Everything will have a chance to marinate in the seasonings overnight, and will taste loads better.

She used to tell me if you ever want to know how my family and I spoke before we went to school all you have to do is listen to Justin (Wilson). My older family member's were born and raised near Red River, LA. So, they would have been very familiar with people speaking this way. Rest in peace, dear Mr. Wilson. Your stories, manners and influence live on.
Red River is pretty far North of the prairie lands where most Cajuns are from, and the Eastern areas where the Creoles are mostly from. But, just like all cultures, the French cultures weren't static, they blended East into Mississippi, West into the Houston area, and even North towards Arkansas and the Red River area where your family is from. Depending on when and where your grandmother came up and her ethnicity, she may be remembering a time when people were being forcefully assimilated into the greater Anglo culture of America, around the time people were punished and socially ostracized for speaking French. My grandfather used to call non-French people "Americans" and my father and his classmates were beaten in school for speaking French. It's really interesting, and a bit sad, to see how much French people from my father's, and your grandmother's generation have changed. Justin Wilson was actually an exaggerated caricature of Cajuns, which was his shtick. Just like most ethnic caricatures, he was somewhat accurate but not quite, lol.
My grandfather was Plain Dealing,right by the red river.He died wh I was young but I went down there,from the High Sierras, every summer,all summer. Cool times,and I definitely watched Justin,,,,,,Jimmy Houston too,he was a kid.
The Louisiana accent and culture remind me so much of the Caribbean, specifically Trinidad where I am from. The French influence that we both have in our cultures binds us

I went to LSU in the early 70's, and I used to watch his show, just to hear him talk. He was a great chef; but also had a touch of comedy. Definitely a big fan of Justin. I guarontee ! I'm hungry just watching this episode !

The sad thing is not so much that he is gone but that modern networks would rarely (if ever) consider the classic chefs today, or any of the shows so many people remember the best; WIlson, Kerr, Childs, Yan, etc. All their charm and expertise as individuals are untouchable to the average marketing department now.

I’m from Louisiana, years ago when I was working in Illinois, a group of us went to breakfast after working the late shift. When the waitress came to take my order, I told her I wanted some bacon, eggs, and grits with butter. She looked at me like I was crazy and asked me “what’s a grit”? I don’t know who was more surprised, her for being asked something she never heard of, or me for her not knowing what grits were.

I watched him on our little TV as a kid... We had one small TV with 4 channels and an antenna wrapped in tin foil and I'd tune it to channel 8 just to watch him and listen to his stories. Love and miss those times. Thank you for the great memories, Justin.

This guy and Yan Can Cook were some of my favorite PBS shows when I was a young teen and learned I had a passion for cooking. My family were subjected to more than one expensive and only partially successful meals thanks to those two men. 😂

I grew up watching him!! I loved his accent and how he'd go 'whooo' lol. Just made seafood gumbo from scratch with a dark brown roux base. Gotta make and stir that roux just right for gumbo to pop. I spend a good 30 mins on my roux. Worth it.
The Emperor been cooking gumbo my whole life. I’d say you need to use butter, not olive oil, and that rue looks too dark. Might be the old film though. Rue should be the color of an old copper penny. He uses filé to thicken, but it can go stringy. Okra is better and adds that flavor. Justin didn’t like two things I know of. Okra and bay leaf.

Just made a big batch of gumbo with chicken, sausage and shrimp. From scratch. Nice chocolate roux. Made me look for this video just to check my creds with him because, well, he's the master. I'm good. I followed his rules well. I learned from the master.

The greatest personality on TV that I've ever seen. .loved to watch and listen to Mr. Wilson as he made my mouth water for the foods that he prepared, and laugh at the humor that he injected into his show.
So damn precious. My first exposure to south Louisiana culture!! I was born and raised in East Texas, but married my best friend in New Orleans in 2015 on Halloween. We lived in La for six years before moving back to Texas in 2016.

I really enjoyed his persona and shows, he automatically drew you in with his mannerisms, dialect and humor. A true culinary artisan to boot. I've made many of his recipes and have to say that he helped inspire me to cook and experiment.

I can't get mine darker than a Hershey bar without burning the piss out of it haha. I use canola oil. Can't believe he could get it so dark with olive oil. Olive oil ain't much better than butter when it comes to burning. Too delicate. Justin Wilson was a real pro.
I used to watch this in the 80s in college all the time! Everything was Cajun back then and all the drinks were blue. I remember this episode, so many great memories. I am a fantastic chef now thanks to the PBS shows!!!
I worked a few private events for this man...they were wild affairs and the food was amazing...I miss this show alot. Would kick back on a Saturday as a kid in New Orleans and learn how to cook like a pro.

