COD & CHORIZO STEW - a really nice way to prepare cod by poaching it in a chorizo stew

Dice and sweat an onion in olive oil
Peel, slice and add chorizo to the onions
Fry for a few minutes
Add a tin of chopped tomatoes
Add one more tin of water
Bring to the boil
Add fish and reduce to simmer
Cook for 7min
Remove from stew
Reduce liquid.
Plate up rice, cod & chorizo stew.
Pour sauce over fish.
Voilà!
