This looks quite similar to the red beans we make in South Louisiana. The only difference is ours is not typically vegan- we use either sausage, salt pork, bacon, or hambones to flavour it, the same way we would gumbo z'herbes (roughly the functional equivalent of callalloo- stewed leafy greens like turnip, mustard, spinach etc). And we don't generally have, say, coconut milk or pumpkin in it. That said, it's interesting how consistent and hearty rice-and-bean dishes are across borders, whether it's the Gulf Coast or the southern tip of the Caribbean.

As usual, your videos are among the most professionally produced on You Tube. Ria, I have noticed that you burnt the sugar. I have always added sugar into the pot while cooking. What is the difference by burning the sugar? Thanks.
islandgirl3330 Thank you so very much. Burning the sugar is a technique introduced to Trinidad by the Africans. The difference is that it adds depth of flavor and a rich color to stews, whereas the raw sugar adds sweetness and balances out the acidity. Use both for optimum results.

Iriz Perez Hi . It won’t have that depth of flavor you get from the sugar browning process. The sugar in this is minimal so unless it’s an absolute no for health reasons then I say give it a try! If you do eliminate it let us know how it turns out-be sure to cook the veggies for 10-15 mins on low first to fully develop the flavors.
My husband is diabetic and I have to watch how much carbohydrates I use in our meals. Thank you, I will let everyone know how it turns out by eliminating the brown sugar..perhapas I can use coconut sugar instead.

You can try eliminating that step.
