    I work in a salmon fish factory in the fillet department, what this guy did is like the best you could get. He knows what he is doing and can be a teacher in my factory or any other fish factory! This is the truth

    I was recently moved to the fish station at work and i used this video as my guide for Filleting Salmon. I'm the only one in the kitchen to use this technique and I can say I'm one of the fastest and least wasteful thanks to it. Thank you so much for this video.

    I just tried filleting and de-boning a Coho (silver salmon) I caught a few hours ago, from Puget Sound. Mine looked so sloppy, compared to yours. I will use your video as my training video. You retained so much meat.Thank you so much for sharing this!

    Rogers Powell It is good to see another Culinary expert online. I would grade you an A+ as my student or my teacher. I use a slightly different style on salmon with the same results. I prefer to use stainless steel fish tweezers. Thank you for using the fish knife in the video too!

    No, thank YOU., I never realized how much meat I wasted by cutting the head off and not following the contour. I have not been brave enough to try a salmon tartare, but I may soon. This is really a wonderful video. You utilize virtually all of the useful meat of the fish. Quite impressive! Bon apetit et merci encore

    Wonderful demonstration. I just purchased 12 whole salmon and will definitely be trying this technique. A new knife has definitely just gone on my Christmas wish list. One difference is that we do save the "collar" of the salmon for smoking.

    This is an excellent example of how to properly filet and minimize waste! Don't forget the collar and cheeks! Lastly you can also save the head and bones for delicious soup stock

      or you could do what I do and fillet right on the bank of the river or where ever your fishing and toss the bones and things back so other fish/ shell fish can have it.

    Interesting trick with the peeler. I'm a barbarian. I use the same needle knose pliers to pull bones as I do to remove hooks and cut line.

    I agree with the long stroke motion. Sawing is something I always discourage my students to do. Also the less you touch the flesh of the fish with your hands, the better it is.

    im going fishing trout for the first time to day and i want to do the whole thing on my own, fish it, debone and cook i. i have never worked with trout before how ever i have worked with most fish in the north atlantic ocean so im not new at this. if you have made any trout vids showing how to do everything from when i get in to the kitchen that would be awesome. i might even make a vid of my trying it and send it to you for fun and giggles

    Wow, thanks for the tips! (The Apple peeler is very useful!) I would advise you not to wear jewelry when you cook though; could get in the way or get bacteria 'specially when deal with meat- you know how it is- unless you wash it with jewelry-soap or something.

      Hello. I am glad that video is helping you get better. I use a Shun 9.5 inch Yanagiba knife.
      It is actually not the best knife for the job the blade is not flexible enough. It work but not the best. A fillet knife from Wusthof will be a very good choice. Your smoked salmon sound delicious. Have a piece for me. Cheers!!!

    Thank you for posting this, it is very informative. I just got a chinook salmon and I am going to try it your way. What kind of knife is that and how do you keep it so sharp? It looks like a fairly stiff blade; all my fillet knives are more flexible so I wonder if it makes a difference.

      Hi. Thank you for visiting. The knife I am using is actually not the best knife for the job. Like you say the blade is stiff and if you are not use to it you might not do well. You want a filet knife with a flexible blade that will follow the bones better. It look like this is the kind you have. I hope your salmon turn out well. Cheers!

    You should make a video on cooking tilapia. I look online for ways to cook tilapia, but none of the recipes looked very good. Do you have any recipes to cook tilapia that use vegetables.

    ive seen videos on filleting larger fish and somtimes, they cut out the cheeks. Is this recommended on certain species or just people "not wastin nuthin"?

      Hi. Cheeks are very good and I will suggest not wasting them. The thing is that they are tiny on many fish and to make a dish out of them you will need to clean a lot of fish. Cod fish, skate, grouper and monkfish have great big chicks.

      Hi. I am using the wrong knife actually, it is a Shun Yanagiba. A fillet knife is more recommended for that kind of fileting. Wusthof makes a great one. Thank you for watching!

    Awesome video! A wonderful and straight to the point demonstration, thanks for the upload. You have no idea how much a filleted side of salmon costs compared to the whole unprepared fish. I love salmon so this will help keep some money in my pocket. Can't wait to get to Billingsgate Fish Market *winks*
