Ever tried the freeze+defrost method? I stumbled across it somewhere here on YT and it's upped my tofu game massively. It makes all of the water inside the tofu expand into these little spears that cut holes through the block, then when you defrost and wring it out it gets way more spongey than a regular "press with a towel" method. Then make a wet marinade (any of those yeast blends, with some soy, water, and oil) and let it marinade over night. It actually soaks into the tofu, rather than just clinging to the sides. I love tofu, but it took me some years... We went nearly totally vegan (still had some meat in the freezer) at the beginning of the year and i came across your channel right now (iam german and there are some pretty good vegan german channels out there too). You are amazing, Frankie too, you give me so much inspriration to use ingredients i don't use very often (or at all) and it's so much fun to watch you preparing food, that is kind of a meditation, nearly as cooking myself even if i don't have the time to do it. Keep going!
You're incredible, man. You've brought so much flavour and joy into my cooking... as 10 year vegan who sometimes struggles feeling excited about eating, these videos are invaluable. Keep doing what you're doing!
And the fact your ethics are motivating the development of your craft is incredible. You are truly on the cutting edge, it's people like you that give me hope that one day we'll see the end of factory farming.
THANK YOU!!! I have become so basic since I have become vegan. I was once a great cook hosting many dinners to now not knowing how to cook for myself. I absolutely love my fur baby with all of my heart too!

I watched another video from someone else and I made cubed tofu in my air fryer. 😋 I found your video and I want to try it. I am trying to eat healthier and cut meat and dairy out. I've been juicing veggies and fruit for 6 months now. I've lost 31 lbs and my A1C went from a 14 to a 6.3 🙌 I'm happy to say I'm no longer on insulin or pills anymore. I want to know more about mushrooms and how to cook tofu different recipes plus now I want to learn about tempeh too. I was told soy products can cause kidney stones. I'm trying to eat better. I've had plenty of kidney stones and lots of other health issues. My new journey of juicing has been awesome for me. Now I want to try a more plant based foods. I'm excited like a kid trying new foods, new recipes, learning about different herbs, spices, fruit and veggies I have never eaten before. I'm glad I found your video. I will try your three tofu recipes. I will follow you and I will keep watching and learning from you. Thank you 😊
Found Derek a week or so through this video! Love it and looking forward to a deep dive and snagging the mushroom manifesto book! Suggested homemade "steak" seasoning that I used when making this delicious and easy trio of tofu: 2 Tablespoons kosher salt 2 Tablespoons black pepper 2 Tablespoons garlic powder 2 Tablespoons smoked paprika 1 Tablespoon onion powder 2 teaspoons dried rosemary 2 teaspoons dried herbes de provence (French mix of basic herbs)

Awesome! I would cut the tofu in slices before the seasoning, it makes the flavor go on more surface if you are not accustomed to the taste of tofu, it's a better introduction imo
Christmas Eve dinner was all plant based vegan did your tofu spice encrusted baked and fried in cast iron with roasted veg like brussel sprouts, your butternut fillets with Whistle Pig maple syrup drizzled on top , sweet potatoes cubed roasted with cumin etc spices and in a moment of inspiration covered cauliflower with vegan yogurt, nuch with smoked paprika etc and Franks hot sauce with some vegan yogurt mixed with nuch and Franks hot sauce to dip , I can only think of Miss America when I hear Franks hot sauce. Green beans, mashed potatoes too. I watch you and just let myself try. I always love eating it even as I’m working my way to better final product. I might be most inspired by the pace of patience you model as you create delicious plant based meals.
