    My speculation on the cookies is that you couldn’t get enough air into the butter, sugar, egg mixture and then, possibly, over mixed once the dry ingredients were added in ?? Just basing that off of my rather minimal experience 🤷🏼‍♀️

      I definitely agree on the first part of your speculation! The second could be right too, but I mixed by hand, so I think my issue is more related to the first stage with the butter eggs and sugar. Food science is fascinating to me!

    Really good information! I for the life of me, can not proof in and/or get good loaf pan loaves. I have no idea what the problem is, but they certainly don't look like the ones I see on IG. It's very frustrating, as that's what I wanted to move towards.

    Hi Caroline! Love the podcast. Been listening to several episodes a week in the car. Do you mind my asking which wicker oval baskets you’ve been using? I’ve been all over Amazon this evening and I’m just not sure which ones to try. I’m relatively sure that the price on bannetons is big prank and people who have dozens of them are secretly buying them somewhere for five dollars a piece.

    In Paris there are 12,213,447 people. There are 30,000 bakeries for a total of 407 customers per bakery. I know that isn’t a given customer base. Where I live in Fuquay Varina, NC, we have 43,817 people and 2 bakeries and 2 home bakeries for 1094 people per bakery. List of possibilities.

      This is absolutely fascinating!! I’m so glad you shared! You’re so right - there’s so much opportunity! I think the culture in the US generally doesn’t appreciate good bread the way that people do in Paris, but we’re absolutely seeing a shift in that direction! So exciting and encouraging!!

    The bin idea is great but in my case I don’t have the fridge space since I rent an apt and my landlord doesn’t see the need to put in a larger fridge.

      But the bin doesn’t go in the fridge in my experience. My bin is for the stretch and fold. After that, bannetons go in the fridge. Fridge space issue is still a problem but the bannetons are smaller. 😊 stash where you can?

    I'm having a hard time believing you're not bigger on here! I love listening to you and your information is actionable and helpful! I haven't started anything yet but my dream is to kick off a microbakery (not sourdough) this year.     what size dough bin did you purchase first? I've found this list very helpful and have purchased a couple things from this to help increase my productivity. My next thing I'm looking at is purchasing a dough bin to mix all my dough in, as I am currently mixing 3 loaves in 3 bowls, maxing out at a total of 9 loaves. i'd like to be more efficient and just mix it all in one dough bin but not sure what size to get. Eventually I'd like to grow and be mixing maybe 15 loaves ? (900 gram loaves)

      I'm sorry for my slow response! A dough bin is a great investment!! It'll feel so much easier than mixing in multiple bowls. The first bin I purchased was an 18 qt rectangle. It was a good size for up to about 10-12 loaves. 15 loaves in a bin is doable, but it gets heavy! I find that when mixing by hand, I prefer to keep it to batches of about 10-12.     How did you notify your customers about your break and how did they receive it? I imagine they’re very sympathetic to time off but one worries! When I was gone a week in the fall, I put a sticker on it to notify about a week in advance. I sell on commission at a co-op so they are not preorders. Working on using Simply Bread app and preorders but I’m not there yet. 😂

      I let them know that 12/19 was going to be my last bake day of the year, and I encouraged them to grab an extra loaf for the freezer, and said that I'd be back in January. I didn't have any push back or complaints at all. I had a couple of texts in early January asking when my orders would open again. When I did reopen, people were very ready! :)

    I live in the country and the nearest town that I expect I will get the most traffic from is about 20 minutes away. I’m nervous that my customers might come the first few times but then burn out because of the distance round-trip. I’m trying to think of other ways I can have a sustainable pickup option that won’t also burn me out (I work full time with 2 toddlers). The only day for pickups right now will have to be Sunday afternoons.

      That's tricky! My suggestion would be to focus on building your customer base in the one location that's most doable for you, and ideally fairly central for the majority of people. You can't cater to everyone, and those for whom the drive is too long can choose to buy if/when it makes sense for them. If your state's cottage laws allow it, you might consider seeing if a small business in town would allow you to drop off your preorders there, and then just allow your customers to come pick up within a specified window - that way you wouldn't have to sit and wait the whole time. You could thank the business with some baked goods :)

    I have thought about selling out of a “food truck”. I’m in a rural area so I feel like I could schedule different days in different towns. I’m just so scared to take that leap

      I love that idea! I wonder if you could start smaller by setting up a weekly drop at a small business in one or more of the local towns. Set up for a couple of hours at a time on a consistent schedule, and start building your clientele and awareness. Then they'll be ready to show up for you when you're ready to move in to your truck! :)

    I would like to see you bake on your steel. How did you go from Dutch ovens to the baking steel? And how do you handle steam?

      I have an Instagram post with my process! instagram.com/p/C9-3Wo4Jv54/ It's a learning curve to go from dutch ovens to open baking, and it's a bit different for everyone. When I first started, I followed the method from The Perfect Loaf, and used a pan of lava rocks with boiling water to introduce steam. Now, I use a garden sprayer and spray the tops of bread when I load them in the oven, and then once more about 4-5 minutes later.

    Do you bake only in a double oven or do you have a bread oven? Also what brand and size mixer do you have?

      I don’t have a bread oven, so I just use an electric residential double oven! My mixer is a 30qt Estella.