The thing about Justin was he was truly authentic. He made his food the way he was taught. Celebrity chefs today all make pretty much the same dish and the show is way over produced. He cooks like people actually cook. He doesn't have assistants perfectly measuring out the ingredients and running out to get what you need. He eyeballs the spices. He substitutes when he needs to. His food isn't perfect but authentic food rarely is. He didn't steal his recipe from someone else. It was handed to him by helping out in the kitchen.

I once heard someone say, “There’s as many gumbos as there are mamas.” I guess what they meant was everybody has their individual take on the ingredients and cooking process. I enjoyed watching Justin Wilson’s cooking show back in the day, especially when he was in his outdoor kitchen. I liked his one teaspoon of salt in his hand so much, I practiced it until I got it right and now use it to show off when I’m cooking. He was a national treasure.

This was the homie back in the day. I have great memories of watching this with my Mom on PBS, but now she's no longer with us. Thank you for posting this and triggering a great memory.

We had one small TV with 4 channels and an antenna wrapped in tin foil and I'd tune it to channel 8 just to watch him and listen to his stories.

I used to watch this with my dad every Saturday and my dad has cooked some mean gumbo every year for my birthday I am now 29 and I still love this gumbo thank you justin wilson and rest in peace!!!!

This guy and Yan Can Cook were some of my favorite PBS shows when I was a young teen and learned I had a passion for cooking. My family were subjected to more than one expensive and only partially successful meals thanks to those two men. 😂

I grew up watching him!! I loved his accent and how he'd go 'whooo' lol. Just made seafood gumbo from scratch with a dark brown roux base. Gotta make and stir that roux just right for gumbo to pop. I spend a good 30 mins on my roux. Worth it.
The best part was when he'd make himself a plate, pour a glass of wine, and sit down and take a couple of bites. Eeeewww-weee!
The Emperor been cooking gumbo my whole life. I’d say you need to use butter, not olive oil, and that rue looks too dark. Might be the old film though. Rue should be the color of an old copper penny. He uses filé to thicken, but it can go stringy. Okra is better and adds that flavor. Justin didn’t like two things I know of. Okra and bay leaf.

Just made a big batch of gumbo with chicken, sausage and shrimp. From scratch. Nice chocolate roux. Made me look for this video just to check my creds with him because, well, he's the master. I'm good. I followed his rules well. I learned from the master.
My daddy and I watched this show every week together. We're from Tennessee but that's when my dad started saying onion and guarantee like Justin did. 🖤

Cajuns are the DESCENDANTS of the Acadians who were exiled from Acadie, now known as Nova Scotia, Canada by the English. A very sad tale indeed.

So damn precious. My first exposure to south Louisiana culture!! I was born and raised in East Texas, but married my best friend in New Orleans in 2015 on Halloween. We lived in La for six years before moving back to Texas in 2016.
This brings back memories.I loved watching him on Saturday with my family when I was a kid.

I really enjoyed his persona and shows, he automatically drew you in with his mannerisms, dialect and humor. A true culinary artisan to boot. I've made many of his recipes and have to say that he helped inspire me to cook and experiment.

The most amazing thing about this is how unbelievably dark his roux is without burning it. The guy certainly knows what the hell he’d doing.
Incredibly dark. I personally have never seen a roux that dark that wasn't burned. Its downright black.

I can't get mine darker than a Hershey bar without burning the piss out of it haha. I use canola oil. Can't believe he could get it so dark with olive oil. Olive oil ain't much better than butter when it comes to burning. Too delicate. Justin Wilson was a real pro.
I used to watch this in the 80s in college all the time! Everything was Cajun back then and all the drinks were blue. I remember this episode, so many great memories. I am a fantastic chef now thanks to the PBS shows!!!

I worked a few private events for this man...they were wild affairs and the food was amazing...I miss this show alot. Would kick back on a Saturday as a kid in New Orleans and learn how to cook like a pro.

My mother had us watching this guy when we were kids. His accent was hilarious. I remember he had a Cajun spice potato chip commercial too
The thing about Justin was he was truly authentic. He made his food the way he was taught. Celebrity chefs today all make pretty much the same dish and the show is way over produced. He cooks like people actually cook. He doesn't have assistants perfectly measuring out the ingredients and running out to get what you need. He eyeballs the spices. He substitutes when he needs to. His food isn't perfect but authentic food rarely is. He didn't steal his recipe from someone else. It was handed to him by helping out in the kitchen.

Spend a many of Saturday afternoons with my grandma in the early 90’s as a kid watching him, the frugal gourmet, and yan can cook.

I once heard someone say, “There’s as many gumbos as there are mamas.” I guess what they meant was everybody has their individual take on the ingredients and cooking process. I enjoyed watching Justin Wilson’s cooking show back in the day, especially when he was in his outdoor kitchen. I liked his one teaspoon of salt in his hand so much, I practiced it until I got it right and now use it to show off when I’m cooking. He was a national treasure.