How wonderful to wake up to more inspiration for tofu from you! I’ve made all your rub/seasonings except the really spicy BBQ bc I’m a whimp, and have used the eggspired several times. Had planned to do something similar to what you showed with another one soon. I’m a lone vegan in a house of omnivores, retired nurse. Love getting inspiration for easy quick meals with as little prep as possible. Turning an old chicken farm into growing mushrooms is an amazing idea! I wish there was a bigger push here for that in the US. Mushrooms of those varieties can be hard to find where I live, but are available at certain health food type stores and are pretty pricey. I’ve seen them at a few odd places at times as well but do not seem to have caught on here….yet. Thank you Derek, for continued inspirations…from Nashville…..🙏🏻🫶🏻xx
I literally found your channel about an hour ago and have saved a few of your videos already. I'm pescatarian but I cook tofu a lot and it's always the same method of stir frying that i'm getting a bit bored of. This looks amazing - I'm going to try this out!
Thanks for the tofu ideas. I made some and in a taco with salad leaves it was really delicious! Plus so quick and easy. Very grateful for all your ideas, many thanks from New Zealand.
So many online recipes for tofu call for soy sauce which I don't want to use due to the sodium. Even the low salt variety is too much for my purposes. So I just wanted to thank you for these additional ideas on how to flavor and cook tofu. I usually make tofu or tempeh with Italian spices. I love the calm vibe of your videos. Thank you !
I ❤ that you tell Siri you hope she’s having a great day…it’s up there with apologizing to furniture when you bump into it. And of course-your conversations with Ms Frankie make me smile. And the recipes!!!! Super delicious!

You just did it again Derek. I used to be ‘never!’ on tofu. I have completely done an about face since your vid on the seasoned nooch coatings. Now I’ll definitely follow with batch cooking. Brilliant!!! 🙏
Update: I've been making this almost weekly + any time I need a protein and don't want think about it. Super, super delicious and easy to make! Works beautifully in the air fryer, too.
Personal goal is 95% whole food plant based eating. Thank you so much! I love your focus on flavor. As a bean lover, it still surprises me when I get a bit bored with them. Your videos have helped me add tofu (tempeh next I think) and a lot of flavorful variety to my daily munch.
This was very informative. I've always struggled with learning how to make tofu taste good, and this helped a lot. A note: if you take previously frozen firm tofu and defrost it, it's much easier to drain the water out without breaking it up, and the texture has much more "bite" to it once it's cooked. 😊
You should do a 100% Mushroom cook book!!! I have no doubt that you could fill a large tomb with your genius creations. There really is no good dedicated plant based Mushroom cook book out there.
We are on same page today. I literally have 4 blocks of tufu in the oven. I'm so busy in summer, I don't have time to fuss making dinner but I need something nutritious. Yours look super delish. I just used 4 different nutrish yeast combos you taught us. Looking forward to the docu!!
Thank you! I did see you cook tofu in a block in another video. I started doing this right away. I use a bit of tamari for wetness and managed to get my favored pepperoni spice mix to stick. It's superb and an improvement for time and mess. I couldn't believe I had never seen anyone doing this before. I could just cry when I saw you turning the chicken farm into a mushroom farm...thank you deeply and forever for this humane accomplishment.

Love these fast food ones especially as it helps to stay on track! Recuperating after surgery and when you're by yourself the last thing you want to do is cook! Thanks Derek!
I tried this. Seemed like a nice quick way to make tofu and it is. However, I think the taste benefits from increasing surface area by cubing or slicing would improve this a lot. Maybe I didn't use enough seasoning, but I found the inner part of the block to have no flavor at all. Will keep trying until I get a better result.

Great stuff Derek. My son put me on to you and I'm going to try some of your recipes. I love your engagement with your dog. He's one lucky pup
Derek, THANK YOU SO MUCH for all that you do everyday to assist us who want to eat healthier and "BE KIND". You have given me sooooo many ideas including using Tofu - something I had never tried. Yep, I got conned into believing the hormone thing was real. I appreciate the fact that you give us the road map which allows us to integrate our own creative tastebuds to the recipe. I'm having great fun experimenting and am grateful for then effort you invest to assist us in becoming more healthy and kind. Blessings upon you.🙏 Namaste 🕊
Again you make it look so easy. I’m looking forward to seeing your documentary on the mushroom farm. I’ve been hearing about it for awhile. And of course…. Ms Frankie ❤️
Everything is easy once familiar 😊
Your recipes are soooo awesome thanks for sharing
Hi my name is Molly. I don't know if you will read this, but I hope you do. I recently started watching you. I was looking for a recipe for tofu on UA-cam. I've never had it before. I had watched someone else first and made it. It was good but my family agreed it needed more flavor. I've reversed my diabetes! 🙏 I'm learning about vegan life, raw vegans and fruitarian. Lots of info and I'm overwhelmed. 😮 I like your videos and your dog Frankie.
