Only been to Canada once with my dad. Got to go to the Calgary Stampede when I was like 13 yrs old. And took a picture with Ms Calgary. My half siblings still live there. But he's from a small town in Jamaica (Prattville) He's gone now. But I live his cooking through you and Deddy's Kitchen. Be Blessed.

Hello AB,I am so with the way you prepare your presentations. I lived in New Orleans for thirty years, but originally out of California, born in North LA. grew up in Bauldwin Hills,above Los Angeles. I love,love your presentations. Your presentations are so very to the point. I was taught to do New Orleans soul food and creole cooking back in the seventies. I love you way it's shorter and better.

Fresh Pig 🐖 Tails are not salty I cook 👩🍳 them, I use the smoked Pig 🐖 tails as a seasoning 🧂 with Beans, greens 🥬 they are delicious 😋
I never heard or had fresh pig tails salty when you buy them. Now the smoke pig tails are.
He probably used salt pig tails which is typically sold in Caribbean meat markets. The smoked tails are salty but not the fresh pig tails correct.

I always boil my potatoes for 7 mins and then put them on a kitchen towel then season. I've never made BBQ pigtails in the oven. Good job as usual.
