Trish to answer your question at 26:05 vegetable oils are “bad” because they cause inflammation in the body. They are extremely high in omega-6 fatty acids (which the American diet is already too high in) which throws off the body’s omega 3:6 ratio thus causing inflammation, anxiety, and other health problems. Additionally, cooking certain foods at extremely high temperatures (such as frying) causes a Maillard chemical reaction and the formation of acrylamide. Acrylamide is a known carcinogen. This doesn’t mean you should avoid oils at all cost and never enjoy your favorite foods, just try to enjoy in moderation and incorporate high omega-3 foods daily, like salmon, leafy greens, and flaxseeds 🤗❤️
Yes!.. I never use vegetable oil for deep frying. I use mild olive oil. You can deep fry with the milder one. Cant go wrong with Olive Oil, compared to other oils. Or use lard.
Trisha! You used too much pasta! Use half that box next time. Also when making cheese sauce follow recipe. 2/2/2/2 , 2 tablespoons butter, 2 tablespoons flour, 2 cups milk ,2 cups cheese. Follow exactly For great sauce. Use sharp cheddar if you like instead of regular cheddar.
always let the butter melt before adding the flour and always do equal parts flour to butter. so 50g of butter means you do 50g of flour, then you add the milk in slowly constantly whisking so get the sauce very smooth and can always add more milk as you go! hope this helps🤍
Tips for this recipe : When making the cheese sauce, it's important to follow recipe exactly. Don't throw in extra flour or butter. I believe Trisha used too much pasta, so there's not a lot of sauce. I'd go with maybe half as much pasta. Or double the sauce recipe. Instead of making into balls, just line pan with saran wrap, put in mac and cheese, stick in freezer. Instead of forming balls just remove the mac and cheese from pan using the saran wrap, then cut into squares the size you want, proceed with the breading and instructions for the recipe. It's just squares instead of balls. Canola oil is healthier to fry with than vegetable oil.
Yes, I tried commenting this on another recipe but she always used a whole box of pasta & then says there isn’t enough sauce but it’s because the recipe probably didn’t use a whole box of pasta🤷🏼♀️ she will get it one day!
@14:32 The AirFryer!?? It's a DeepFryer 😂. . . It came out good however, you're NOT measuring correctly. I believe that's why they're a bit dry and NOT all the way gooey. Also, the butter already have measurements on the side or inside, you don't need your measuring spoons.

There is a place up here in Canada that does something called crispy mashed potatoes.... they wrap mashed potatoes in a spring roll wrapper, then fry them. YOU MUST TRY!
What you did in the beginning is called a roux. You only up the size if you're making a bigger batch. A roux is always supposed to be equal parts fat (butter) and equal parts flour...also you shouldn't rinse your noodles. The startch on there is what makes the sauce stick and when you rinse it, you rinse off the startch. Saying this with love.
Wait, when Moses found a huge shard of plastic in his mashed potato’s , they didn’t offer the meal free ??? 😂 I don’t blame you for not going there anymore. That’s sooooo dangerous! Imagine that was a little kid.
Trisha one trick is make the recipe one time the way they say follow step by step then when u did it once then u change things or add more or less after u taste it if u think of your self as a chef then that’s what u need to do u less your coming up with something your self u can play around with more or less but trust me u haven’t been cooking long enough and you don’t have a very vast pallet yet keep practicing your getting better and keep learning the tips and tricks even the basics are important from cutting to stirring to mixing everything is important don’t give up
Your deep fryer is the bomb! So professional looking!! I truly love watching you cook. It's such a chilled out vibe. The mac n cheese balls look sooooo good!! 💛🧡
The butter and flour mixture is called a rue. Rue is used to thicken sauces, not to bind things together. To bind it together you would do that after it’s frozen by rolling in flour, then egg, then bread crumbs.
It’s nice you are using measuring spoons now if you could just use them correctly that would be cool, but looks neat and you are getting the hang of it but hey to each their own
omg I literally just made a huge batch of mac n cheese the other day and was going to make fried mac n cheese balls for dinner!! When making the sauce I add gochugaru pepper powder, onion powder, mustard powder, salt, all spice, black pepper, chipotle flakes, mirin, prepared yellow mustard, and potato starch instead of flour gives it's a smoother texture. Cook it all for 2-3 minutes add milk (1.5L - 2L), let it re-heat, add in cheese (500g - 700g) stir constantly until melted (this can take like 15 minutes). boil 500g of pasta noodles. and I make a topping with salted butter (1/2 cup) and panko crumbs (2 - 2.5 cups) by browning them in a pan then I bake the whole thing for 20 minutes at 450 in two 9x9 pans
This is also pretty much my spice mix for fried chicken breading except I add sugar instead of mirin and add extra paprika and garlic powder, potato starch is the best and its crispy af when fried. and for the egg wash I add lousiana hot sauce
If you want a sauce that oozes out, try using less roux. When I make chicken croquettes, my ratio is 3 T flour 3 T butter to 1 cup liquid. Since you’re using cheese which will thicken up the sauce you can try a ratio of 2-2 1/2 T butter and flour per cup of milk and they were turn out less dry. I make Japanese croquettes with potatoes, cooked ground beef ( you can sub ground turkey too), and sautéed onions, carrots, and cabbage, all finely chopped. Super easy to make. You use a sauce called “tonkatsu sauce”, but if you can’t find it, mixing ketchup and Worcestershire sauce together works in a pinch, which you drizzle after the croquettes are done.
I’m telling you try the air fryer… in my opinion it’s just as crispy, waaay less messy!! I didn’t believe it either & now use it for everything!! Especially French fries, they always taste freezer burnt in the oven but the air fryer it’s like a restaurant!!
Trish! You should start trying like a bread crumb/baked zucchini sticks or like bread crumb crusted/baked veggies like carrot sticks, and try little ways to incorporate veggies for when baby gets older!! Makes it fun and fresh for everyone at home! I’ve always wanted to try but LOVE your cooking videos
You really have come so far with your cooking skills!! And your probably saving alot in take out and delivery .. but my advice is use less pasta or double the sauce. I notice you comment often about lack of sauce but thats why too much pasta for amount of sauce... just advice no judgement 🥰😘
My gram used to take leftover mashed potatoes, added an egg, parm chese, garlic salt, and Italian seasonings, roll them into a short finger shape and fry them. You'd LOVE them if you tried them! She called them something in Italian, but the closest recipes I've seen call them potato fritters.