Suggested homemade "steak" seasoning that I used when making this delicious and easy trio of tofu:
2 Tablespoons kosher salt
2 Tablespoons black pepper
2 Tablespoons garlic powder
2 Tablespoons smoked paprika
1 Tablespoon onion powder
2 teaspoons dried rosemary
2 teaspoons dried herbes de provence (French mix of basic herbs)
You are so inspiring to watch ❤I love watching your videos and I’m making a tofu block w that cooked spinach lemon and smashed garlic on top! NOW as I write you. Can’t wait to enjoy it ♥️with a shaved Brussels and cranberry salad!!! big hugs to Frankie too she’s beautiful, you both are outta this world, keep on your path Derek🌶️✨🥬✨
Thank you
Just bought my first tofu ever
Good choice! I love it, the more you learn the ways of tofu the better it gets
@@DerekSarnoChef you have amazing recipes, so Thankful 🙏💚
@@DerekSarnoChef i have learnt to enjoy it through you!!! It always seemed so specialist and time consuming before. THANKYOU!!
Awesome! I would cut the tofu in slices before the seasoning, it makes the flavor go on more surface if you are not accustomed to the taste of tofu, it's a better introduction imo
@@AnimationDunk Thank you 🙏
So on it - thank you for being such a willing teacher to help us master such healthy dishes 🙏🏻
Thanks for watching
Love love love that I’m learning so much about vegan cooking from you, especially the tofu and mushroom cooking techniques. Thank you!
I literally found your channel about an hour ago and have saved a few of your videos already. I'm pescatarian but I cook tofu a lot and it's always the same method of stir frying that i'm getting a bit bored of. This looks amazing - I'm going to try this out!
You never fail to deliver something inspiring. Your love for Miss Frankie is just adorable 💚🌱
Thanks for the tofu ideas. I made some and in a taco with salad leaves it was really delicious! Plus so quick and easy. Very grateful for all your ideas, many thanks from New Zealand.
Thank you for putting the recipe in the description as well. Makes it so much easier to reference after viewing the video 👍
Thank you !
Thank you so much for sharing these wonderful recipes with us and for encouraging us to eat a healthier diet. Your efforts are greatly appreciated.
Here is a vegan from Brazil who loves your great recipes Thanks for sharing😊
I ❤ that you tell Siri you hope she’s having a great day…it’s up there with apologizing to furniture when you bump into it.
And of course-your conversations with Ms Frankie make me smile.
And the recipes!!!! Super delicious!
The Mushrrom film!!!❤❤❤❤ the tofu too... dang!
I followed your lead and prepared a block of tofu with an improvised Indian/masala blend. Fabulous! This base recipe will certainly be a staple in our Toronto home. Thank you for sharing your gifts with the world, Derek! 🔪🍄🟫🌿♥️
You just did it again Derek. I used to be ‘never!’ on tofu. I have completely done an about face since your vid on the seasoned nooch coatings. Now I’ll definitely follow with batch cooking. Brilliant!!! 🙏
Thanks for watching
This is the FUTURE!!!
I tried this and it’s a game changer!! Such a delicious and easy source of plant-based protein for the week
Update: I've been making this almost weekly + any time I need a protein and don't want think about it. Super, super delicious and easy to make! Works beautifully in the air fryer, too.
