The Dutch are a simple and pragmatic people, and this is obvious when looking at their culinary techniques. The either mash the hell out of something, boil the life out of something or deep-fry the shit out of something.

Every foreigner I have ever made stamppot for has absolutely loved it. Mashed potatoes, kale, add salt and pepper, maybe a clove of garlic. Then add some nice gravy and a sausage, and you have the perfect winter dish. Cold outside, but warm and cozy inside at the dinner table!

This video does great injustice to Dutch cuisine. Not only do we use many spices in our traditional dishes... in conjuction with the former Dutch colony of Indonesia we developed the very first fusion cooking trend where traditional Indonesian dishes would be remade with native Dutch ingredients as well as making Dutch traditional style dishes with Indonesian ingredients and spice mixes.
We also invented the "rijsttafel" concept where, instead of eating your fill of one dish, a table is filled with small servings of as many dishes as you can fit onto it. Originally meant to show off the richness of colonial culture it has become a grand example of Dutch and Indonesian eating habits.
Then there are our great and famous cheeses, many types of cured and smoked meats, numerous sweet treats, baked goods using a wide range of spices from the colonies like speculaas and gemberkoek, shellfish, beer brewed with gruyt instead of hops, jenever (precursor to all gin-type beverages), first to import coffee to Europe on a large scale (and ofcourse drinking it as well).
Only with the large scale introduction of the potato combined with widespread famine and wars causing great shortages of many other ingredients did we invent the stamppot as a way to pad the caloric intake that was getting dangerously low for much of the population. Even stamppot has seen many improvements since it's introduction and is commonly made with a wide range of spices and ingredients. Really the only thing binding all stamppot dishes together is the use of mashed potatoes as a base much like stock is the base for a wide variety of soups. Also, while it is a typically Dutch style of dish most Dutch people barely eat stamppot once a week.
All in all, if you don't know what you're talking about... shut the fuck up :D

+Mark Neeleman Excellent comment. While reading your rijsttafel comment i was wondering if you'd mention it's origin, and there it was. :) As a trading nation we just adapted/co-opted what we liked instead of coming up with tons of 'new' dishes ourselves. Very Dutch! :D

    • @SecondSince
      @SecondSince 8 років тому +7

+wackywong Not family style dining as such, no. But the rijsttafel thing came to from traders and 'rulers' traveling through the colonies. For these visits the mostly Indonesian colonies served a spread of lots of different local dishes to sample all there was to offer and as a show of wealth and respect by the local overseers. And it's this large sampling of different dishes that makes a rijsttafel.

    ROTFLMAO!
I went looking for a traditional Dutch cookbook. Most of the recipes were from Dutch colonies.
He makes a funny here, but stampot is actually pretty good. I make a version if it at home, but put the meat into the potatoes as they cook for more flavor.
When I got to Holland, I stay with a family just outside Haarlem. The mother is from Belgium, the father is from Surinam, but his ancestry is Chinese. Home cooked dinner is a mix of Surinam and China, with touches of other things (always mayonnaise).
However, there is one native Dutch dish that is truly amazing: Kapsalon. Dutch fried covered in chest and shawarma meat baked until the cheese melts, then topped with salad and creamy garlic sauce and sambal sauce.
    Good kapsalon is freaking amazing.
Most groceries don't have things like a whole chicken, a whole ham, or beef roast. Meat is mostly served already packaged into single servings. I had to special order a beef roast (cost a FORTUNE). I was going to make a traditional Thanksgiving dinner for them one year, but couldn't get a turkey for blood nor money.
I've never seen so many different kinds of sausage in one place though. Strangely, there are no hot dogs unless they're canned in water.
On the other hand, I counted 11 different flavors of mayonnaise. They do have spices and herbs, but they seem to be packed in only small jars or little plastic pouches. Take someone who can translate the labels.
There are TONS of fairly good restaurants though. I ate out a lot.

    • @bramvanduijn8086
      @bramvanduijn8086 3 роки тому +2

You'll need to go to an actual butcher for a whole ham, they can arrange any cut of meat for you. Though bird meat is usually found at the poelier (bird butcher).
Only 11 flavours of mayonaise? That must have been a small supermarket.

