  • Korean Beef Short Rib Soup (Galbitang 갈비탕)
    Ingredients:
    5 lbs of short ribs
    1 Medium size Korean radish
    1 Bundle of green scallions
    10 cloves of garlic
    2-3 pieces of ginger
    80 grams of sweet potato clear glass noodles
    (Topping ingredients) 2 eggs, 1 chopped green scallions
    Ingredients for soup base:
    5 tablespoons soy sauce
    1/2 cup fish sauce
    2 tablespoons rice wine
    1 teaspoon salt
    1 teaspoon pepper
    Cooking instructions:
    1.) Trim and remove the fatty portions from the short ribs. Then score the short ribs. By scoring the meat, it will help infuse flavors as well as tenderize the meat.
    2.) Clean the short ribs about 2-3 times with cold water. After cleaning the meat, add 2 tablespoons of sugar into a bowl of water. (The sugar, helps speed up the process of drawing out the blood from the short ribs.) This process will take about 40 minutes.
    3.) In a cheesecloth bag add 1 onion, 4-5 green scallions, 10 cloves of garlic, 2-3 thinly sliced pieces of ginger and set aside. (This helps produce a clean and pure tasting broth. If you do not want to accentuate the sweet flavor in the broth, you can take out the onion).
    4.) Now take the short ribs (after cleaning and drawing out the blood) and place into a pot. Add just enough water to the pot, where the meat is just covered. To that, add 2 tablespoons of rice wine and blanch the short ribs for 3-4 minutes.
    5.) Once the water comes to a boil, turn off the heat, drain the water with impurities from the short ribs. Then clean the short ribs with cold water (This step helps produce a clearer tasting broth).
    6.) In a pot add purified water (3 times the amount of short ribs) and turn the heat to high. Once the water is brought to a boil, add the short ribs. Remove oil and other impurities that will float to the top during the cooking process.
    7.) Add the cheesecloth bag that was set aside and add 2 tablespoons of rice wine, 5 tablespoons of soy sauce, 1/2 cup of fish sauce,1 teaspoon of salt. Now bring the heat down to medium and cook for 50 minutes.
    8.)Take 1 medium size Korean radish and cut into thinly sliced square pieces. Then cut the sweet potato glass noodles into easy to eat lengths. Then soak the noodles in lukewarm water for about 30 minutes.
    9.) Now add the sliced Korean radish into the pot and cook for an hour. At this point remove the cheesecloth bag and continue to skim oil and other impurities from the top of the broth.
    10.) Now prepare the toppings for the soup. Whip 2 eggs and make egg crepes in a pan and thinly slice.
    11.) Now, drain the water from the sweet potato glass noodles and place into the serving bowls. Add the Korean radish and short ribs to the serving bowl. Ladle some of the hot soup broth into the serving bowl and then drain the broth. Repeat this process 2-3 times. (This process helps the noodles become chewy and soft in texture. It also allows the short rib soup stay hot throughout).
    12.) Lastly, add the toppings. The thinly sliced eggs and green scallions. You are now finished!!!

    Korean Translation:
    ** 갈비탕 **
    (재료)
    갈비 5파운드
    중간 사이즈 무우 한개
    양파한개
    파1단
    마늘10쪽
    생강 2~3쪽
    당면80g
    고명; 계란 2개,다진파
    (양념재료)
    국간장 5큰술
    액젓반컵
    미림2큰술
    소금1작은술
    후추약간
    1) 갈비(5파운드)에 기름을 떼고, 칼집을 내주면 맛이 잘 우러나고,질긴 것을 방지할수 있습니다.
    2) 찬물로 2~3번 씻은후 설탕 2큰술을 물에 넣고 (설탕을 넣으면 핏물이 빨리 빠져요) 40분정도 물에 담가 핏물을 제거해줍니다.
    3) 거름망 주머니에 양파한개, 파4 ~5개,마늘10개, 생강 얇게 2~3쪽을 넣고 준비해 주세요 (깔끔한 국물을 맛보실수 있어요, 만약, 너무단맛을 원하지 않는 분은 양파를 안넣으셔도 됩니다.)
    4) 핏물을 뺀 갈비를 냄비에 담고, 갈비가 잠길정도의 물을 부어 미림 2큰술을 넣고 3~4분 데칩니다.
    5) 팔팔 끓으면 불을 끄고, 핏물거품이 많이 뜬 물을 버리고, 찬물에 갈비를 깨끗이 씻어 주세요 (깨끗한 국물맛을 보실수 있어요)
    6) 생수를 (갈비의 3배) 냄비에 붓고 센불에 물이 팔팔 끓을때 갈비를 넣고, 기름과 불순물이 뜨면, 제거해 주세요.
    7) 준비된 거름망 주머니를 넣고, 미림2큰술, 국간장 5큰술, 액젓반컵, 소금1작은술을 넣고, 불을 중불로 줄이고 50분 정도 끓여줍니다.
    8) 중간 사이즈 무우 한개를 나박하게 썰어 주시고, 당면은 적당한 길이로 잘라 미지근한 물에 30분 정도 담가 놓으세요.
    9) 썰어놓은 무를 넣고 한시간정도 푹 끓여 주세요. 거름망 주머니는 건져냅니다. 중간중간 기름을 제거해 주세요.
    10)고명으로 올릴 계란 2개를 얇게 부쳐 채썰어 놓고, 파도 얇게 썰어 놓으세요.
    11) 물에 불린 당면을 물기를 빼고 국 그릇에 담고, 무우, 갈비를 넣은후 2~3번 뜨거운 갈비탕 국물을 부어 토렴을 해주세요.(당면도 부드럽고, 갈비탕을 다 드실때까지 뜨끈한 국물을 맛보실수 있어요)
    12)갈비탕위에 예쁘게 계란, 파 고명을 올려주시면 완성!!!
