  • The beetroot is naturally sweet and the addition of garlic onion and spices makes it beautifully fragrant. And I love that there is also a little bit of heat coming from the chili.
    These vegan burgers are great served both warm and cold. I usually have them simply with a salad. but if you want a bigger meal you can also add some toasted bread and a bit of vegan mayo.

    Version 1 (with millet):
    ♥ 500g beetroot, grated
    ♥ 2 cups (500ml) cooked millet (3/4 cup dry)
    ♥ 1/2 cup (125ml) sunflower seeds, roasted
    ♥ 1 red onion, thinly diced
    ♥ 2 cloves garlic
    ♥ 1/4 cup buckwheat flour (yes, you can replace it with all-purpose flour)
    ♥ 1/4 cup canola oil
    ♥ 1 teaspoon ginger powder
    ♥ 1 teaspoon coriander powder
    ♥ 0.5-1.5 teaspoon chili powder
    ♥ 2 spring onions (green part)
    ♥ 2 tbs soy sauce
    ♥ black pepper and salt to taste
    Version 2 (with quinoa):
    ♥ 500g beetroot, grated
    ♥ 2 cups (500ml) cooked quinoa (3/4 cup dry)
    ♥ 1/4 cup (60ml) sunflower seeds, roasted
    ♥ 1/4 cup (60ml) pumpkin seeds, roasted
    ♥ 1 red onion, thinly diced
    ♥ 2 cloves garlic
    ♥ 1/2 cup buckwheat flour (yes, you can replace it with all-purpose flour)
    ♥ 1/4 cup canola oil
    ♥ 1 teaspoon ginger powder
    ♥ 1 teaspoon coriander powder
    ♥ 0.5-1.5 teaspoon chili powder
