    I would like to see you bake on your steel. How did you go from Dutch ovens to the baking steel? And how do you handle steam?

      It's a learning curve to go from dutch ovens to open baking, and it's a bit different for everyone.
      When I first started, I followed the method from The Perfect Loaf, and used a pan of lava rocks with boiling water to introduce steam.
      Now, I use a garden sprayer and spray the tops of bread when I load them in the oven, and then once more about 4-5 minutes later.

    Ok so i have hope. I live in a all year summer island Curaçao 🇨🇼 🎉and most UA-cam videos are in colder weathers, sooo…. A lot of learning to do.

      The Perfect Loaf by Maurizio Leo was a game changer for me in terms of understanding the science of sourdough. (amzn.to/48r8ckO).
      I also love Tartine Bread for understanding the art and science and making the process your own (amzn.to/3Al14cW)
      The Bread Baker's Apprentice is on my wish list, and I flip through it every time I see it at a book store. It shares methods for both sourdough and yeasted breads. (amzn.to/3CeHyPQ)
