With most fish i totally agree and it stops the stomach bacteria turning the fish but with mackerel its better and easier as a whole fish. This is not my advice but the advice of alot of charter skippers and commercials. Im not sure if it makes alot of difference if you freeze them straight away gutted or with guts in
@@gsp . Mackerel and other fine boned fish I use your method, for a big fish I'd get the needle nosed pliers out of my knife box and pull them out one at a time for a tidier fillet and better yield . I've worked with a lot of chefs who couldn't do as tidy a job as you did Greg. It's rare in a professional kitchen to see anything like this being done these days, a sign of the times .

Never cut toward yourself Glen. My mate Robbo sliced through his artery and damn near died on the steam back in from Newhaven one day wrecking. We had to tourniquet his arm with a speargun rubber. We always carried them for shooting big conger in the head before we dragged them aboard.

One tip I’d give everyone is try and do the least movements possible with your knife when doing the actual filtering. Ideally one long slice, to get the cleanest fillet! But nice knife skills chef ;)

I cut my mackerel fillets that way and then I have tweezers for any bones but I think I will try your way next time thanks
