Delicious Strawberry Crumb Coffee Cake Recipe

Strawberry Crumb Coffee Cake
Cake
1/3 C Butter - room temp
1/3 Sugar
1 Egg
1 C Flour
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
1/2 C Greek Yogurt or Sour Cream - room temp
2 tsp Vanilla
2 C Strawberries - sliced
Crumb Topping
3/4 C Flour
3 Tbsp Sugar
2 Tbsp Brown Sugar
1/2 tsp Salt
1/2 tsp Ground Cinnamon
1/4 C Butter - melted and cooled
Cream butter & sugar with a mixer on medium to high speed until light and fluffy. Add egg and mix
until combined. Mix in flour, salt, baking powder & baking soda. Add yogurt or sour cream if using and
vanilla. Mix well.
Grease an 8 x 8 baking dish.
Spread batter evenly. Spread strawberries on top.
Crumb Topping
In a small bowl mix flour, sugar, brown sugar, salt cinnamon & butter. Stir with a fork to
make crumbles.
Spread on top of strawberries.
Bake @ 350 F for 30 - 35 minutes or until tooth pick comes out clean.
Let cool before serving.
