug and steam wand, milk temperature using a thermometer and practicing using detergent to save wasting loads of milk. This video is perfect for any beginner baristas or people at home trying to make better coffee.

I bought a home espresso machine about a month ago. Since then, i keep on trying to get the perfect steamed milk but never succeed. Ive been watching this video over and over again, and finally after many failed attempt (thick foam, big bubbles, not silky etc), today i made the most beautiful texture of foam ! Wet paint, silky, glossy and smooth when i drink it (Keeping aside the art first, will improve on that part later 😂). Thanks for makin this video guys !

This video has helped me so much in understanding terms that seem to be universally understood- the "hiss" is so clear now, the glossy shine of the milk, how far you put the tip of the steam wand in, the directions of the thermometer vs the steam wand. I appreciate you showing it with the water, then water with soap, and finally the milk. That made visualizing everything you explained so much easier, a perfect culmination of the lesson. Easily the best tutorial! I actually sifted through a few and yours is the best explanation and video., Slow, articulate and very well presented. Thanks! The other day I was on the floor at my restaurant and asked to make 2 caps and one decafe cap. I couldn't froth the milk and it was because the person before me left warmer milk out and I made mistake to try instead of adding more cold milk (or ice as a cheap trick). I froze and embarrassingly couldn't make it. I got mess everywhere, it didn't rise probably and we had to dump all the milk. Someone else came in to make and I just stood there and watched. It was so embarrassing. Never want to have that happen again, under pressure my brain froze too. Thanks for going slow through it, I wanna be able to master this and this made it so much more clear. I could visually see how you rose and lifted the spout. I had it too far in to start and i didn't get it spinning. that was visually perfectly shown. Even better than I get over the shoulder look when watching employees cause here we can see the actual angle up close. thanks!

Thanks for the tutorial, learnt three things today, to keep milk really cold and to stop hissing at 40degree and to not place the jug at an angle. Not yet sure about using only 1 hole, my machine has 2 holes at 1.2bar, I hope I should be able to deal with it. lets practice with dishwashing liquid!

Wonderful video! I have a couple of beginner barista questions…how long do you froth for different types of coffees? Cappuccino, latte, macchiato, flat white? Is there a good guideline like number of seconds I can count in my head, or temp range? Thank you so much for all of your content!
yes there is, we cover this later in the milk series. 2 sec= flat, 3 = latte, 5= cap

All the tips are good but thanks especially for saying not to leave the wand soaking. I've always done that and I never knew I was potentially damaging my coffee machine. I won't be doing it again.
Yes, it’s important. It’s done a lot in the industry and I hope to stop this as it will only wreck a steam tap or a boiler in a coffee machine. Simply remove the tip and clean it .👍🏻

Recently just started a barista job, been struggling a little getting the milk right for capuccinos, it's not smooth and silky enough, so this video was pretty good to get a demonstration of how it's done close up, my boss shows me all the time but I just can't get it just right, I don't think I'm moving down enough! So essentially just move the jug down close to the tip and you'll get a lovely smooth, silky milk?

I usually add a bit of heavy whipping cream in my coffee. Can that whipping cream be used to froth and steam?
ummm... not sure, i have never tried
You definitely can. I have a customer who does a breve with heavy whipping cream. You just have to watch it carefully. I found 130°F to be about the max temperature without it tasting scorched. Trial and error, really. Good luck!
I do confirm it work, since we are Keto, we only use 35% or more cream on a daily base in our coffee, and it froth very well. Thanks for your awesome video.

My milk looks nice and silky but when I go to pour it, the milk underneath the foam is very watery. what could be the cause? steam pressure on my machine isn't the best being a single boiler machine so not sure if its just a limitation of my machine...
So commonly you are not getting any foam. Check out our video on getting the right amount of milk. This will get your to analyse what you start with in milk, and know how much foam you have created.
@@ArtistiCoffeeRoasters I am getting foam but it's only on top of what looks like hot milk so when I drink it, it tastes watered down with no velvety texture
@@vkdlvkdl He mentioned in another comment to work on the vortex technique- your foam isn't integrating with the milk underneath- have to get the foam and milk to mix together.

I have an ECM Technika with a rotary pump and I followed your instructions in blocking one of the holes in the steam wand with a tooth pick. The difference in the textured milk is amazing and I can now do some very basic art. I am curious as to know why this gives great steamed milk? Is it because the one hole spins the milk and the other hole acts somewhat against the spinning. The only downside is that it takes me about 25seconds longer to bring up a 600ml jug to temperature. I am a pretty good metal worker so I'm wondering if I made a nozzel with a slightly bigger hole or 2 nozzels the original size but pointing in the same direction I would get the same result but a bit quicker.

What the puck are you doing with your milk at the start?
Best tip ever: for latte, use two jugs and just pour the milk over from one to another gently without introducing new bubbles couple of times. This helps remove some of the bubbles but most importantly helps mix the foam in to create this paint consistency that is so necessary for latte art.
I was really frustrated with milk but then this little tip helped me start making latte art even when my milk wasn't always best quality.
Yes mate, that’s the best way to recover separated milk foam. The aim is not to over stretch the milk so you have to do is to the milk

does cafes use sweet milk(when sugar is already added in milk) or add sugar separately in the coffee, or there is no need to add sugar in the coffee
If you have good frothed and blended milk at 65 degrees it will be the sweetest. You can try to remove the sugar being added. However most people like the sugar taste and will still add it no matter what you do. Cheers luke

Because the steam keeps it sanitised you can leave it in for some time. Change it every time you do a chemical clean to be safe. We recommend a chemical clean every 1kg of coffee. 👍🏻
