When cooking with egg whites you can save your yokes. Simply pour the yoke into an empty ice cube tray or silicon mold and freeze. Once hard pop it out and store in the freezer in a zip lock bag. To use your yokes for another recipe just thaw it out and use like a fresh yoke. 🙂
@@christabcook as a professional cook the main things they teach you is to buy your product from a trust worthy source. The fresher the better. Bacteria needs warmth, moisture, and a neutral to base environment. From prep to serving your food should not be left in the temperature danger zone (41F-140F) for any more than 4hrs. Which is especially important for picnics and buffets. Bacteria loves moisture. It does not love acidity. The lemon and lime juice or vinegars we use in recipes like mayonnaise, beef tartar, or ceviche isn’t just tasty. It also raises the acidity of our foods killing or at least hindering bacterial/microbial growth. Freezing raw products like meat and eggs also help hinder parasitic and bacterial growth. There is a method to the madness of cooking. The more you can implement these methods the safer your food will be. I always use AT&T. (Acidity, Temperature,Time)To better remember. Or bacteria may reach out and touch someone. Hope this helps.🙂
When I tried freezing egg yolks before, they gelled. They wouldn't mix into anything when thawed, they were just thick blobs. I found out later that you have to mix egg yolk with a little salt in order for it to stay runny when thawed. Sugar works too, if you want to save it for a sweet dish, but I have no idea if allulose, Bochasweet, or erythritol would work.
I have a 11 year old Type 1 diabetic grandson that I regularly make chaffles for so that he feels like a regular kiddo at lunch. I use a regular round waffle iron and break into 1/4’s when done. I put a large slice of provolone cheese on the iron before putting my batter on then put another slice on before closing the lid. Super crisp.

First TIP is divide the dough into three roll it into three balls with your hands and then push the ball into the mini dash. It makes more even chaffle that looks really nice and can be used a little bit easier for sandwiches etc. another TIP if you make three batches and freeze (because they freeze really well) you’ll have three egg yolks and you can make a blender hollandaise sauce to go over a couple of the chaffle in a keto Benedict 😁. I recently used these chaffles on top of keto French onion soup with some Gouda cheese and it worked out really well also. Another
@@angelaroney6390 Small amounts of onions are fine, but the huge pile of onions used to make French Onion Soup will have too many carbs, sadly. I think a reasonable substitute would be a rich beef broth made with bones and meat to get flavor and gelatin. Then caramelize some onions to get the flavor, just not as many as the normal recipes.
I made the chaffle version with the xanthan gum and doubled the egg whites to make it a little more spreadable. I also beat the egg whites until they were foamy before mixing them into the dry ingredients. Turned out amazing. Crunchy on the outside, very puffy and with a lot of air pockets on the inside. I didn't mind using a second egg as my daughter makes homemade ice cream, so the yolks didn't go to waste. Excellent recipe.
After watching your video, I was looking for a snack in the fridge and saw sliced onions (leftover from burgers on the weekend) when an idea hit me! Chaffle onion rings! Except, I used diced, dehydrated onions. Made your recipe for crispy chaffles, added about one tablespoon diced onions (I don't know if freshly diced will work, didn't try it), about 1/4 teaspoon Cayenne (or paprika), about 1/4 teaspoon salt. It made 4 chaffles (2 tablespoon per chaffle. Maybe three chaffles if you used 3 T batter per chaffle). I placed the "batter" in the middle of the chaffle maker and pressed down hard and cooked for 4.5 mins. They were sticking a little to the chaffle maker, but popped right out. May not be EXACTLY like an onion ring, but sure was good! 😋
I swapped out the xanthan gum for psyllium husk and really liked the way they came out. I've been gluten free for 8 years and have found that if you let a mixture with psyllium husk in it sit for a few minutes it works better than xanthan gum in recipes where lift isn't a huge factor. Psyllium husk also provides some bonus fiber!
Just made this recipe as my very first chaffles. I used an old square waffle maker that makes 4 waffles. The benefit of this recipe with the xanthan gum is that it is stiff enough "batter" that it can be formed into a small disc shape before you put it on the waffle maker. This allowed me to use my square waffle maker to make the round chaffle. I was actually surprised and pleased with how well they came out. I'm not keto but am watching my carbs intake so this was fun and I like the taste and texture. My first use was to top one with cream cheese, smoked salmon and a fried egg. Excellent. I'm going to use two more for my burger bun tonight. Thanks.
the light on the top of the Dash mini waffle maker is just an indicator that it is heating up, once its at the highest temp the light goes out, when the temp goes back down the light comes on again it is not a timer and does not let you know that its done. the best way to know that it is done is when it stops steaming.
You might want to try a couple of batches of chaffles using finely-shredded mozzarella cheese instead of the "regular" cut. It makes for a more uniform "batter", and allows better coverage when spreading on the griddle.
Being gluten free meant I hadn't eaten Cheezits for like 10+ years now. Playing around with chaffles has been fun but it also has made it possible for me to enjoy 'cheezit' flavor in a chaffle! Here's recipe that works for me - 1 cupFUL of shredded (sharp) cheedar cheese + 2 teas. almond flour + 1/2 teas. garlic powder (OR 1 teas. garlic salt) + 1/2 teas. xanthan gum + 1/4 teas. salt (OMIT if garlic salt used) + 2 medium eggs. I prefer to mix with a hand blender to make a nice dough. I cook 6 minutes for lovely crisp and crunch when cooled. ENJOY!

