    Roasted Butternut Squash Fillets
    Ingredients:
    • 1 whole butternut squash
    • Vegan butter
    • Salt & pepper
    Instructions:
    1. Preheat oven to 185°C (350°F). Roast whole butternut squash until soft (about 40 mins).
    2. Peel, remove seeds, and slice into fillets. Use a ring mold if desired.
    3. Heat a cast iron pan with vegan butter, sear fillets until golden on each side.
    4. Finish in the oven at 200°C (400°F) for 10-15 minutes.
    Roasted Butternut Squash Seeds
    Ingredients:
    • Squash seeds
    • Salt & black pepper
    • 2 tsp maple syrup
    • Pinch of cayenne pepper
    Instructions:
    1. Clean and dry the seeds.
    2. Mix with salt, pepper, maple syrup, and cayenne.
    3. Spread on a baking sheet and roast at 200°C (400°F) for 10-15 minutes until crispy.
    Butternut Squash & Kale Puff Pastry
    Ingredients:
    • 200g kale (pre-chopped)
    • 1 cup roasted butternut squash (scraps)
    • 1 sheet vegan puff pastry
    • 1 block extra firm tofu (sliced)
    • 2 tsp olive oil
    • Sage & onion seasoning (see below)
    • Salt & black pepper
    Instructions:
    1. Steam kale, mix with roasted butternut squash, salt, pepper, and sage/onion seasoning.
    2. Spread the mixture onto puff pastry. Add seasoned tofu slices on top.
    3. Bake at 200°C (400°F) for 20-30 minutes until golden.
    Sage & Onion Seasoning Blend
    Ingredients:
    • 1 Tablespoon Ground coriander seeds
    13g sage, small container full
    • 1/2 granulated onion
    • 1/2 granulated garlic
    • Pinch of smoked paprika
    • Pinches of black & white pepper
    • equal nutritional yeast to the rest of the spices
    • 1 tsp cornstarch
    Instructions:
    1. Mix all ingredients together in a bowl and whisk until well combined.
    Butternut Squash Tenderloin
    Ingredients:
    • 1 whole butternut squash
    • Vegan butter
    • Salt & pepper
    • Sage & onion seasoning Instructions:
    1. Preheat oven to 185°C (350°F). Roast whole butternut squash until soft (about 40 mins).
    2. Peel and slice: After roasting, peel the squash and cut it in half. Remove the seeds and cut the squash into "tenderloin" shapes or thick slices.
    3. Sear the tenderloin: Heat a cast iron pan with vegan butter. Sear each side of the butternut tenderloin until golden brown.
    4. Finish in the oven: Transfer to the oven and bake at 200°C (400°F) for 10-15 minutes until tender.
    5. Serve: Serve with a drizzle of vegan butter or gravy and sprinkle with the sage & onion seasoning, if desired.

    My Mom would roast a bunch of sweet potatoes and put a couple in the fridge for breakfast the next day. She’d peel the and slice then down the sides and fry them up in a cast iron skillet with butter so they got crispy brown all around and were nice and soft and sweet inside. Oh what a childhood memory.

    Not many things have I seen you make that I would not try. This will be our 2nd year (at 61 & 62 years old!) being vegan and frankly the holidays were a disaster last year! Cooking & baking has always been a creative outlet for me but last year was hard on my ego - haha! This year will be so much better with your amazing options! Thanks!!!

    In the US, Pepperidge Farm makes a puff pastry without milk products. It comes in packs of two. Those of us who keep kosher call its status as
    "Parve." (No meat products, no milk products).

    Hi Derek, I’m new to your channel but really really enjoying it. And when I came upon this video today, I was so thankful. My mom passed away on September 1, and she loved to roast butternut squash so I plan on making some of these recipes to enjoy, as I know she would have as well. Thank you and Frankie so much.❤️

    For thanksgiving I roasted them skin on and drizzled with avocado oil, chili powder, cumin, cinnamon, salt n pepper. Roasted pecans in my cast iron with butter, cinnamon, maple syrup, cayenne, salt. Made a spring salad with dried cranberries, chunks of tart apple, and added the butternut squash and pecans and a huge handful of roasted soy nuts.. and a maple Dijon dressing with apple cider vinegar and olive oil. I will make this a lot now. You’ve inspired so so much. Colors and texture of veg and fruit are just so wonderful.

    I made this tonight along with mixing a pint container of the spice recipe and topped it with a butternut gravy I made from scratch using the same spices. Wow! It is delicious. Thanks for this way of preparing the squash and the spice blend. Superlative! Love it!

    Thank youuuuuu ❤ just made theeeeee best squash seeds e-v-e-r!!! Not sure if this is faster, but use warmest water through the tap spray to dislodge strings from seeds. Followed Derek and Frankies method of prepping seeds for oven. Personally love subtle heat so used a premix of Caribbean jerk seasoning ( all spice, garlic, brown sugar, chipolte powder, clove, thyme, black pepper, cayenne, salt, cinnamon) OH MY LANTA my taste buds are sooooo happy 😊. Took the "scraps" and cast iron seared them (as shown) and convection aired to finish. Didn't last long enough to season differently. Used a 6" boning/filet knife to remove skin....chefs 💋....so easy. Thank you again. Cooking baking makes me light and airy. Too much darkness these days and I refuse to give in! Derek and Frankie (my rescue Ruby dog gives high five paw) are arsenol in the tool box of living la vida loco life!!! Cheers!!!

    Amazing!! A few things....people actually have the audacity to make suggestions re water and your cooking???!!! Really???!!! I am stunned!! BUT...I am making these dishes...thank you so much for the delicious butternut squash recipes and techniques!!! Wow!!! The cleaning as one goes however eludes me...sigh...the kitchen looks like a bomb went off when I am done.. and I have made almost all of your seasoning mixes and use them all the time!!! Sorry about the long dissertation here but thx for all you do and of course Frankie!!!

    I don’t know if anybody else has mentioned this to you. But when you start talking to Siri to set the time, my iPad pauses UA-cam and it asks me who is Darling (because they’re not finding anyone by that name in my phonebook). And also wants to know how long I want to set the timer for. Of course, I find it highly entertaining.
    I have two Thanksgiving dinners to attend, and I will be bringing butternut squash in one of the Rieck recipes that you’ve mentioned to each of those. I’m really enjoying your approach of showing us how to do things rather than following just a recipe. It’s strengthen my willingness to create something new. As always, lots of hugs to Frankie.

    Awesome! I used your method last week and still have some squash prepped out. I did the filet browned in butter and topped with a chilli oil pecan topping with panko tofu and broccoli. So good. The prep always made butternut squash an “event”, and it's nice to just have the eating of it be the event.

    I found that Pepperidge farms make vegan puff pastry in the states, but the ingredients are a little off, so I learned how to make my own with Violife vegan butter, and it turns out fabulous every time.
    I'm looking forward to making your butternut squash tofu puff pastry recipe for friends and family this holiday season.
