SECRET REVEALED! Best Chinese Braised Duck Recipe 潮州卤鸭 Teochew / Chiu Chau Hawker • How to cook duck

  • Braised duck or 潮州卤鸭 or some people call it 卤水鸭is a Chinese dish well loved by Singaporeans. Although Chinese from different dialect have their own version of braised duck, the Teochew braised duck is considered the most popular in Singapore.
    You can easily find a stall selling braised duck in food centers all around Singapore. I guess the reason is because the preparation of this dish is although slightly laborious, you can hardly go wrong with the dish once you get the hang of cooking it. Serve the braised duck with freshly cooked jasmine white rice and drizzle some of the thick dark sauce on the rice as well as some simple side dishes of braised hard-boiled eggs. Hmm, simply delicious!

    Ingredients:
    Serves 8
    1 whole duck - about 2kg
    1 cup of dark soya sauce (premium quality)
    1/2 cup of light soya sauce
    2 tablespoons of five spice powder
    4 - 5 cinnamon sticks
    40g of rock sugar
    1/2 teaspoon of szechuan peppercorn
    1 teaspoon of white peppercorn
    8 pieces of cloves
    2 pieces of star anise
    100g of blue ginger
    70g of old ginger
    90g of garlic

    Great recipe. I made this and then had some in rice paper rolls with vermicelli, cucumber, spring onion and coz lettuce, Delicious! To much soy sauce though, found it salty. So I added 1 orange juiced & peel to sauce to balance flavour.
    Very tasty and new sub. 👍🏻

      Thank you so much, Sally. If you’re using a pressure cooker, please add enough water to cover the entire duck so that the colour on the duck will be even. You can cook it for 45 mins. Hope this helps. Happy cooking !

    Can I put the duck in oven? Problem is I don't have a large enough wok but have a large ceramic tray with a lid, to prevent it from drying out.

    You'll have to forgive me but I was having a hard time following you between your accent and how fast you talked. Do you have a website that lists all of the ingredients and all the steps that follow? I've loved Duck since I was a little girl. And would love to try it. I'm also curious as to what kind of wok you used. Also, I have an electric stove/oven. Do you have any advice on how to compensate for temperature?

    I have been waiting for this recipe for a long time. Is there a way for the skin to come out crispy? May be placing it in the oven at the end?

      After braising, you can hang the duck up to dry for a few hours. Then deep-fry it or leave it in the oven. Best to deep-fry for maximum crisp. Happy cooking!

      blue ginger is galangal. It is not replaceable with anything else - ginger is a cousin of blue ginger but the taste is distinctly different. galangal is a cool refreshing in taste and is used in small amounts but makes a difference in a dish.

    Just as well I watched the whole video before I started preparing or I would have missed the very important initial step of cleaning the duck that was only mentioned towards the end of the video. Imagine if one had marinated the duck for some time only to find out that they had to clean it with salt first!!!😲

      Spice N' Pans Both recipes look the same though. lol. Anyway. I tried the recipe on this video yesterday! I replaced the duck with a chicken and added 4tbsp of rice wine (Ye! I combined the recipe for your soy chicken as well 😜😜🤣). Was ready in 45 minutes! It was a blast! A total pleaser! Everyone liked it!

    this soup seems to be the common ancestry of something I've seen described in Thai as a sort of "Chinese medicine curry". I think"Palo Bed" is their version of this recipe.

    Yeah, in the Netherlands, that duck won't have the head and neck or the feet.
    It's considered offal.

      One of our UA-cam friends once shared that you can get galangal or blue ginger in powder form too. Since you have difficulty getting them fresh in Toronto, perhaps you can try and see if you can get hold of the powder form.

    is it better to remove the bishop nose to avoid any unpleasant smell?

      Good morning from Singapore! We didn’t remove it and it turned out great. No effect at all. Please rub the duck with some salt as part of the cleaning process before cooking. Then follow our steps and you will have a delicious braised duck.

      Hi! We kept the gravy in the freezer. We will use it again to braise another duck or chicken or eggs, gizzards etc.