I made a chaffle recipe a while back that was nothing but whole eggs and cheese and I truly wondered what all the chaffle hoopla was about because I thought they were floppy, eggy, and frankly kind of gross (and I love eggs)! Anyway, I gave your new recipe a spin and I felt as giddy when I pulled that crunchy little thing out of the Dash and took a bite as I did a few years ago when I realized there was such a thing as a delicious keto muffin. Xanthum Gum dissolves in a fat source. So mixing it with a bit of oil or butter, etc will stop it from clumping in your mixture. Also, if you want airy bread, try whipping the egg whites first and folding them in

Hi from Florida. I am one of your newer subscribers and just made your chaffles. These are very addictive and I love them. I added a tiny bit extra egg white so it spreads just a little easier. I also added some nutritional yeast to give it that cheesy flavor and lastly I added the everything bagel seasoning. Oh, so good with my bacon and egg breakfast. It is hard to eat one. So I ate 1 1/2. Which left me with 1 1/2 for tomorrow's breakfast. Thanks for testing this out. It is a game changer and you 2 are also very good together love your videos very enjoyable to watch.
A recent Chaffle Hack I came up with? (There are no original ideas….) Anyway: zap all your dry ingredients in a mini prep or nutribullet and then add the wet to finish mixing. It makes a much smoother batter and a more uniform “bread”!

Love the yolk free version. I used psyllium husk (not powder) - 4 tsp to replace the 2 T almond flour and it worked very well. Then I added some diced pepperoni and wow. Hubby devoured them. Dogs got the yolks. Everyone's happy! Thank you.
I added a tablespoon of Everything Bagel seasoning and a 1/4 tsp of Real Butter & Sea Salt Popcorn seasoning. It elevated my chaffles to a whole new level. Ate them with cream cheese and it was glorious!

I’ve tried different cheeses. All of them work. I’ve added buckwheat flour and it makes it the texture of bread without gluten. I’ve also added herbs and spices. Very versatile.

I rarely use almond flour anymore. Coconut flour is less "filing" (aka calorie dense), so you'll feel less "full" after eating. I just had a crispy bacon, ham & cheese sandwich on my chaffles for lunch.👌

I ran out of almond flour going to make my own but I used coconut flour and wow this is so much better. No need for xantham gum. Soaks up the moisture nicely. For now on I’ll be doing this.

We have been craving cheese and baguettes for so long since going keto! Not sure if it's been done but took your chaffle recipe, added a touch of baking powder and made them in a mini griddle flipping halfway. When done, I brushed with olive oil and topped with flaky salt then served with an assortment of cheeses. Oh my goodness!!!! I use Lupini flour instead of Almond flour for your basic recipe. It's lower carb, and is a good 1:1 substitute. I also use aged goat cheese (more like a sharp cheddar than the soft spreadable) since my wife is lactose intolerant. It really makes a great sandwich bread, or I can add italian seasoning, pepperoni and tomato paste and eat 'pizza'.

