This easy roasted butternut squash soup is unbelievably creamy, satisfying, and so flavorful. It’s also very simple to make, delicious when made in advance, and naturally vegan. We stir a little coconut oil right at the end before serving. This adds a faint, sweet coconut flavor. If you do not enjoy coconut, simply skip this step or stir in a little olive oil or butter.

I made it tonight, and it’s the tastiest squash soup I’ve ever tried. The coconut oil was a discreet but interesting touch. (I avoided adding coconut milk, so as not to make this element too prominent). I tried all the optional spices (in different small servings), liked them all. I also tried all the suggested toppings (again in different servings, of course) except the chikpeas which I don’t care for: loved the bacon, cheese coming second. Thanks for the lovely recipe!

Wow I just made this and it was simply amazing thanks for this great recipe I didn’t use paprika but used oat cream instead and used cayenne pepper and added an a onion as well as leek as I didn’t have any veg stock but it was delicious will be making this again!. 🤤🥰😋 thank you

This looks fabulous! I usually don’t like butternut squash soup because it often seems as if there isn’t enough flavor. But your recipe looks as if it has varied flavor ....and texture with the chick peas. Thank you!

Just made this and it is D.E.L.I.C.I.O.U.S!!!! The fresh rosemary made the squash really fragrant👌. I also used chicken broth.

We do discard the rosemary before blending. Depending on the weight of the squash, it roasts for 40 to 60 minutes.
