As he watched Justin whip up his Cajun dishes, he could be heard saying to himself “I bet that don’t taste like nothing!” Then he would wave his hand 😩😩😩😩. Grandpa is gone now, but I watch Mr. Justin every now and again to bring a little piece of him back.

Mr.Wilson ,Mr.Rodgers and Bob Ross on Oklahoma PBS in the 90s raised me ..As I didn't have a father figure and nana worked..now me and my 5 year old son get to watch them together.Thank you

41 years old. Been watching this man all my life. Not from Louisiana, but heard of Cajun File. I NEVER KNEW that it was sassafras leaf until this night. Justin's still teaching here at the end of 2024.
What he said towards the end about gumbo is true for all soups and stews. You cook it today, but don't serve it today. You put it in the fridge overnight, then take it out tomorrow, heat it up slowly until it's bubbling, and then serve it. Everything will have a chance to marinate in the seasonings overnight, and will taste loads better.

OMG !! How wonderful someone brought back up his cooking episodes. My late grandmother used to watch his shows religiously. Not for the cooking. Just to hear him talk. She used to tell me if you ever want to know how my family and I spoke before we went to school all you have to do is listen to Justin (Wilson). My older family member's were born and raised near Red River, LA. So, they would have been very familiar with people speaking this way. Rest in peace, dear Mr. Wilson. Your stories, manners and influence live on.
Red River is pretty far North of the prairie lands where most Cajuns are from, and the Eastern areas where the Creoles are mostly from. But, just like all cultures, the French cultures weren't static, they blended East into Mississippi, West into the Houston area, and even North towards Arkansas and the Red River area where your family is from. Depending on when and where your grandmother came up and her ethnicity, she may be remembering a time when people were being forcefully assimilated into the greater Anglo culture of America, around the time people were punished and socially ostracized for speaking French. My grandfather used to call non-French people "Americans" and my father and his classmates were beaten in school for speaking French. It's really interesting, and a bit sad, to see how much French people from my father's, and your grandmother's generation have changed. Justin Wilson was actually an exaggerated caricature of Cajuns, which was his shtick. Just like most ethnic caricatures, he was somewhat accurate but not quite, lol.

My mother was the best cook I have ever known and she faithfully watched Justin and Julia with her pencil and paper, writing down every detail of their recipes. Much later in life, I met and became good friends with his niece and she has told me some stories about Justin! Lord have Mercy! RIP Justin!

I went to LSU in the early 70's, and I used to watch his show, just to hear him talk. He was a great chef; but also had a touch of comedy. Definitely a big fan of Justin. I guarontee ! I'm hungry just watching this episode !
I watched him on our little TV as a kid... We had one small TV with 4 channels and an antenna wrapped in tin foil and I'd tune it to channel 8 just to watch him and listen to his stories. Love and miss those times. Thank you for the great memories, Justin.
When I visited friends in South Louisiana they told me Cajuns do not talk like Justin Wilson. It's an act, and the Cajun people don't care for it. It's like people thinking that everyone in the Ozarks and Appalachia talk like Jed Clampett.
Just went and saw Deadpool and Wolverine, had Gambit on it he sounded exactly like Justin Wilson so had to come and watch this video in honor of Justin.
When I was younger I use to love to watch his shows especially with me being a southerner. I miss him so much. I loved his Cajun accent and his personality he was never boring to watch. RIP Mr. Wilson you will never be forgotten.
The sad thing is not so much that he is gone but that modern networks would rarely (if ever) consider the classic chefs today, or any of the shows so many people remember the best; WIlson, Kerr, Childs, Yan, etc. All their charm and expertise as individuals are untouchable to the average marketing department now.