I made these tonight and added allulose and lemon zest....then topped with a dollop of cinnamon whipped cream and drizzled with the Explorado Market keto cinnamon caramel sauce. One sweet waffle and some bacon made a delicious dinner.

I made my first chaffles this morning. I didn't have mozzarella available so I used a Mexican cheese blend. Didn't search for the actual recipe so I kind of went from memory, and it made 2. A little bit more almond flour than your original and a little less cheese. But I made two lovely chaffles that were a great base for my over easy eggs, and allowed me to sop up the drippy yolk. I obviously don't have a problem with things being eggy.

Hi Keto Twins! Love you both, and both your YT channels and website. I use a bunch of your recipes and I've been using LMNT for a couple of months based on your testimonial. I use a bunch of your tips and tricks, too, and I just adapted one to create a new hack for production. I got those 4" parchment rounds and the nice canisters to store my chaffles, and I saw you struggling to spread your chaffle batter evenly, so I put two ideas together. I divide up my batter into 2 ounce soufflé cups like one might use for jello shots (so I've heard!). I put the parchment rounds on a small plate and squeeze a cup of batter onto the parchment, put another on top and use a second small plate to press down evenly, making perfectly round even batter discs which load perfectly onto my Dash makers. I use three of the Dash makers side by side as I usually make 9-12 at a time, and the parchment rounds peel off just fine and I can reuse them later to space the chaffles in my canisters. Works like a charm and I have thin crispy chaffles that are nice looking too! Thanks for all the great ideas!! Keep them coming, ladies!! 🥰🥰🥰

I made this recipe today using my new round chaffle maker. They turned out great! The second batch I made I added 1/2 tsp. nutritional yeast. It definitely kicked the flavour up a notch!
I made the revised version today. It was SO good. I liked it was crispy, dry a bit chewy even. Made a quick hollandaise with the separated yolk, a poached egg and omg! Yummy!

Thank you this looks delicious. I am going to try this today. You can also make a great desert with the left over yolks by adding a quarter cup of heavy whipping cream and two tablespoons of water and some vanilla stevia and then whipping it all together and steaming it for 10 mins in a steamer pot on the stove. Add some berries and some whipping cream and you have a great desert.

Something I did to make the dough easier to handle was I used a pastry cutter when it was just cheese and dry ingredients (before the zanthan gum) and cut the pieces up more uniformly, Then added the ZG and egg white and it mixed beautifully and was also really easy to form into a thin patty before placing it in the waffle maker. @@DebbieHofstra I just look at older photos and think about how I felt back then. It becomes a way of life really. Eventually I just never gave it another thought and continued on. I had so many people say it wasn't sustainable long term. I strayed a few times for a day or a meal but the effects that happened from doing that made me revert back very quickly. It's much easier now than it was back then. So many great creators and recipes now.
Several years ago I made some chaffles but they didn't turn out so good. However, following your instructions, they turned out perfect. Instead of xanthan gum, which I didn't have, I used psyllium husk powder. I read that when using the psyllium husk to double the amount used when substituting for xanthan gum. Also, on the xanthan gum recipe I used the whole egg. I don't mind the egginess. I also did use the baking powder. Both recipes turned out awesome. I think I like the second one a little better but it was really close. I was recently diagnosed with Diabetes T2 so I am really committed to the keto lifestyle. Thanks for these recipes, am looking forward to trying differrent ways to use the chaffles.
Omg my chaffles turned out perfectly. I followed the basic recipe....1 cup of m. Cheese, 1 egg, 1/4 top of baking soda and 2 tbsps of almond flour. I didn't find an egg taste, just a cheesy taste. 1/4 cup on a preheated waffle maker sprayed with avacado oil...perfection. You have saved me!! Thank you so much for the chaffle recipe. Awesome recipe!! I use this every day now. Love it! I modded it slightly for 2 chaffles and powdered eggs. I use 70g mozzarella, 1/4 tsp xanthan gum, 1 tbsp almond flour, 1 tbsp whole egg powder, 1/2 tbsp egg white powder, 3 tbsp water. I use one of those 20 dollar ninja express choppers to process the dry ingredients first, add the water and process some more. Then just divy out the batter in 2 onto the waffle maker. Did I say I love it. SOOO good. I'm trying different mozzarellas at the moment to mix is up. Currently on the Galbani block from Walmart. Shred a block every few days. It's a little salty, but awesome. Thanks so much, this is amazing and totally kills any bread nostalgia. I've used it for burgers, sandwiches and bacon n eggs. It's the best!
Omgsh just tried this with the new specs, but I did add the 1/4 tsp of baking powder and shredded cheddar…WOOOW AMAZING!!!! I wish there was a maker with multiple slots. Obtw, way the yolks can be used for hollandaise sauce and if you keep them as in the original recipe, they still come out super crispy, um, maybe even a bit more I thought, so if you are looking to reduce the calories, I would say leave them out, but you can certainly keep them in. I think I will need a chaffle support group...

