RECIPE:
The BEST Tempeh Potato Pancake
Ingredients:
• 200g block of tempeh
• 3 medium-sized potatoes
• 1 leek, thinly sliced
• Smoked paprika (approx. ½ tsp)
• Granulated garlic (approx. ¾ tsp)
• Rubbed sage (approx. 1 tsp)
• Granulated onion (approx. ¾ tsp)
• Cornstarch (approx. 1½ tsp)
• Black pepper (approx. 1 tsp)
• Flake salt (to taste)
• Olive oil or plant-based oil for cooking
Instructions:
1. Grate the tempeh and potatoes and place them in a mixing bowl.
2. Add the thinly sliced leek to the bowl.
3. Season with smoked paprika, granulated garlic, rubbed sage, granulated onion, cornstarch, black pepper, and flake salt.
4. Mix the ingredients thoroughly until combined.
5. Heat a skillet over medium heat and coat with a little oil. Press the mixture into the skillet, crimping the edges and sear on both sides for a few minutes each side.
6. Cook on low-medium heat until golden brown. Transfer to a preheated oven at 200°C (400°F) and bake for 10-15 minutes, remove, flip and cook an additional 10 minutes.
7. Serve topped with vegan yogurt or any preferred topping.
Tofu Breakfast Sandwich
Ingredients:
• 400g block of firm tofu, sliced into thick slabs
• EggSpired Nooch seasoning (recipe video linked above)
• 4 English muffins, split
• Plant-based butter
• Optional: vegan cheese slices, hot sauce, sriracha, vegan mayonnaise, or mustard - whatever you like
Instructions:
1. Heat a skillet over medium heat. Sear the tofu on both sides then Season the tofu on both sides.
2. Cook the tofu until golden.
3. Grill the split English muffins with plant-based butter until golden and toasted.
4. Assemble the sandwich by adding tofu to the muffin and layering with your choice of inclusions
5. Place the sandwiches back in the oven for a few minutes to melt the cheese. Serve hot.
Garlic Chili Kale
Ingredients:
• A bunch of Dino Kale stems removed and roughly chopped
• 2 cloves of garlic, finely chopped
• 1 Birds Eye chili pepper, thinly sliced
• Salt and black pepper (to taste)
• Olive oil for cooking
• Boiling water for wilting the kale
Instructions:
1. Place the chopped kale in a bowl and pour boiling water over it to quickly wilt. Drain immediately.
2. Heat a cast iron pan over medium-high heat. Add olive oil and a pinch of salt.
3. Add the wilted kale, garlic and chili peppers to the pan and season with black pepper and additional salt if desired, sauté for 2-3 minutes.
4. Serve as a side dish or part of a meal.

Guys, I got you on this breakfast sandwich recipe list.
Heat your cast iron pan with some olive oil in it
200 g pack of tempeh, shredded 3 potatoes shredded
1 thinly sliced (and cleaned 😊) leek
Place in bowl with the following seasonings:
1 T smoked paprika
3/4 tsp granulated garlic
1 tsp rubbed sage
3/4 tsp granulated onion
1 1/2 tsp corn starch
1 tsp pepper
Flake salt
Mix together well by hand
Press into hot pan (giant potato pancake style) cook on stovetop low for about 20 minutes. Flip it following video tutorial then bake at 400 F for 10-15 minutes.
Meanwhile, vegan butter and griddle English muffin halves (or toast)
Squeeze/press a 400g tofu, then brown in pan, seasoned with Eggy Beast seasoning.
Sandwich = tofu, sauce of choice, vegan cheese if that’s your jam… chefs kiss! This makes 4 sandwiches, great for grab n go breakfast!

@@bonniek7228 I feel this way exactly. So many people really don’t understand the technique required in well-done cooking. If I leave oil out of a recipe, I know it won’t taste as good and I’m not lying to myself saying it’s begter without 😂
For people who have been diagnosed with cardiovascular health issues, high blood pressure, high cholesterol, or they have had stents or bypass surgery, eating really clean and avoiding added oils is key to taking care of their health conditions. If these are issues for you, or you are trying to avoid those issues, some choose to limit added oils and processed foods. For the rest of us, we can eat in a way that we are comfortable with. It's simply a personal choice.

I don't get why people constantly feel the need to jump on him about this. He is teaching us techniques to making a plant based diet more delicious. I have only been doing this for a little over two years, so I definitely need the help. Haha! 😊

Derek, before I became vegan, I worked as a cook on a hunting ranch in central Texas for a couple of years as a favor to the ranch boss's daughter. She wanted to take over the ranch kitchen and she asked me to help her. I had never cooked outside of my own kitchen, so it was quite an interesting experience, and one I would never do it again, even in a vegan kitchen. lol We had anywhere from 20 to 50 on any given day for three meals. We also had guest chef's now and then, but I didn't finish that gig with a very good impression of "chefs," however it became very clear to me through that experience that a good cook cooks and a great cook loves. You, sir, are a great cook. Thanks, Chef!

Try wilt- saute turnip greens with puree of fresh ginger and mint.... finish up with diced roasted red peppers, tamari and sesame oil drizzle, if you got it pop on nutritional yeast right before you munch out.

Serious Eats recently put out an interesting vegetarian mushroom/veg pot pie recipe. I subbed plant based dairy milk & butter, found vegan puff pastry, and added trumpet mushrooms using your shredding technique. It came out so great that my carnivorous partner was literally scraping up all the last bits left at the bottom of the pan! Thanks for all the techniques and inspiration over the years. Really helps out us busy home cooks!

I get food from the county several times a year. Today I got 5 POUNDS of king mushrooms! First thing I did was cook some up and eat them. So good!! Some went into the dehydrator, that will get put in jars for later and some will get ground into mushroom powder. Since I live alone there is no way that I could eat them all. I'll have some for several dishes.
