No, thank YOU., I never realized how much meat I wasted by cutting the head off and not following the contour. I have not been brave enough to try a salmon tartare, but I may soon. This is an excellent example of how to properly filet and minimize waste! Don't forget the collar and cheeks! Lastly you can also save the head and bones for delicious soup stock
or you could do what I do and fillet right on the bank of the river or where ever your fishing and toss the bones and things back so other fish/ shell fish can have it.

Hello. I am glad that video is helping you get better. I use a Shun 9.5 inch Yanagiba knife. It is actually not the best knife for the job the blade is not flexible enough. It work but not the best. A fillet knife from Wusthof will be a very good choice. Your smoked salmon sound delicious. Have a piece for me. Cheers!!!

Hi. Cheeks are very good and I will suggest not wasting them. The thing is that they are tiny on many fish and to make a dish out of them you will need to clean a lot of fish. Cod fish, skate, grouper and monkfish have great big chicks. Thank you for watching!

Interesting trick with the peeler. I'm a barbarian. I use the same needle knose pliers to pull bones as I do to remove hooks and cut line.

Awesome video! A wonderful and straight to the point demonstration, thanks for the upload. You have no idea how much a filleted side of salmon costs compared to the whole unprepared fish.