!! Thank-you, lovely ladies! I finally bought a 4 well dash waffle maker. Correction: Chaffle Maker. I have watched several of your videos, but I don’t always leave a ‘like’ because I fall asleep watching tv. Ha! Anyway, you asked if anyone knew how to make them thinner. So, I used my nutribullet. I put the egg in first because I have learned to put a liquid on the bottom so the dry ingredients mix in better. So, egg, shredded cheese, Xantham Gum, and Almond Flour. Mix in short bursts and shake to keep stuff in play. Finished stirring with a thin spatula because it was very thick. Then added 1T water so I could mix it up. Since the cheese was in smaller pieces, it was easy to spread in the waffle wells. I don’t know how to add a picture to comments. My first chaffles turned out crisp and thin and delicious. Thank-you, again!

I like your first chaffle recipe with 1 C Mozz, 1 teaspoon baking powder and 1 egg ( it doesn't taste eggy to me at all) but I add 1 teaspoon pysillium husk powder. because I am trying to stay away from the almonds till the eight comes off. I have tried all the variations of the chaffles and like them all, however I am not a lover of the coconut flour chaffles. But to each his own. I appreciate your experiments and sharing it all helps so much esp. when looking for a variety. I understand that if you have an egg allergy then it is because of the white and ( also can taste more eggy some say the yolk accounts for the eggy taste ) and sometimes using duck eggs or an organic higher grade or brand of egg gets rid of this. My son has problems with eggs and he agrees it is the whites of the eggs. Someone might have a different thought on this. Love ya both Thanks Bunches

I love your chaffle recipe and make it at least once a week. I saw a pesto chaffle recipe on Reddit, but I thought I’d try to add pesto to your recipe. I reduced the mozzarella to 100 grams, used 10 grams of almond flour, 5 grams of coconut flour, 1/2 teaspoon xanthan gum, 1 egg white and 2 tablespoons of pesto (avoiding the oil as much as possible). I put my Dash on a plate to catch the extra oil from the pesto. They were delicious! Feel free to play around and make pesto chaffles even better. Sorry about the weights but I was a lifelong baker before keto.

I have a regular sized round waffle maker and it only made a scant 1 large waffle. Next time I will 2 1/2 times the recipe to make 2 large waffles for me and my husband. Hmmm.... ideas are coming. I did 3/4 mozzarella 1/4 parm 1 1/2 teaspoon garlic powder 1 table spoon of wheat gluten 1 table spoon of almond flour 1 teaspoon of xanthan gum Salt Pepper Kept a full egg Wow!! Better than bread!! Next time , want to try 2 egg whites instead and keep the yolks for morning time dipping!