Your food just looks AMAZING! I love Frankie and I also love how you keep your cutting board so clean and tidy! Thanks for sharing!
Thanks for watching.
You are incredibly entertaining...love everything you do!!! ❤❤❤
Your channel is by far the best I've watched! ❤
Love this idea!
Totally agree! I'm waiting for the day🤞
We are on same page today. I literally have 4 blocks of tufu in the oven. I'm so busy in summer, I don't have time to fuss making dinner but I need something nutritious. Yours look super delish. I just used 4 different nutrish yeast combos you taught us. Looking forward to the docu!!
So happy to have found your channel❤ can't wait try some many of your recipes!
Thanks so much, Derek 💜
I really admire people who are conscientious about food and trying to reduce animal suffering. Despite what so many think we can eat really, really well. Thanks Derek, you just earned yourself another subscriber, glad I found you.
Yummmmy love it 💃great ideas
Thank you for being so kind and sharing your recipes. These look like something I can do!!!
I am so excited to try these 3 recipes. I have made some (not all) of your nutritional yeast blends and LOVE them. I have been on your tofu, tomato and onion sandwich kick ever since you posted it. Now i have 3 more to enjoy!!! Thank you for creating your fab recipes!!😊
I used to hate tofu when I was a kid and have avoided it, but you convinced me to give it a try. I’ll be baking more tofu!! It was great! Thank you!
What a great make ahead idea! Exactly what I need for busy days. ❤ 😋 Can't wait for mushroom documentary! Love to that Frankie girl ❣
Hi! I just love the way you are, making good videos, and the way you explain the way with tofu. I'm not full vegan, but love the tofu, and today , my tofu is so different because of your recipe's. Thank you. from Montreal Canada
All 3 tofu recipes look amazing, thank you Derek! I'm very much looking forward to watching and sharing the mushroom growing video. Hugs and kisses to beautiful Frankie❤
Derek, that was invaluable. I am still not doing enough of the basics right and this kind of "meal/ingredient prep" for busy days is perfect for me. Thank you. Please give Her Ladyship's ears a little stroke from me.
Glad it was helpful!
Love these fast food ones especially as it helps to stay on track! Recuperating after surgery and when you're by yourself the last thing you want to do is cook! Thanks Derek!
Thanks for watching. This is one for the regularly made list - super easy.
@@DerekSarnoChef Definitely!
Thank you for all if your recipes and videos. Thank you for making the documentary and all you do for animals. ❤🐾🐓🐄🐖
Thank you for this. I'm new to mostly plant-based for us. Tofu perfection eludes me. You rock! Appreciate your time and wisdom.
Can’t wait for the documentary! I love love love mushrooms and would love to know how to grow them at home too! These tofu ideas come at the perfect time. Thank you wonderful man. 🎉
oh you gotta try growing the kits, you can find them online.
@@DerekSarnoChef wow you saw that. Thank you for the advice. I will go down that rabbit hole and give them a try. Love your content ! What you say often just touches my heart. Thanks for that and Frankie. 😘🌹
Thank you for the mushroom ideas / recipes.
That looks fantastic and serving suggestions look so yummy. I’m excited about your mushroom movie.
Thank you for your videos. Love it.
Never would have thought of using the yogurt! And I think you're correct, I don't season enough. Thanks for all of your wonderful videos for the help. And Frankie ❤ Looking forward to the doc too.
So glad you’re sharing this. I need flavor and texture in my food and you’re generously providing the ways and means to the masses. Thank you 🙏
this is a super easy one to be a regular, so many uses once done
Just wandered into your channel, and I am thoroughly enjoying. Thank you for sharing your life, beliefs, knowledge and recipes. Thrilled you used corn tortillas for your tacos. YUM.
Awesome recipes. Love tofu. Hi Frankie!
Love that you are a tofu guy. I've always been a lover of tofu, even when tofu became a no-no. Thank you for loving animals and thus coming up with so many wonderful-sounding, easy to do recipes. Perfect man??
