Risotto is traditionally a Northern Italian dish, it’s made using a high starch rice such as Arborio or Carnaroli and other rounded short grain rice. Arborio seems to be the most popular although a lot of Chefs will favour Carnaroli as it’s less likely to get overcooked and retains the aldente texture. For this recipe I used Arborio, which works very well and absorbs the liquid easier. The key is to not over cook it, just like a good pasta you want that firm bite and not a soft mash that can result in being gluey.

Best risotto I have ever made. I pass the dehydrating stock through a fine sieve and add it to the stock gives enormous flavor :-)

Beef stock makes it richer; use hot stock not cold; and use the thyme leaves not the stalks. You can use the reconstituted porcini liquor too, to richen the risotto.

Hi beautiful recipe. How high is your heat while cooking the rice? and how much stock do you add each time? At times my rice turns out either raw in the inside or overcooked and soggy. Do you know where I am going wrong? Thank you
My head stands quite high while cooking, but I take it you mean heat. Heat should be very low as it needs a low simmer. Stock varies with different rice, just stop once it tastes perfect. See my recipe on website.

I like to put a cup or so of white wine in the rice before the chicken broth and let the alcohol cook off. It gives it a little somethin' extra.

Recipe30 Oh, sorry about that . Well i was trying to say that is there any risotto recipe else can do rather just a mushroom risotto?
Then, the second question I'm trying to say is I try to cook a pasta recipe using the white sauce with cheese. Turns out the sauce is quite thick when I taste. So, I tried a few more times and only chicken stock will able to decrease the thickness . That why I ask is there any ideas using any ingredients instead of chicken stock in the white sauce with cheese for pasta.
You can try a marinara mix and add passata to brake down the thickness ??

Risotto is so versatile, I will be making more recipes in the future, but you can certainly replace the mushrooms with other ingredients.