When cooking with egg whites you can save your yokes. Simply pour the yoke into an empty ice cube tray or silicon mold and freeze. Once hard pop it out and store in the freezer in a zip lock bag. To use your yokes for another recipe just thaw it out and use like a fresh yoke. 🙂

Bacteria needs warmth, moisture, and a neutral to base environment. From prep to serving your food should not be left in the temperature danger zone (41F-140F) for any more than 4hrs. Which is especially important for picnics and buffets. Bacteria loves moisture. It does not love acidity. The lemon and lime juice or vinegars we use in recipes like mayonnaise, beef tartar, or ceviche isn’t just tasty. It also raises the acidity of our foods killing or at least hindering bacterial/microbial growth. Freezing raw products like meat and eggs also help hinder parasitic and bacterial growth. There is a method to the madness of cooking. The more you can implement these methods the safer your food will be. I always use AT&T. (Acidity, Temperature,Time)To better remember. Or bacteria may reach out and touch someone. Hope this helps.🙂

When I tried freezing egg yolks before, they gelled. They wouldn't mix into anything when thawed, they were just thick blobs.
I found out later that you have to mix egg yolk with a little salt in order for it to stay runny when thawed.
Sugar works too, if you want to save it for a sweet dish, but I have no idea if allulose, Bochasweet, or erythritol would work.

I have a 11 year old Type 1 diabetic grandson that I regularly make chaffles for so that he feels like a regular kiddo at lunch. I use a regular round waffle iron and break into 1/4’s when done. I put a large slice of provolone cheese on the iron before putting my batter on then put another slice on before closing the lid. Super crisp.

First TIP is divide the dough into three roll it into three balls with your hands and then push the ball into the mini dash. It makes more even chaffle that looks really nice and can be used a little bit easier for sandwiches etc. another TIP if you make three batches and freeze (because they freeze really well) you’ll have three egg yolks and you can make a blender hollandaise sauce to go over a couple of the chaffle in a keto Benedict 😁.

@@angelaroney6390 Small amounts of onions are fine, but the huge pile of onions used to make French Onion Soup will have too many carbs, sadly. I think a reasonable substitute would be a rich beef broth made with bones and meat to get flavor and gelatin. Then caramelize some onions to get the flavor, just not as many as the normal recipes.
I made the chaffle version with the xanthan gum and doubled the egg whites to make it a little more spreadable. I also beat the egg whites until they were foamy before mixing them into the dry ingredients. Turned out amazing. Crunchy on the outside, very puffy and with a lot of air pockets on the inside. I didn't mind using a second egg as my daughter makes homemade ice cream, so the yolks didn't go to waste. Excellent recipe.
You can also use them with a allulose monk fruit blend to make keto friendly caramel sauce

Just started keto three weeks ago. Made my first chaffle today. Whoever invented these is a freaking genius.
After watching your video, I was looking for a snack in the fridge and saw sliced onions (leftover from burgers on the weekend) when an idea hit me! Chaffle onion rings! Except, I used diced, dehydrated onions. Made your recipe for crispy chaffles, added about one tablespoon diced onions (I don't know if freshly diced will work, didn't try it), about 1/4 teaspoon Cayenne (or paprika), about 1/4 teaspoon salt. It made 4 chaffles (2 tablespoon per chaffle. Maybe three chaffles if you used 3 T batter per chaffle). I placed the "batter" in the middle of the chaffle maker and pressed down hard and cooked for 4.5 mins. They were sticking a little to the chaffle maker, but popped right out. May not be EXACTLY like an onion ring, but sure was good! 😋
I swapped out the xanthan gum for psyllium husk and really liked the way they came out. I've been gluten free for 8 years and have found that if you let a mixture with psyllium husk in it sit for a few minutes it works better than xanthan gum in recipes where lift isn't a huge factor. Psyllium husk also provides some bonus fiber!

Just made this recipe as my very first chaffles. I used an old square waffle maker that makes 4 waffles. The benefit of this recipe with the xanthan gum is that it is stiff enough "batter" that it can be formed into a small disc shape before you put it on the waffle maker. This allowed me to use my square waffle maker to make the round chaffle. I was actually surprised and pleased with how well they came out. I'm not keto but am watching my carbs intake so this was fun and I like the taste and texture. My first use was to top one with cream cheese, smoked salmon and a fried egg. Excellent. I'm going to use two more for my burger bun tonight. Thanks.
the light on the top of the Dash mini waffle maker is just an indicator that it is heating up, once its at the highest temp the light goes out, when the temp goes back down the light comes on again it is not a timer and does not let you know that its done. the best way to know that it is done is when it stops steaming.

