I just made this, turned out delicious! Unfortunately I can't eat sugar, even in small amounts so had to eliminate the brown sugar and syrup, but I think the sweet potatoes I used instead of pumpkin, added enough sweetness to balance it....its a keeper!

Finally finished making this today for tonight's dinner. Had the cooking of the beans done and in the fridge but needed to make your green seasoning to finish the stewing. Once that was together the rest went easily. Used an acorn squash instead of pumpkin as I could not find just a small piece. Very tasty but a tad too sweet for us. I added two limes at the end that really gave it a bright note and toned the sweetness down!! Pot of rice and dinner is served! Thank you very much! St. Kitts in the house!

Very strong elements of East Indian and Southern Chinese. I also am from a region, influenced by East Indian and Southern Chinese--Vietnam. All the techniques you're doing, we have going on in different ways. That almost-burning-caramelization of the sugar. That's part of the home cook repertoire in Vietnam.
We grew up in the West Indies and in Trinidad in particular we do not just have East Indian influence on our cooking but Spanish , French Chinese, Portugese and of course African. As a cane sugar producing country you will find sugar being used a lot in our cooking
Those stewed red beans look good. I normally break down my beans in a pressure cooker for quicker cooking. I love stewed red beans especially when it has salted meat in it. Love your Trini cooking and the fact that you went through all the steps was really nice. Our dishes are so simple yet tasty and comforting and yes red beans are central around our lunch tables on Sunday.

I use that exact type of spoon every time I cook! Best utensil ever! You have to scrape all the gear off the side of your pot, it makes the greater flavour.
I was married in Jamaica in 1998, saw your dish today and decided to try it. It brought me right back to Jamaica. I didn’t have pumpkin, so I put a chopped sweet potato in near the end and some pineapple chunks. I also added some pineapple sausage and ham chunks. A nice combination of sweet and spicy and you definitely captured the island flavors.

My only humble request is that you end some of your videos with yourself serving dishes up so people can see how you personally enjoy and recommend eating it, y'know, the kinds of things it can be eaten with for maximum enjoyment and Caribbean authenticity also. Your cooking ideas are always good and clearly arrived at through trial and error and much life experience so I'd love to see the dishes served up with sides and some ideas for sides or pairings which perhaps I myself would have NEVER thought of. Chris, I like the bearded look! I usually put red beans in a pressure cooker to soften. Don't have the patience, otherwise. Yes, tomato paste before ketchup. Looks delicious. I caramelise the sugar also.

I made this today but I added a few pieces of ham in mines I made boil and fry bread fruit and some mango anchar to go with it that taste great.