Very easy to make, but the real Dutch "smoked sausage" is going to be a challenge to buy (or find) in the US.
But I looked at the Walmart website and 'Hillshire Farm Naturals® Smoked pork Sausage" looks the same !
You need : 1 pounds of onions , 1 pounds of carrots and 1 pounds of normal crumbly white potatoes.
First chop the onions and carrots into small pieces, and peel the potatoes.
Take large cooking pan and melt a tiny lump (0,1 lbs) of cream butter , put the onions and carrot in the pan and just only heat them a little.
Then fill the cooking pan with warm water, and ad the potatoes plus you ad two chicken bouillon cubes (normally used to make soup) to the water. Put a lid on the pan and cook for 14 minutes (or punch a fork into the potatoes, if they slide of the fork , they're good)
Meanwhile make the gravy. I use instant ready gravy, only add water and boil for two minutes, but you can use whatever you like.
After cooking, drain the water from the pan, and it's time to smash the hell out of all ingredients.
It takes me only 20 minutes to make this, and after eating you're full for the rest of the evening ;-)

Yes traditional Dutch meals are simple and not restaurant worthy like the Italian or French kitchen, but they are quite good. Stampot with smoked sausage or Green Pea soup are usually eaten in winter because those meals are quite filling. You can also have a set with a double layered fire grill with which you can put vegetables in tiny frying pans on the lower grill to fry them and then eat em. Their traditional concept of cuisine is the same as that of white folks in the UK and the rural parts of the Northeast and Midwestern US. Seasonings are salt, butter, animal fat, sugar, vinegar, and condiments. Anything spicy or flavorful is from Indonesia, just like the UK is India and Pakistan and the US is blacks, Hispanics, or southeast Asians

    >The Dutch variant of Nasi
    >The Dutch variant of Bami
    >Half of the shit on the Chinese menu that was adapted for Dutch consumption
    >Suriname's kitchen we adopted and adapted
But yeah, we only do deep fry, boiled shit and mash shit.
Keep in mind, the Dutch kitchen is 90% foods from places we've historically "borrowed" things from, so to speak.
It's nice you said something about the VOC and then neglected to mention that it caused is to adopt a world kitchen.

Als het nog niet gestampt is zoals in aardappelen, groenten, vlees en jus wordt het alsnog geprakt met een vork.
If not mashed as in potatoes, veggetables, meat and gravy it get geprakt (mashed) on the plate with the fork.
Difference with US eating habits: normally we do not cut the meat first in cubes, smother it in ketch-up and eat with only a fork and the other arm protective around the plate.
In some families with children, we eat it with a wallop of appelmoes (apple sauce) on the side.
Famous Roadhouse Van de Valk gives (still) standard a small bowl with appelmoes with a cherry on top.

witte kool stampot, boerenkool stampot, witlof stampot, cooked andijvie till its mushy and slimy (yuck) .. do not eat them without the gravy, cause its usually the only thing that gives it flavor. fish on friday, soup on saturday (with some people actually just feeding you boiled water with some floating veggies.. no amount of salt, pepper or maggi can save you then). food from other countries that stayed: Shoarma, bami/nasi (though they usually forget to add flavor when homemade) and sushi (which isnt suprising cause they already like their raw haring). breakfast : slices of bread (non toasted) with a few slices of sauges, chocolate sprinkles, or peanutbutter. Same again for lunch. Tea time brings a lot of diversity though, you might get some awesome Stroopwafels or Bestognes. full of sweetness, with a great taste. Or you get bisquit. which are as bland as stampot.

Modern Dutchies eat mostly pasta (macaroni or spaghetti with tomato sauce, vegetables and diced ham or minced meat and 'Parmigian' cheese are typical Dutch pasta's. Not very Italian because there is to much stuff in the sauces). Also pizza is very popular just as lasagna. Due to the multicultural demographics and the colonial history also Asian (Indonesian) and Surinam food and Turkish and North African food are popular.
Especially in the bigger cities we absolutely don't eat stamppot every day and if we eat it then only in winter.
Totally forgotten in the list of typical Dutch food is "Babi Pangang" (spiced up roasted pork in a sweet and sour sauce, served with fried rice). It's not Chinese, it's not Indonesian, it's a Dutch invention and you'll only find it in The Netherlands.
