      yeah, it's Swiftlet's saliva alright and there are farms for it. Farmers collect it after the baby birds are hatched and are able to fly. You think people are dumb enough to keep harvesting something in the most primitive and unsustainable way? what age are u living in? @@chewielewis4002

      @@chewielewis4002 eh. Won't deny that it's bird saliva, but there's a few subspecies used for this dish and some of them are a lot more prolific. Hard to say if this is made from the endangered ones.

    Chef Tam was so happy and humble! And Ollie doubting his taste buds because he likes Chef Tam so much is so sweet! And yet he has to tell him he didn’t like the marrow! 😂 They do have one of the best jobs in the world 😁

    I love chef Tam, he just looks so friendly, he did not act tough to intimidate the boys unlike any chef they met in italy. And i love that Ollie stuck to his opinion that he didnt like the bone marrow texture and told the chef, no butt kissing needed, and Josh at 5:10 you can just smell the food, no need to snort it 😂

      I was thinking about that after I watched it and was running some errands. Like, it is not just that they get access to this stuff, but consistently people actually want them to come back to film again. David Beckham ironically is the reason this whole series exists because he loved his experience with them the first time so much, he wanted them to do one of his interviews in Macao and they did that on their dime, and then the Macao govt tourism reached out and asked them to come back sponsored. Then this episode if you have them on instagram they actually got invited back on the same day they filmed this and Chef Tam treated them to an epic supper as well with the whole crew. It warms my cold heart it does.

    Change the menu every 2 weeks is absolutly doable. I worked for a michelin star chef for 3 years (quit because it was too intense of a job for my taste) and we changed the menu completly every 3 days (6day weeks, half week menu, closed on mondays)

    For anyone wondering, it’s not usual to use two chopsticks in a Chinese restaurant; the extra chopsticks are communal, and used when sharing dishes. Typically, there isn’t a color difference so you just need to be careful at more formal meals. I really like the innovation with blue and yellow chopsticks!!!! That way it’s easier to see that someone is indeed using the communal chopsticks. ❤❤❤

    In case anyone’s wondering, this restaurant is in a luxury resort hotel called Wynn Palace in Macao, a Special Administrative Region (S.A.R.) of China. This S.A.R. is near Hong Kong, so if you’re planning to visit HK, you could also make a trip to Macao as well.

    The chopsticks are so pretty!
    The sea cucumber w/shitake mushroom is a classic Chinese dish. One of my faves. Mostly made for banquets.

    Chef Tam is so sweet and down to Earth, that man is just having fun with his guests and creations. He's living THE life! So many famous chefs in the West are self-righteous (more like pompous), but chef Tam is just here to enjoys foods with everyone!

    Bird’s Nest - is the spit that a specific species of bird uses to make its nest out of. It’s a delicacy (& dangerous to harvest). My mom made me drink it during my entire pregnancy (old Chinese custom). They cook it in a soup with rock sugar and it can be slightly sweet - but you have to get over the fact you’re eating bird spit 😂

      It's one of those delicacies also popular in El Nido, Palawan in the Philippines (hence the local name Nido Soup) and yes it's made out of a Balinsasayaw bird's dried saliva harvested out of those caves there.

      birds nest is fine since there’s no flavor, just the sweetness of the soup. I don’t get the obsession for abalone, its not that great or interesting of a texture or flavor imo. woohoo edible rubber my favorite.

    I wonder if anyone told them what the "birds nest" was in the dessert with snow pear. It's actually from a Swallow's bird's nest that's made of hardened bird saliva and turns to a jelly texture in water. Highly prized in chinese cuisine and medicine it's also extremely expensive for its rarity.

    Bird's nest is edible solidified bird saliva. For real. It's a delicacy I've had a few times. Sounds weird but it's delicious and good for you.

    Chef Tam is so humble and good-humored. Crab, bird's nest and abalone are considered expensive delicacies in Chinese cuisine. Love the duo's commentary and delight. I also noticed how Josh turned away to drink his wine as if he's in Korea lols. Hope to see you guys try more Chinese food!

    I am impressed with this video and Josh and Ollie are looking finely dressed in this episode, elegant and yet casual, I am here for it, and Luke gets to enjoy some of what they enjoy too!     Normally I don't try new things easily and I'm very allergic to shellfish, *but* for Chef Tam, I would eat everything he gave me. I don't care if I die from the shellfish, it's a price I'd pay for him.

    The highlight of this video for me wasn't really the food -- as good as it appeared to be -- but seeing an even stronger relationship between Josh and Ollie. GOD BLESS you guys, you are both incredible! Now you need to go back to Buckingham Palace for another meeting with His Majesty as the "ChineseEnglishmen" :) haha!

    I love how both Josh and Olly never let their accomplishments go to their heads. They have had Will Smith, Ryan Reynolds, Arnold Swartenager, and other A lists on their show. They have been personally honored by several Michelin Star Chefs, they met the King of England, and they remain the 2 boys who began their shows in their own homes. You guys rock!!

    here’s a suggestion, invite a local to sample the cuisine that they would be more familiar with so that local population receives the best review of the dishes that are ‘strange’ in your view. This was one my favorite videos.

    Most of the food in this menu is extremely expensive, and has good nutritional value - these are food that Chinese people enjoy, to an extent, for health purposes. The sturgeon bone marrow and sea cucumber, are both rich in collagen. I would agree that some of those food are an acquired taste to an extent, but also, the process to make some of those food is extremely laborious. To make the bone marrow, sea cucumber and abalone into an edible soft texture, takes many hours of cooking. Most of these foods also don't have much of a taste to begin with, so to cook it in a way that is appetizing, is an immense skill.

    I love this so much. One of the places I've always wanted to visit. I'd love to see a video on *North China* or specifically *Qingdao* where Josh's grandma was from and where he spent his secondary school years (12-18).

    I think one important thing to know about Chinese and East Asian cuisine in general is that texture is far more important than in European and American cuisine. Asian people see texture as important as flavour. That’s why there are famous popular foods like mochi, bubble tea, and tteokbokki. Even though those ingredients in themselves have no flavour, they add TEXTURE. That’s also why some Asian foods might seem weird or scary, like fish bone marrow or chicken feet, but it’s because it’s impossible to achieve the same variety of texture just by eating plain old animal meat. Western cuisine focuses heavily on flavour but comparatively deprioritizes texture

    I can get on board with Korean and Japanese cuisine, but fine dining Chinese food would be a challenge for me. Too much seafood and unfamiliar textures. I admire adventurous eaters though! ❤

    Also, thank you for continuing to censor some of the less… “enjoyable” noises with falcon (eagle ?) cries! IDK if it was because of a previous comment I left but that helps so much and I (as I’m sure anyone else with emetophobia or an aversion to those kinds of noises) appreciate it greatly 🙏
