    Ms.Lady, your videos are awesome! I am a recent first-time mother (well second time now that I had my sec son) my oldest is 6 and my youngest is 2 this month, but their father's LOVE that southern cooking and I promise you after watching your videos they LOVE IT my cooking. If it wasn't for my two boys and their fathers I would not be in the kitchen cooking a darn thing lol. THANK YOU FOR YOUR VIDEOS

    I simmered hog tails with crushed red pepper, garlic powder, garlic salt, salt, and pepper, for two hours served with red beans, with chili power over all with french bread. Damnnnnnnnnn good.

    Lord ham mercy they look so good!!! Add some homemade potatoe salad along with them cabbage & cornbread...hunny, I'm trying to tell you!! You just know.

    The pig tails that our ancestors cooked were long, these are modern butcher hogs tails which are trimmed short. We dont dock our butcher hogs tails so they are about 5 to 6 inches long, more wonderful joints to nibble on. Have you tried ox tails?

    Thank you fir the video and the recipe. What did you not like about the pig feet? Did they have a swine smell and taste? If yes, vinegar will remove it. Just add it while they're cooking. God bless you and your family.

    Meso? Have you ever tried the southern pork souse with the pig ears, pig tails, and hog maws (stomach)? It may sound gross but if properly washed and cleaned before cooking it makes a great comfort food. These meats are seasoned and simmered down to a pork stew on the stove top. Also two good seasonings to try in your cooking is lipton onion soup mix (box) and sazon goya unique seasoning powder (orange box). I was told about these two seasonings years ago from a chilhood friend who is an excellent cook and it brought better taste to my dishes. I started to get compliments on my dishes everytime I used it. I always use them together. They work well in all stews,soups and gravies. It's just a sugestion. I just subscribed and will be cooking your oven smothered chicken wings tomorrow.

    I have been reading a lot about what the slaves ate lately out of curiosity and some slavery recipes. This meat fits right in with that. Maybe in February you can try to make some of them, like corn meal mush or hoecakes?

    Watching these cooking videos makes me so damn mad, because I live in North Carolina and we can't get squat here. I really hate this godforsaken State and I'm moving away the first chance I get. The only kind of pigtails we can get are dried or smoked, not fresh or frozen. Needless to say, there are a number of food items and many other commodities we can't get here in this countrified State. Damn North Cackalacky!!

    Was first exposed to them as a kid with mom making them for dad. Had to keep my eyes closed when offered one but they are delicious.She would buy them precooked in a tin with a gooey sauce put then in a shallow dish with beans and bake. They were about 15.00 dollars so not as cheap as yours .

    Just put them in a pressure cooker for 25 minutes and scrape the fat off them. Forget any additional ingredients and just eat them straight. Tasty as-is. We're (Irish) are far gone from spices. No need!