This guy and Yan Can Cook were some of my favorite PBS shows when I was a young teen and learned I had a passion for cooking. My family were subjected to more than one expensive and only partially successful meals thanks to those two men. 😂

I really enjoyed his persona and shows, he automatically drew you in with his mannerisms, dialect and humor. A true culinary artisan to boot. I've made many of his recipes and have to say that he helped inspire me to cook and experiment.
The Louisiana accent and culture remind me so much of the Caribbean, specifically Trinidad where I am from. The French influence that we both have in our cultures binds us

I’m from Louisiana, years ago when I was working in Illinois, a group of us went to breakfast after working the late shift. When the waitress came to take my order, I told her I wanted some bacon, eggs, and grits with butter. She looked at me like I was crazy and asked me “what’s a grit”? I don’t know who was more surprised, her for being asked something she never heard of, or me for her not knowing what grits were.
Wow! This was on my for you page! This man was on my tv when I was young. It was a random channel. Had to adjust the antenna but I got it. Loved his voice.
So damn precious. My first exposure to south Louisiana culture!! I was born and raised in East Texas, but married my best friend in New Orleans in 2015 on Halloween. We lived in La for six years before moving back to Texas in 2016.
That's probably the most original Cajun gumbo I've ever seen. This fella was like the Julia Childs of Louisiana cuisine, when you wanted to give hearing Julia's posh English a break you could tune in to this and hear Justin's authentic down to earth Cajun French accent along with some humorous stories and jokes thrown in. RIP, frere Justin, you will never be forgotten.

When I visited friends in South Louisiana they told me Cajuns do not talk like Justin Wilson. It's an act, and the Cajun people don't care for it. It's like people thinking that everyone in the Ozarks and Appalachia talk like Jed Clampett.
Just went and saw Deadpool and Wolverine, had Gambit on it he sounded exactly like Justin Wilson so had to come and watch this video in honor of Justin.
Justin Wilson was an after dinner speaker back in the day. I have a LP record of him telling hunting stories from back in the early 70's

When I was younger I use to love to watch his shows especially with me being a southerner. I miss him so much. I loved his Cajun accent and his personality he was never boring to watch. RIP Mr. Wilson you will never be forgotten.
The sad thing is not so much that he is gone but that modern networks would rarely (if ever) consider the classic chefs today, or any of the shows so many people remember the best; WIlson, Kerr, Childs, Yan, etc. All their charm and expertise as individuals are untouchable to the average marketing department now.

The greatest personality on TV that I've ever seen. .loved to watch and listen to Mr. Wilson as he made my mouth water for the foods that he prepared, and laugh at the humor that he injected into his show.
My daddy and I watched this show every week together. We're from Tennessee but that's when my dad started saying onion and guarantee like Justin did. 🖤
This guy and Yan Can Cook were some of my favorite PBS shows when I was a young teen and learned I had a passion for cooking. My family were subjected to more than one expensive and only partially successful meals thanks to those two men. 😂

I really enjoyed his persona and shows, he automatically drew you in with his mannerisms, dialect and humor. A true culinary artisan to boot. I've made many of his recipes and have to say that he helped inspire me to cook and experiment.

Cajuns are ancestors of Acadian French kicked out of eastern Canada many many years ago.
Cajuns are the DESCENDANTS of the Acadians who were exiled from Acadie, now known as Nova Scotia, Canada by the English. A very sad tale indeed.

Just made a big batch of gumbo with chicken, sausage and shrimp. From scratch. Nice chocolate roux. Made me look for this video just to check my creds with him because, well, he's the master. I'm good. I followed his rules well. I learned from the master.

I’m from Louisiana, years ago when I was working in Illinois, a group of us went to breakfast after working the late shift. When the waitress came to take my order, I told her I wanted some bacon, eggs, and grits with butter. She looked at me like I was crazy and asked me “what’s a grit”? I don’t know who was more surprised, her for being asked something she never heard of, or me for her not knowing what grits were.

Wow! This was on my for you page! This man was on my tv when I was young. It was a random channel. Had to adjust the antenna but I got it. Loved his voice.
So damn precious. My first exposure to south Louisiana culture!! I was born and raised in East Texas, but married my best friend in New Orleans in 2015 on Halloween. We lived in La for six years before moving back to Texas in 2016.

That's probably the most original Cajun gumbo I've ever seen. This fella was like the Julia Childs of Louisiana cuisine, when you wanted to give hearing Julia's posh English a break you could tune in to this and hear Justin's authentic down to earth Cajun French accent along with some humorous stories and jokes thrown in. RIP, frere Justin, you will never be forgotten.
