And one idea or question: did you try goose fat already? My husband makes great goose and with the fat running out we can cook for weeks, we fry eggs, Schnitzel etc. I think maybe steaks would be nice with goose fat. Guga you save about 30min of oven time if you dump the potato em boiling water and wait until it boils again + 10min, than just put in the broiler or in the oven just to gratin the top.

Yes! Duck fat is amazing to cook with! I use it to pan fry fingerling potatoes, eggs, pretty much anything you fry in butter.