You might want to try a couple of batches of chaffles using finely-shredded mozzarella cheese instead of the "regular" cut. It makes for a more uniform "batter", and allows better coverage when spreading on the griddle.

Being gluten free meant I hadn't eaten Cheezits for like 10+ years now. Playing around with chaffles has been fun but it also has made it possible for me to enjoy 'cheezit' flavor in a chaffle! Here's recipe that works for me - 1 cupFUL of shredded (sharp) cheedar cheese + 2 teas. almond flour + 1/2 teas. garlic powder (OR 1 teas. garlic salt) + 1/2 teas. xanthan gum + 1/4 teas. salt (OMIT if garlic salt used) + 2 medium eggs. I prefer to mix with a hand blender to make a nice dough. I cook 6 minutes for lovely crisp and crunch when cooled. ENJOY!

I made a chaffle recipe a while back that was nothing but whole eggs and cheese and I truly wondered what all the chaffle hoopla was about because I thought they were floppy, eggy, and frankly kind of gross (and I love eggs)! Anyway, I gave your new recipe a spin and I felt as giddy when I pulled that crunchy little thing out of the Dash and took a bite as I did a few years ago when I realized there was such a thing as a delicious keto muffin. I cannot WAIT to see how many different ways I can use these things! I use egg whites in a carton from Sprouts. I also use one tablespoon of psyllium husk instead of almond flour. The result is a nice crunchy truffle.

Xanthum Gum dissolves in a fat source. So mixing it with a bit of oil or butter, etc will stop it from clumping in your mixture. Also, if you want airy bread, try whipping the egg whites first and folding them in

Hi from Florida. I am one of your newer subscribers and just made your chaffles. These are very addictive and I love them. I added a tiny bit extra egg white so it spreads just a little easier. I also added some nutritional yeast to give it that cheesy flavor and lastly I added the everything bagel seasoning. Oh, so good with my bacon and egg breakfast. It is hard to eat one. So I ate 1 1/2. Which left me with 1 1/2 for tomorrow's breakfast. Thanks for testing this out. It is a game changer and you 2 are also very good together love your videos very enjoyable to watch.

A recent Chaffle Hack I came up with? (There are no original ideas….) Anyway: zap all your dry ingredients in a mini prep or nutribullet and then add the wet to finish mixing. It makes a much smoother batter and a more uniform “bread”!

Love the yolk free version. I used psyllium husk (not powder) - 4 tsp to replace the 2 T almond flour and it worked very well. Then I added some diced pepperoni and wow. Hubby devoured them. Dogs got the yolks. Everyone's happy! Thank you.
I added a tablespoon of Everything Bagel seasoning and a 1/4 tsp of Real Butter & Sea Salt Popcorn seasoning. It elevated my chaffles to a whole new level. Ate them with cream cheese and it was glorious!

I’ve tried different cheeses. All of them work. I’ve added buckwheat flour and it makes it the texture of bread without gluten. I’ve also added herbs and spices. Very versatile.

I rarely use almond flour anymore. Coconut flour is less "filing" (aka calorie dense), so you'll feel less "full" after eating. I just had a crispy bacon, ham & cheese sandwich on my chaffles for lunch.👌
Coconut flour absorbs a lot more liquid. How do you tweak the recipe for that?
Coconut flour produces a higher insulin spike/response than almond flour if youre on keto.

I ran out of almond flour going to make my own but I used coconut flour and wow this is so much better. No need for xantham gum. Soaks up the moisture nicely. For now on I’ll be doing this.

