Scottish cottage diaries vlog: an emotional chat, lasagne recipe and trip to Ardnamurchan and Mull

- Hello, I’m Caroline, I live in the Isle of Skye and welcome to my UA-cam channel.
A bit of a longer vlog for you today, I hope you enjoy!
Lasagne recipe:
-Fry 1 onion and 4 cloves of garlic
-Add 500g beef mince, fry until browned
-Add 2 tins chopped tomatoes, 200ml red wine, 1 tbs tomato purée, 1tsp oregano, 1 tbsp Worcester sauce, 1 tsp brown sugar and cook on low for 45 minutes stirring regularly
For cheese sauce:
-Melt 25g butter and add 3 tbs plain flour in pan
-Gradually add milk whisking regularly until thickened
-Stir in 1 tsp English mustard
-Gradually stir in 3/4 block of extra mature cheddar
Layer bolognese, cheese sauce and lasagne sheets until left with layer of cheese sauce on top. Sprinkle with extra cheese and cook for 45 minutes at 180C.
Rest for 30 mins and enjoy! ❤️

I just wanted to say that being an endo girl myself, I was told repeatedly by several doctors that endometriosis does not equal certain infertility. My gynecologist always says there are as many types of endo as there are patients + I know several women suffering from but they didn't struggle at all having babies.
I know it's scary from personal experience but you're not alone and you never know ❤

I'm somebody who struggles with really painful periods, and I would highly recommend reading Period Power by Maisie Hill. It was so insightful and she discussed all sorts of period-related problems including endo. After reading it, I felt more hopeful that there are things I can do to manage better and be more in control of my own health. Wishing you the best of luck on your endo journey 🧡

Oven roast your broccoli florets. It gives it a lovely nutty flavour and a much better texture than boiling. I toss mine with olive oil, salt, pepper and a bit of garlic granules and bake at 200C for 12 mins. Thanks for another lovely, cozy video ❤

And yes, I thought it sounded like endometriosis 😢 glad u r having a scan. I have endometriosis and had two ops and had a child no problem and yes, never took that pill just soldiered on. Hi from an Inverness girl living in Northern Ireland! My recommendation is the Courthouse in Bangor, County Down. It’s a fantastic wee bar/venue with a cosy fire and trad session on every Saturday afternoon. If you want company for that, or a dog walk/sea swim/paddle when you’re in the area give me a shout, would be lovely to show you round 😊

About broccoli: have you ever tried it roasted with olive oil salt and pepper until it has a pretty strong color (not burnt but browned) then tossed with lemon juice and grated Parmesan for the last 5 minutes of cooking? That’s my favorite way to have it anyway. A little bit of thinly sliced basil once it’s out is good on this, but not essential.
Highly recommend chopping broccoli up in bite-size pieces and tossing with olive oil, salt, and a dash of garlic powder. Roast for about 15-20 min at 205 C. Finish off with a handful of grated Parmesan, some roasted pine nuts or sunflower kernels, and a squeeze of lemon. Nothing better!

Thank you SO much for talking about the endo stuff. I had a very similar conversation with my doctor last week and its been on my mind a huge amount- especially around fertility. I had an ultrasound last year and was told it was all clear, only to go back to the doctor about my symptoms (which are actually more digestive system related, but only when my period comes (which apparently means it might have spread to my bowel)) and have her notice that the scan notes did actually say there was some endometrial tissue there. Now waiting on a referral for further investigation.
I'm 31 and getting married next year and we weren't planning on trying for a while as we wanted to save money but now we've decided we're just going to try as soon as the wedding is over and paid for, and try and survive on statutory mat pay if it happens (I work for a charity so no big maternity package) - which I know isn't an option for a freelancer like yourself. I've been talking to friends who are childfree by choice though as well to get a sense of how good life can be without having children, and as Lee said - you can always have lots of dogs!
I also have a wonderfully supportive and 'what will be will be' partner which is such an antidote to my endless researching/playing out worst case scenarios.
The uncertainty is the absolute worst, as well as feeling like your hand might be forced into making certain decisions. Sending lots of love. Seeing the effect it had on you has really made me feel validated in my feelings so thank you for sharing 🧡

Caroline, resetting and reducing can give time to heal. It's temporary often but gives time to consider children.
If they offer a laparoscope, consider. Endometriosis can scar the colon and bladder that causes more issues later. Sometimes it can be tidy up during the procedure.
It's beautiful there and you will be just fine. So fortunate such a loving partner you have.

Broccoli chopped fairly small and roasted in the oven with some nice seasoning is how I made myself like it! :)

I am from Northern Ireland.. I'd advise to do the cause way drive..see the giants causeway and donegal.. it's beautiful and similar to Scotland.. however I am a fermanagh girl and we have an awesome pub called Charlie's bar in Enniskillen which is worth a visit got a music night..

I feel this is very Midwestern of me, but I love brocoli with melted cheese! I use Velveeta but you could probably use cheddar with a splash of milk! Or brocoli cheddar soup!

So many doctors do NOT understand endometriosis. I have suffered extremely severe endometriosis for decades. In fact, a top womens cancer specialist admitted i knew much more about endometriosis than most doctors and evensurgical students. So, some ideas i can offer for you to consider and research are: 1) the only way to definitively diagnose endometriosis is through surgery. Laprascopoply is best as it reduces the risks of internal scarring. 2) the amount of visible damage caused by endometriosis in the body does not define the level of pain. 3) Whilst on the contraceptive pill, you must skip the sugar pills. The point being to prevent the sloughing off the uterus tissue and ovulation. 4) it is the estrogen in the body (think ovaries) which primarily causes and influences endometriosis. 5) consider having your eggs removed and stored as one would before cancer treatments. Particularly if you have not fully chosen childfree lifestyle. This keeps your options to biological parenthood open. 6) if everything gets so bad inside that considering hysterectomy, make sure your ovaries are removed too. Otherwise, the ovaries will keep activating the endometrial tissue throughout your body.

About twice a week and currently using faith in nature wild rose 😊
Please go and see a holistic practitioner eg herbalist or naturopath. There is so much more you can do than taking a hormonal pill for endo. Diet changes to look into is gluten free.

Investigate into the hormonal birth control, blood clots in young women on the rise! This effected someone very close to me, and I just talked to someone who knew two young women that had blood clots! I wish you the best
