I will definitely try your recipe Akis. Will avoid the quinoa though, because I really dislike it. I made it with beetroots before, but I think I used bread crumbs instead. Can't wait to try your version!!

Most of the Greek recipes if you remove/replace one or two ingredients they become easily vegan. We do it a lot especially before Easter.

Considering how much (well-deserved!) popular recognition and appreciation Greek cuisine gets around the world, PLUS how much fish I believe is eaten IN Greece, Greek fish recipes seem really really disproportionately underrepresented outside of Greece.

I knew you won the first Master Chef competition in Greece ;) I actually watched every single Master Chef show of all the countries where it was done (and which was of course available). Only, in your case it was all in Greek and no subtitles!! Yet it was not boring even if I basically understood almost 0 of what was being said ahahah

Looks good. As much WFPB as you can creatively make, and it be something the average home cook can handle (with your help, of course), that's what I'm interested in. I've had to make a lifestyle change for health reasons, so .... WFPB is where I'm headed.

@ akis if you cant add the walnuts because you have allergies can you use something else as a substitute or do you just omit the walnuts?

so I made them once I got fresh herbs. Had to add breadcrumbs because they were impossible to make into patties. They were not liked as burgers here, maybe because we love beef, but they were fantastic sliced up and put on top of a salad with a tahini dressing!
Some caramelized onions would be nice in it... or just some raw red onions...
I was following along until quinoa entered the picture. I have an anaphylactic reaction to quinoa. Quinoa is not yet very widely recognized as an allergen but many people are allergic to it. I'd like to encourage labelling of items containing quinoa as such up-front; it's a simple way to help people not die or face unnecessary emergency room trips :)

Nice try on vegan burger, but my daily intake of vegetables are more than meat, so I don't need a special vegan burger, plus I hardly have to use a blender :) What I really want to see are the Greek home made recipes from your Food Tour :) There were the ladies who cooked a big pot of greens with a cup (yes a cup) of olive oil, looks simple & interesting.
Every good dish starts with onion 😉
