Hey Trish! Just a tip - when you are measuring dry ingredients (flour, corn starch, etc) you should be using 'Dry Measuring Cups'. This will allow you to level off the ingredient with a flat edge (knife).

    Tips for this recipe :
Use a microplane to grate ginger and garlic. Use half the amount of sugar called for in recipe. Use rice wine vinegar instead of white vinegar. Use less vineger than called for. Use half the amount of siracha. Separate the egg and use the yolk in the meat marinade. It tenderizes it. Marinate for 1 HR prior to cooking. Use egg white only for breading meat instead of whole egg, may need to use more than one egg. When adding cornstarch slurry to sauce turn up heat to medium/high and let cook for a full minute to enable sauce to thicken. B4 adding more slurry. Cook onions until they don't appear white anymore. Have meat dept cut up your beef into stir fry pieces(1/2 inch strips) for you. This can be a multi use sauce. You can sub shrimp for the beef. Or chicken. You could add any vegetables you wanted or even tofu. You could do just vegetables. You could also use this sauce to make ground chicken lettuce cups. Brown ground chicken. Make the sauce add the chicken and some water chestnuts and bean sprouts, done! Amazing lettuce cups.
Don't add garlic at end, add it to the sauce b4 you add the slurry. Don't be afraid to taste the sauce b4 adding it to pan. Tweak it b4 you add it to pan.

Hey Trish! Light soy sauce is typically good for general, all-purpose seasoning. Dark soy sauce is darker in color, a little thicker, and actually less salty than light soy sauce. The taste is also a little more sweet than light. Dark soy sauce is often used for seasoning soups and stews and will also add color to your dish, whereas light soy sauce will not. If Josh used dark soy sauce, that may be why his looked a little darker than yours! There are different scenarios and recipes where you would typically use one or the other! I always use dark soy sauce when I make Japchae (Korean glass noodles) to add color! 😊

I was surprised myself when Trisha said she was making beef. I remember at the start of her pregnancy she said she wasn’t into red meat as much that she really liked chicken. It could be lil baby bear making you not like the beef as much as you thought.
