Tim - I have just found your channel which is an excellent resource. I am just about to start a merlot kit, the instructions say to ferment between 20-25 degrees. I have temperature control and wondered if you have recommendations on the best temperature and whether increasing the temperature during fermentation is beneficial? Thanks
