    Every year homesteaders pray they harvest a ton of tomatoes then comes August and they look all haggard and start their videos, “I’m in tomato hell “. lol!

    I freeze dry lots of meals successfully.
    Scalloped potatoes
    Ham and beans
    Salsa
    Chicken Soup
    Pulled pork
    They work well at the campground.

    I still have pickles from 2017. Our diet changes from year to year and what we can one year we don’t the next. And when your kids leave the house you start cutting down on how much you can and cook.
    If nothing else it’s a beautiful picture you have on your shelf. I stopped canning green beans a couple of years ago. My husband said it was too much work for me as he never noticed a difference between home canned and grocery store canned. I would can 120 pints a year or more whatever the garden gave us. I would suggest if you have room to store it can it it will last until the lid unseals.

    I put a jar of cherry pie filling over pork chops in the crock pot and let go all day...... Pork chops are then verrry tender! Also doesn't make them sweet like a pie.... my family loves pork chops this way...

    I took tortillas and cut them into chips. Placed them single layer and used air fryer for 15 minutes. The bean dip and salsa disappeared.

    Great job using through your stash!! I always use this time as a challenge to make meals with the items that are left over. I pick 4 jars and force myself to use them in a week. Salsa would be great to use on toppings on tacos for the week (with pork? yum!!) OR make burrito bowls, OR use as a marinade for any meat in the crockpot!! As to jams, every year it seems that I always have one jam that doesn't turn out *hello too much pectin. My favorite ways to use the "not favorite" jams is #1) is in oatmeal and #2 Jam Bars or a homemade Nutri Grain Bar for snacks for the kids. That jam gets gone real fast then. Thanks for all of the ideas!! There are so many idea in this comment section too.

    Keep an eye out on store's I just bought flat's of top grade pasta sauce at 20¢ a jar a flat was $2.40 just jars that size coast me $14.00 then jumbo can's of tomatoes were 10¢ a can I'm going to make up barbecue sauce. The product still have another year and on past the date I think to much comes in or the person was having a bad day watch for that I bought Amish pasta at 99¢ and bought two boxes I find this year cow boy peppers will be my thing we have a half of jar left . Also the mixed veggies everyone blows threw I'll do. It's a draining year with medical and prey for all we can up life and keep together on this what we need and not. Had anyone done fruit?

    If you have a good recipe for dumplings, take your pie filling and add dumplings to them with a little water. Simmer them on low for about twenty minutes. Add a couple pats if butter, it’s delicious. I have done this with apples.

    I mix my zucchini and yellow squash with a can of rotel. Sooo good and easy.

    Salsa makes a good base for salad dressing.

    I’m up to my eyeballs in tomato sauce and crushed tomatoes. 😂
    I still have 3 Seminole squash and a huge tromboncino squash that I allowed to tan/harden.

    Tomato water rice or Bloody Mary's! I'm really appreciating my fr broths. We also can starters, or bases. Chowder, chili, soup. Add protein of choice! We also don't eat our pickles or jellies or jams... And I don't get it... My family professes to love them, but they languish. We lloovvee salsa, but also don't buy tortilla chips. I used to can 100 jars of salsa and we'd eat it all. Now, I make casseroles just to use it.

    Get or make corn tortillas with just water & masa, cut into wedges, & bake til crisp.

    Husband watching he's helping pick hair trying a powder pink light with the new cut hair he said I must get more pineapple zucchini done the kids think it really is pineapple so funny I make candy from it and I make carrot candy.

    You can grind corn to make your own corn masa (or just buy masa) and then make homemade corn tortillas to cut and fry into chips. I guarantee you won’t have 8 pints of salsa left for long!

    My mom used to can pickles every year. Every night at dinner, there was a jar of home canned pickles on the table

    I think the one thing you don't want on tomato / pepper starts is .. blooms. You may have to remove some lower leaves from the tomato plant as well as the blooms, then put them out in the garden. They first need to establish and recover from transplant shock and not have to 'worry' about blooms as they're doing that.

    As a space saver, I started to freeze dry all my broths and stocks. I freeze dry then powder 4-5qt into 1 qt. I went through 2 hams this year and now have a qt of freeze dried ham stock ready to use.

    We use our salsa on everything Mexican! Rice bowls, tacos, taco salad, and all the baked goods like enchilada casserole, burrito bake, etc.

    We had the same over pickled issues so we started just always having a small bowl of pickles on the table with each meal. Now we are going through them quickly because it’s just a taste like a palate cleanser! ❤❤

      My mother-in-law always had pickles on her table whenever we had a meal. Also, she would also have sliced tomatoes in the summer if she had meat and some kind of beans, she would also have relish on the table.

    If I could give more than 1 thumbs up, I would - I LOVE your passion for whole foods! Helps me stay focused on that too, as it’s so easy to veer off course from time to time. 😅 Excited to hear how your potatoes do this year, and I definitely want to try that unstuffed cabbage roll!

    I use salsa in a salsa sloppy joe sauce which we love. It adds so much flavor. I hope you find some uses for the things you have preserved. I know you put a lot of work in so hoping you find creative uses. I know I have fallen back to some not as healthy ways because we have been so busy. I need to make sure we are more intentional and making better choices.

    Would love to see a video on cheddar. We eat so much cheddar, parm and mozzarella but I have never made it. I did make goat cheese after watching your video and it was wonderful. Who knew you could make it homemade. You are full of information
