My northern Italian mother in law taught me to make Risotto Milanese the same way. I just made this and enjoyed it with a glass of prosecco. Thank you for another delicious dining experience.

I've been practicing risotto interruptus for a long time now. I cook it about 2/3 of the way to finishing, then turn off the burners and put on the lids. Come back when everyone is ready to go to the table and start it up again. I guess this is what you call the fake restaurant method, but I have never detected a drop in quality.

Still can't wait to make mushroom risotto one day. At home no one likes mushrooms really so all i ever make is string bean & chicken risotto. That freezes really well though! Re-frying it on high heat also creates some browned rice crusts that do add some extra depth of flavour! I wonder how similar the mushroom risotto would react to the freezing and refrying!
I do a risotto substitute in the oven, like a rice pudding. It is not as creamy, but it is still delicious and I did not need to stir it for so long. I got the idea from Delia Smith, the recipe is in her Winter Cookbook. Thank you for the video!

There are actually some yummy risotto recipes for the Instant Pot. SO easy and delicious... without all of the stirring! And, yes, I have made quite a few risottos by stirring, and stirring and stirring. My favorite was the asparagus and shrimp. Yummy! My favorite Instant Pot risotto is the mushroom and pea. Mmm... ❤
The first thing I noticed when I came to my local grocery store in Oregon was shallots. They always have loads of gorgeous shallots and I use them in everything. Leeks, too. I love vichyssoise, so leeks are a staple in my house💝
This probably goes against what most Italians would do, but when I used to get hello fresh, our favourite was a baked risotto. It was delicious and much easier than stirring for ages!
I made it vegan by using plant based butter seasoned vegetable broth and the creamy vegan cheese and the Vegan good heart cheese it was great 🎉❤😊 oh and jasmine rice lol that’s all I had. I had to use a lot of brotherhood to get the desired consistency but it was great!
Btw, I'm a novice cook and huge fan. You do an excellent job taking your time on the videos and make it look so easy. I'm hooked on your cheesecakes now.
Don't forget some fresh minced parsely on the risotto at the end, out of the fire, after the butter/cheese final adjustment. Parsley and mushrooms are best friend forever. Remember, parsley leaves can't be cooked, they'd release bitter flavours. But you could cook parsley stems, I.E. when preparing linguine with prawns. You can use every kind of mushrooms, also mixed ones. If you use porcini, it will be a king's plate (also for the price). Best low price mushrooms are regular champignons

It actually makes great leftovers. It tightens up, so you have to add a little stock when reheating.

Fake "restaurant risotto" is basically half cooked boiled rice, re-heat / finish in the sauce or what ever type order coming