We have been craving cheese and baguettes for so long since going keto! Not sure if it's been done but took your chaffle recipe, added a touch of baking powder and made them in a mini griddle flipping halfway. When done, I brushed with olive oil and topped with flaky salt then served with an assortment of cheeses. Oh my goodness!!!! We had friends over for dinner, I was serving Caesar salad with the meal, I made your new Chaffel recipe with the addition of garlic salt, once cooked and crispy, I cut into small cubes and used for the croutons in the salad, ourselves and our guests loved them! ❤️

I use Lupini flour instead of Almond flour for your basic recipe. It's lower carb, and is a good 1:1 substitute. I also use aged goat cheese (more like a sharp cheddar than the soft spreadable) since my wife is lactose intolerant. It really makes a great sandwich bread, or I can add italian seasoning, pepperoni and tomato paste and eat 'pizza'.

I loved this recipe just as it is, but for some reason i split it into 4 chafles 🤷♀️ but they still turned out DELICIOUS! I put herb and garlic cream cheese on them and mmm i have no reason to miss bagels anymore ❤
I made my first chaffles this morning. I didn't have mozzarella available so I used a Mexican cheese blend. Didn't search for the actual recipe so I kind of went from memory, and it made 2. A little bit more almond flour than your original and a little less cheese. But I made two lovely chaffles that were a great base for my over easy eggs, and allowed me to sop up the drippy yolk. I obviously don't have a problem with things being eggy.
I left the whole egg in but did use the xantham gum, no eggy taste! I added everything but the bagel seasoning. Delicious! Thank you so much!!!!

Hi Keto Twins! Love you both, and both your YT channels and website. I use a bunch of your recipes and I've been using LMNT for a couple of months based on your testimonial. I use a bunch of your tips and tricks, too, and I just adapted one to create a new hack for production. I got those 4" parchment rounds and the nice canisters to store my chaffles, and I saw you struggling to spread your chaffle batter evenly, so I put two ideas together. I divide up my batter into 2 ounce soufflé cups like one might use for jello shots (so I've heard!). I put the parchment rounds on a small plate and squeeze a cup of batter onto the parchment, put another on top and use a second small plate to press down evenly, making perfectly round even batter discs which load perfectly onto my Dash makers. I use three of the Dash makers side by side as I usually make 9-12 at a time, and the parchment rounds peel off just fine and I can reuse them later to space the chaffles in my canisters. Works like a charm and I have thin crispy chaffles that are nice looking too! Thanks for all the great ideas!! Keep them coming, ladies!! 🥰🥰🥰

Something I did to make the dough easier to handle was I used a pastry cutter when it was just cheese and dry ingredients (before the zanthan gum) and cut the pieces up more uniformly,
Then added the ZG and egg white and it mixed beautifully and was also really easy to form into a thin patty before placing it in the waffle maker.

@@DebbieHofstra I just look at older photos and think about how I felt back then. It becomes a way of life really. Eventually I just never gave it another thought and continued on. I had so many people say it wasn't sustainable long term. I strayed a few times for a day or a meal but the effects that happened from doing that made me revert back very quickly. It's much easier now than it was back then. So many great creators and recipes now.
Several years ago I made some chaffles but they didn't turn out so good. However, following your instructions, they turned out perfect. Instead of xanthan gum, which I didn't have, I used psyllium husk powder. I read that when using the psyllium husk to double the amount used when substituting for xanthan gum. Also, on the xanthan gum recipe I used the whole egg. I don't mind the egginess. I also did use the baking powder. Both recipes turned out awesome. I think I like the second one a little better but it was really close. I was recently diagnosed with Diabetes T2 so I am really committed to the keto lifestyle. Thanks for these recipes, am looking forward to trying differrent ways to use the chaffles.

Omg my chaffles turned out perfectly. I followed the basic recipe....1 cup of m. Cheese, 1 egg, 1/4 top of baking soda and 2 tbsps of almond flour. I didn't find an egg taste, just a cheesy taste. 1/4 cup on a preheated waffle maker sprayed with avacado oil...perfection. You have saved me!! Thank you so much for the chaffle recipe. Awesome recipe!! I use this every day now. Love it! I modded it slightly for 2 chaffles and powdered eggs. I use 70g mozzarella, 1/4 tsp xanthan gum, 1 tbsp almond flour, 1 tbsp whole egg powder, 1/2 tbsp egg white powder, 3 tbsp water. I use one of those 20 dollar ninja express choppers to process the dry ingredients first, add the water and process some more. Then just divy out the batter in 2 onto the waffle maker. Did I say I love it. SOOO good. I'm trying different mozzarellas at the moment to mix is up. Currently on the Galbani block from Walmart. Shred a block every few days. It's a little salty, but awesome. Thanks so much, this is amazing and totally kills any bread nostalgia. I've used it for burgers, sandwiches and bacon n eggs. It's the best!

