You'll Need...
2 cup dried red kidney beans
8-9 cups water
4-6 cloves garlic
5 sprigs thyme
1 wiri wiri pepper
3/4 teaspoon salt
1 medium onion
1 1/2 tablespoon olive oil
1 heaping tablespoon golden brown sugar
1 tablespoon Caribbean Green Seasoning
1 cup diced carrots
2 cups diced pumpkin
1 stalk celery
2 scallions
1 tablespoon dehydrated Pimento peppers
2 tablespoon tomato puree paste
2 tablespoon Maple Syrup (pure)
1 medium tomato
2-3 tablespoon coconut cream
1 teaspoon black pepper divided
1 heaping tablespoon vegetable stock powder
1 teaspoon Worcestershire sauce
2 tablespoon chopped shado beni (culantro)

I just made this, turned out delicious! Unfortunately I can't eat sugar, even in small amounts so had to eliminate the brown sugar and syrup, but I think the sweet potatoes I used instead of pumpkin, added enough sweetness to balance it....its a keeper!
I tried this with red lentil beans and not kidney beans, and it came out amazing! It's got a little of everything: savoury, sweet, hearty, warm, with a bit of spice. So perfect for snowy and rainy days!

Very strong elements of East Indian and Southern Chinese. I also am from a region, influenced by East Indian and Southern Chinese--Vietnam. All the techniques you're doing, we have going on in different ways. That almost-burning-caramelization of the sugar. That's part of the home cook repertoire in Vietnam.
We grew up in the West Indies and in Trinidad in particular we do not just have East Indian influence on our cooking but Spanish , French Chinese, Portugese and of course African. As a cane sugar producing country you will find sugar being used a lot in our cooking

If it's got Worcestershire sauce in it can't be vegan,as it's made with fermented fish otherwise it's a fantastic dish.

I made this yesterday for the first time. Had to make green seasoning from scratch since I couldn't find it in local store. I served it with wild rice. Wow. I ate 3 bowls. Can't wait to eat more today as I prefer day old cooked beans. This is my new favorite dish.
I love the long cook time. It reminds me of being in the kitchen with my grandmother waiting for everything tee prepared to come together. I love how you take your time even though videos can be sped up. It is so calming and peaceful to watch you prepare, explain, and cook everything and the importance of doing so. You help me build the courage to cook and not be fearful of having a new dish come out not tasting the way I expected. Thank you for your time and dedication.

Finally finished making this today for tonight's dinner. Had the cooking of the beans done and in the fridge but needed to make your green seasoning to finish the stewing. Once that was together the rest went easily. Used an acorn squash instead of pumpkin as I could not find just a small piece. Very tasty but a tad too sweet for us. I added two limes at the end that really gave it a bright note and toned the sweetness down!! Pot of rice and dinner is served! Thank you very much! St. Kitts in the house!
So good.... made this at the weekend in the slow cooker... tweaked a bit (I am one of those insane white folks with a chilli addiction so there may have been more than one pepper added) but the taste was amazing. Served up with methi rice. Thank you

I use bottled water , Mazola corn oil, crushed garlic in the jar, salt, pepper, pepper flakes,and a pat of butter, tomato sauce near the end of the cooling, and served over white rice.
This looks great, thank you for uploading this one because I've marked it as one to cook in a couple of weeks. My only humble request is that you end some of your videos with yourself serving dishes up so people can see how you personally enjoy and recommend eating it, y'know, the kinds of things it can be eaten with for maximum enjoyment and Caribbean authenticity also. Your cooking ideas are always good and clearly arrived at through trial and error and much life experience so I'd love to see the dishes served up with sides and some ideas for sides or pairings which perhaps I myself would have NEVER thought of. Thank you Chris, hope it's sunny where you are. :)

Those stewed red beans look good. I normally break down my beans in a pressure cooker for quicker cooking. I love stewed red beans especially when it has salted meat in it. Love your Trini cooking and the fact that you went through all the steps was really nice. Our dishes are so simple yet tasty and comforting and yes red beans are central around our lunch tables on Sunday.

I made this today but I added a few pieces of ham in mines I made boil and fry bread fruit and some mango anchar to go with it that taste great.
I cannot understand why some people are so ignorant 🤷♀️ you did a good job showing how to make this dish and they complained about the utensils you used...can they do better? Seriously 😒

Dana Karloz You are right. Most important is the recipe. Contrary at what some say about utensils they are actually very nice . I love that beautiful red pot and everything he uses in the kitchen.
Monica Zaharia The point s that the metal spoon will damage the enamel on the base of the pot. It is an expensive pot and you should use wooden utensils to prolong its life. It is a bad habit to get into.
@@burlatsdemontaigne6147 the metal spoon will only damage the enamel if he deliberately bangs on it...I have one and they didn’t make it to be weak.
Chris, I like the bearded look! I usually put red beans in a pressure cooker to soften. Don't have the patience, otherwise. Yes, tomato paste before ketchup. Looks delicious. I caramelise the sugar also.
Pressure cooking is better for your digestion!

I use that exact type of spoon every time I cook! Best utensil ever! You have to scrape all the gear off the side of your pot, it makes the greater flavour.

I was married in Jamaica in 1998, saw your dish today and decided to try it. It brought me right back to Jamaica. I didn’t have pumpkin, so I put a chopped sweet potato in near the end and some pineapple chunks. I also added some pineapple sausage and ham chunks. A nice combination of sweet and spicy and you definitely captured the island flavors.
Uncle Chris did it again. Will definitely try this one soon.

Ooh boy I miss cooking on a gas stove, I live in an apartment now and they have electric stoves and I either burn or scorch my food , I hate electric stoves. That loves delicious, NEED it with some hot cornbread 🤣🤣🤣🤣

Same. When I moved in the burners were pretty much burnt out. I ended up getting a instant pot and a air fryer. The stove can kiss my patoot.

Same here. There are, in fact, good electric stoves out there. I wouldn't say they're as good as gas, but they do exist. But they definitely don't exist in pretty much any apartment. Mine I can (mostly) work with, but I have to watch it because it's inconsistent. Drives me up the wall...
What you might consider is a two burner induction stove (if you have induction ready cookware). I actually do have one that works pretty well (and wasn't absurdly expensive), but I don't use it as often as I'd like since most of my pots and pans aren't induction compatible.

Deeeeelicious, I made it but didn't have Caribbean green seasoning, used some thing else. Still turned out delightful!
All looks amazing, but I have something to mention:firstly, if you only have few hours to soak the beans, put boiling water over, cover it and in one hour they're perfect. Secondly, never cook them in the same water you soaked them. Changing it helps to remove a part of the "gas situation "
Oh, and never put salt when you cook legumes. That hardens the skin. Put the salt after they're cooked. If you want to help them cook faster, put some baking soda, it will do wonders and the legumes' skin becomes suuuper soft

Growing up in New Orleans, red beans on Mondays (and fish on Fridays) were tradition. Now that I am much much much older, I very rarely eat red beans. But, I love this recipe. I may try it.
Oh my goodness.. Chris I tried this and it came out sooooooo delicious..I ate it with macaroni pie...i made a nice big pot....it was so good I didn't want to eat it all the same day... going to be a soup and just drink... by itself.....

A good recipe, I have made similar except without the coconut cream, I need to try that. I also use some butternut squash; so good and healthy. All we need now is some rice; me personally can live on rice and good beans. Thannks.
