- Ridge gourd thuvaiyal/thogayal is one among the popular and most preferred thuvaiyal varieties in Tamil nadu. Making this thuvaiyal at home is quite simple and an easy/best way to manage family members to eat this vegetable as part of the meal even when they don’t like to eat!
It is a great accompaniment with just steamed rice and/or as a side dish to rasam rice, sambar rice, curd rice, idli, dosa, chapati/roti, etc. The spiciness from the red chillies, the tanginess from the tamarind and mild sweetness from the jaggery makes it a delight to eat with steaming hot rice with ghee or gingelly oil (sesame oil) and papad (vathal).

Ingredients:
1 tbsp Oil
1 tbsp Gram dal (Chana dal)
1 tbsp Urad dal
3 dry Red Chillies
5 Garlic cloves
1 cup chopped Ridge Gourd
⅓ cup grated Coconut
1tsp Jaggery
½ tsp Tamarind
¾ tsp Salt
5 tbsp Water