I’ve never thought about using the vegan Greek yogurt like this.
Been cook in our for decades and I learn something amazing and new from watching your cooking every time!
I love this
I am a long time Tofu Fan! No tofu fear here and I eat tofu 1-2 x weekly and I am super grateful for your help with new recipes wooohooo🎉 I baked a whole block the other day and made some vegan mushroom gravy yum. And I’m gonna try these!!! ❤ your channel
I love that you love Frankie unabashedly!!! I have my Zoe whom I adore... They ask so little of us 😔
Love your channel, thank you so much for inspiration!
Derek, I never leave comments but I have recently discovered your videos and love your demeanour (and recipes -- making your fast tofu burger again for dinner tonight). Picking up your book from the library today.
These fast recipes are great. I always slice the tofu into big cubes or tear it into chunks, but leaving it whole is even faster! All the best.
Thanks for watching
You're so right! It doesn't seem possible to over season tofu. Can't wait to try out these recipes this weekend.
haha i'm sure someone will figure out a way. But i love the flavor boosters
Wow, the vegan mayo and liberal spices coating is a game changer! This is now going to be permanent in my roster. You’re incredible, Derek, truly. I’m so very glad to have stumbled across your channel however long ago it was now. Your authenticity and genuine compassion is truly inspiring. And Frankie is of course adorable! Be well, team Sarno, much love from Australia!👋🇦🇺🐶❤️
I've been growing pink oyster mushrooms in my kitchen from starter kits and your videos have been an amazing inspiration
Oh the egg spired is a great idea!!!❤ thank you!
Thanks for this channel, Derek. It’s such a little hit of positivity in this weird world. I love this simple idea for tofu, and I’m so so excited about your mushroom venture because fungi are endlessly fascinating as well as delicious.
Ive been buying all of these mushrooms from a local grower and making the stuff in your videos for a few years now. Its amazing! I send local people his way and he always hooks it up when I see him to get mushrooms. Keep up the good work man!
Made this over the weekend it blew my mind Thank you Derek
Thank you for these great ways of preparing Tofu! ❤️ Love your channel! I am learning to eat whole food plant-based and you are an inspiration.
🐉If you build it; they will come (a lline from one of my favourite films). So many profound lines; which I’m certain, you too, probably loved. So… I saw your latest post. Breathe. Deeply. Off-ramping, in an old volks van, can often be unscheduled and very necessary; no matter how many colour coded sticky notes; that we deeply rely on and leave EVERYWHERE (like breadcrumbs trails) what we think is for ourselves; but for greater means. My point: your followers will ALWAYS come. ALWAYS. Despite your plans. Life consistently reminds us, right ? Your compassion mirrors and generates this daily.
Btw. your black salt recc’ed is insanely nour! Breakfast remains new and different. Especially with tofu and bbq sauce (another loved discovery from you) ! Thank you, for curating my taste buds, for life, Chef D and your majestic wonder, Miss Francesca. 💕
To anyone who doesn't want to deal with the yogurt or oil, I just sliced up a block and dashed some of the beast on them on the baking sheet, and it was plenty tasty!
Love watching your videos! What a great idea to make the blocks ahead of time. And love your mouthwatering mushroom recipes.
Thank you, I just found your channel. So love it and mushrooms can be amazing
I noticed alot of recipe influencers dont care for pressing tofu, but honestly freezing/defrosting the tofu, which helps get all the water out, makes a world of a difference for me when it comes to texture and the tofu actually getting marinated.
Otherwise it just feels like only the outside is getting flavored
@@boredguy5805 - plus you can just store tofu in the freezer. There it is, ready and waiting
@@Melissa-pb6wv Yes my tofu goes straight into the freezer from the grocery store
Thanks for the input. I will have to try this. I have a huge tofu fan, but never tried freezing it and defrost it before.
I make this most weeks! Super simple, thank you for sharing 😊
