@jahneen, you could try making more of the cobbler batter and adding more on top, but the pan I used would be too small and would overflow in the oven. I would try a 13x9 pan if you make more of the cobbler and add it on top.

Made this decadent and delicious dessert earlier today!! I like that you used uncommon cobbler ingredients such as cardamom and nutmeg that really make it something special. Ohhhh vegan brown butter! Very high-end! I don't think there's one cooking show where a chef doesn't show off a traditional brown butter recipe. But this is a great plant based version! 😋 Honestly, that's not something I've tried yet!

Never been a peach-cake person but this looks SO SO good! My gosh, it looks incredibly flavourful, indulgent and comforting! The only issue I have is that I will have to wait for the temperatures to go down a tiny bit so as not to bake myself in the oven heat :D Having said that, it DEFINITELY seems to be worth all the discomfort :D
Also, you've persuaded me with the outro. And I am not running to the kitchen to make this only because it is 9pm when I am watching the video :D

Hi! I'm planning on using your recipe for a coworker's pot luck before Thanksgiving. One of my coworkers is vegan and I didn't want her to feel left out. Are steel cut oats ok to use or does it have to be rolled oats? I've never made cobbler before so I'm sorry if that's a dumb question 😭

That's so sweet of you! Cobbler doesn't traditionally have oats, so it's not a silly question at all :) I have not tried this with steel cut oats, so I'm not sure the texture would work well, as they are chewier and take longer to cook and it might get gritty. If you can get rolled oats, I'd recommend that, or subbing the oats with more flour.

what kind of fruit is available right now? do you have plums? that could work, though they might not be as sweet. or, mango - which is very sweet, so you would want to use less sugar.
