    It looks like it is trying to be a fine dining establishment, but ends up feeling derivative. A lot of these dishes looks like one would model a dish normally found in large portions in a more traditional Chinese restaurant, taking one piece from it, and adding what is presumed to be "fine dining"; like some gel sauce, or a streak of it, or some "artistic" display, or mold. This feels like an attempt at deconstruction, but without distilling it's essence and the touch of elegance.

      That’s exactly what I was thinking. It feels dull and lacks a clear sense of direction. The food is like a plastic toy knife painted metallic to look like real metal.

      For $500 yeah. Prolly worth closer to 150-200 maybe

      Agree. I'm no expert, but the concept of presentation feels very Western, and definitely not something from ancient or medieval China. If the ambience, seats and even cutlery is traditional Chinese, but when the food arrives it looks western, I would be disappointed.
      This once again falls into the trap of Chinese=Low, and French=High. So to make it "elegant", take Chinese food and make it look as French as possible.

    Just by looking at the plates / silverware you already know its gonna be a good time aha, looks really nice!
    Edit: After watching it completely, I think that 518$ are quite on the high end for this, I have seen more nicely made stuff on your channel for way cheaper....

    6:21 I love how they have this elegant display of the marble rotating plate. I saw it and thought "wow that's very cool". Then you go to cut it and it's unstable and wobbling all over the place. Not so elegant when you're sacrificing function for it.

    I'd love to hear more overall thoughts on this one. Its been on my radar, but the only restaurant more expensive than that in the city is Masa. Just crazy to open with that kind of price tag. I'm not saying that a meal can't be worth that, but I really need some glowing reviews to pull the trigger. Food critics aren't everything by any means, but I need to be wowed by something. Le Bernardin still hasn't crossed the $300 threshold and its as legendary as they come.

      Le Bernardin was pure garbage last time I dined there September 2022. I was punching walls pissed off.

    The presentation of some of the dishes was not up to the standard of 518 USD per person, I have seen much more elegant and beautiful plating for less. The lobster tail dish at 5:59 looks like something an apprentice at the cooking school would try to make ...

      If they just did the sauce a little more neatly and made that slice of pepper look less out of place it would make a world of difference.

    Overall the menu looked stunning... but, At the $500+ USD price range, we are in the 3-star Michelin price range..I know they aren't yet Michelin rated, but at $500+ with no wine parings, perfection of every detail should be mandatory. There was a patina of dust on the glass on the porcelain display , they spilled the tea, then he had to serve himself tea! Chef Gua branding on the garnishes was as garish as the faux gold plated tablewares. The morel mushroom were dried and reconstituted. Overall, it looks incredibly delicious, but at $500+.. this is a a sub 1 star presentation.

    It's 3am and the internet brought me here. For $518, I can serve you 19 different shades of blue Sherwin William's paint. For dessert, a brown paper bag of freshly sprayed rattle can gloss.

    I’m sure its delicious but some of the plating is very clutter… for $519, there needs to be some refinement. I see pieces of arugula and dill put on the plate just for no particular reason other than aesthetics, which is very old fashion.

    Presentation of the wagyu couse is messy. The dishes for the most part aren't even that creative to be honest.

    Almost half of the dishes are eaten with knive and fork, it's hardly Chinese cuisine, not that there's anything wrong with that.

    $518 is hard for me to wrap my head around, much like some famous omakase sushi that charge several hundred for raw fish. thank god my tastebuds aren't this refined. fool me once shame on you, fool me twice shame on me.

    I am guessing that the $518 price tag is due to the number of dishes that need to be washed, and the gimmicky serving containers. I believe the food should be the focus, not a wood box, or rotating plate. Not impressed.

    Since when did ancient chinese food implemented Foie Gras, truffle and caviar as a part of their ingredient? This entire presentation comes off pretentious and derivative. It's crazy the chef is charging 3 michelin star price without wine pairing and exceptional service.

    They are masters at how to make fool people with nice crockery and presentations. They charge double or triple the price and look at the quantity given. What a joke. What a shame😂

    Chinese cuisine is very good but lacks of cooking techniques like the french in the world of fine dining. I was very excited to see the video at first but ends up dissatisfied and dessert? Just orange and apple? 🥵🥵

    this restaurant is such a disgrace for chinese fine dining.....the plating looks like two centuries ago and very little creativity among the dishes...with all the michelin restaurants you have been, I was hoping you would give more "critical" comments on the food.
