    Ingredients:
    1 1⁄2 pounds Petite red potatoes- cut into pieces
    12 large Eggs
    8 oz Farmland Ham, Fully Cooked, Cubed
    1 medium Red bell pepper, chopped
    1 medium Green bell pepper, chopped
    ½ medium Onion, chopped
    6 Tbsp Reduced Fat Mexican Style 4 Cheese Blend
    2 Tbsp Chives, or green onions
    1 Tbsp Olive oil
    1 tsp Granulated garlic
    1 tsp Onion powder
    1 tsp Table salt, 1/4 tsp for potatoes 1/4 tsp for eggs
    Black pepper 1/2 tsp, , 1/4 tsp for potatoes 1/4 tsp for eggs
    Wash and cut potatoes into bite sized pieces. Add to a large bowl and add olive oil, granulated garlic, onion powder and ¼ tsp salt and pepper. Stir until potatoes are well coated. Add to a large sheet pan lined with parchment paper. Bake at 400F for about 30 minutes or until fork tender.
    While potatoes are cooking; in a large nonstick skillet on medium high heat, add the onion, bell peppers and ham and cook until veggies are softened and ham is heated through.
    Meanwhile, crack eggs into a large bowl and salt and pepper. Whisk until smooth. When the ham and veggies are ready, pour in the eggs and cook and stir until the eggs are cooked to your preference.
    Divide the cooked potatoes evenly between six containers, placing them on the bottom. Divide the eggs evenly and add to the top of the potatoes. Sprinkle each with about Tbsp cheese each and top with chives or green onions if you wish.

    Hi, Alicia!
    These high-protein breakfast bowls look amazing! I think that potatoes, peppers, ham, and cheese all together super well and are very filling, so I know these would be a great way to start the day. I am glad you really seasoned the potatoes very well--it seems like potatoes really soak up seasoning, so it takes a lot to make them flavorful. And of course, it wouldn't be an AliciaLynn video without Greek yogurt--I think it would be a great low-calorie substitute for sour cream.
    Meal prep is crucial for having good food on hand so that we don't reach for something we shouldn't so thanks again for this healthy and delicious recipe, Alicia!

    I fixed this tonight for supper and had strawberries and blueberries on the side with Skinny Girl poppy seed dressing. It was delicious and so filling. Thank you for a wonderful recipe.

    I'm not sure if I can trust myself making this one Alicia😂 I might have to break my arm to keep from eating more than one. Sorry for the