Omgsh just tried this with the new specs, but I did add the 1/4 tsp of baking powder and shredded cheddar…WOOOW AMAZING!!!! I wish there was a maker with multiple slots. Obtw, way the yolks can be used for hollandaise sauce and if you keep them as in the original recipe, they still come out super crispy, um, maybe even a bit more I thought, so if you are looking to reduce the calories, I would say leave them out, but you can certainly keep them in. I think I will need a chaffle support group...

I finally bought a 4 well dash waffle maker. Correction: Chaffle Maker. I have watched several of your videos, but I don’t always leave a ‘like’ because I fall asleep watching tv. Ha!
Anyway, you asked if anyone knew how to make them thinner. So, I used my nutribullet. I put the egg in first because I have learned to put a liquid on the bottom so the dry ingredients mix in better.
So, egg, shredded cheese, Xantham Gum, and Almond Flour.
Mix in short bursts and shake to keep stuff in play. Finished stirring with a thin spatula because it was very thick. Then added 1T water so I could mix it up.
Since the cheese was in smaller pieces, it was easy to spread in the waffle wells. I don’t know how to add a picture to comments.
My first chaffles turned out crisp and thin and delicious. Thank-you, again!

I like your first chaffle recipe with 1 C Mozz, 1 teaspoon baking powder and 1 egg ( it doesn't taste eggy to me at all) but I add 1 teaspoon pysillium husk powder. because I am trying to stay away from the almonds till the eight comes off. I have tried all the variations of the chaffles and like them all, however I am not a lover of the coconut flour chaffles. But to each his own. I appreciate your experiments and sharing it all helps so much esp. when looking for a variety. I understand that if you have an egg allergy then it is because of the white and ( also can taste more eggy some say the yolk accounts for the eggy taste ) and sometimes using duck eggs or an organic higher grade or brand of egg gets rid of this. My son has problems with eggs and he agrees it is the whites of the eggs. Someone might have a different thought on this. Love ya both Thanks Bunches

I just made the chaffles with the xanthan gum! Delicious!!!! Kind of like a cracker they are so crispy. I don’t know if I did something wrong but I got 4 chaffles out of the recipe. These are my new fav! Thank you for all of your content! You are inspiring me to get my life back on track!!!!

I love your chaffle recipe and make it at least once a week. I saw a pesto chaffle recipe on Reddit, but I thought I’d try to add pesto to your recipe. I reduced the mozzarella to 100 grams, used 10 grams of almond flour, 5 grams of coconut flour, 1/2 teaspoon xanthan gum, 1 egg white and 2 tablespoons of pesto (avoiding the oil as much as possible). I put my Dash on a plate to catch the extra oil from the pesto.
They were delicious! Feel free to play around and make pesto chaffles even better. Sorry about the weights but I was a lifelong baker before keto.

HOLY GUACAMOLE!!! I just made these, but only had shredded cheddar. And I added everything bagel seasoning. Talk about cheeze-its flavor!!! And the crispy crunch is SO GOOD! OMG! I made this today and it was so crispy and good! It tasted like bread!! Didn't taste like cheese at all! This is a keeper. I have a regular sized round waffle maker and it only made a scant 1 large waffle. Next time I will 2 1/2 times the recipe to make 2 large waffles for me and my husband. Hmmm.... ideas are coming. Maybe I can make a pizza on this? Maybe add a little more moisture. Thank you for this recipe!

I just received my Dash Waffle maker today and I have made my first chaffles. OMG, it is amazing. I used low moisture moz and extra sharp cheddar because I didn’t have enough moz for a full cup. Kept a full egg
Wow!! Better than bread!!
Next time , want to try 2 egg whites instead and keep the yolks for morning time dipping!
