I don't buy bread anymore! The new perfect recipe for bread with spelt flour
This is the best bread I have baked so far! Spelt flour adds an incredible depth of flavor, with a crust that's crispy and flaky, and an inside as soft as a pillow. I'm over the moon with how it turned out!
Ingredients:
• Water: 1 cup (220 ml)
• Fresh yeast: ¾ tsp. (3 g) or dry yeast: ½ tsp. (2 g)
• (Optional) Sugar: 1 tsp. (4 g)
• Bread flour: 1 ½ cups (220 g)
• Spelt flour: ¾ cup (100 g)
• Salt: 1 tsp. (6 g)
Spelt flour gives it a unique taste and texture that sets it apart from the rest. Follow my steps for a truly memorable baking experience.

Where I can buy the combo tray botton/ top ?
That's not really a combo, they are just two identical trays. They have the small indentations that keep them from sliding, but I have been using just regular trays of the same size and they work perfectly.

I was told to touch it less for light soft bread. It doesnt seem to be true.
That's kind of true, but not always. Through trial and error, we learn when it's okay to squish or flatten the dough and when it's not. For example, after the last rise, you will notice that I gently take the dough out of the bowl, gently fold it, cut it, and even when I shape the dough balls, I try not to disturb the bubbles in the middle. For the last shape, I dare to flatten it a bit more, but the small bubbles are still there and the yeast is at its peak. It will make new bubbles in no time and the strong gluten network will hold them together nicely.
No rise what so ever. What king of plain yoghurt?
Any yoghurt will do, it should rise even if you replace it with water. I'd try changing the yeast, yours doesn't seem to be working.
Thank you for the video. Please share the brand or type of yeast you are using. Also, please share the brand of flours you are using for this recipe. I keep trying to bake following your recipes but I am not having the same results. If you can share the brand of yeast you are using & flour that would be most helpful. Thanks.
I always use what's available, I must have 4 or 5 types of flour in my pantry. The brand doesn't matter at all, if you can get your hands on bread flour with about 12% protein, you're good to go. I have even made this bread and others with all-purpose flour. As I said earlier, try to get active dry yeast instead of instant. It should definitely work with instant, I've tested it many times, but let's change one thing at a time and see how it goes. Also, let me know what's different, maybe there's something else you need to change.
Why didn't you write how long to have it in the oven and at which temperature after the lid is removed??!!

Yes, absolutely. You can even skip it, it's optional.

@@Food-Language me too because I'm following these videos to a "T" & not getting the same dough. My dough does not rise & bubble up like hers. I'm using Red Star Platinum Premium Instant Yeast exp. Oct 2025. I'm starting to think it's the yeast. You can't buy the Red Star fresh yeast anywhere in my area. So annoying.
@@sharontownend5750 Hi Sharon, can you get active dry yeast? Active dry is exactly the same as the fresh yeast I use, but dessicated. Instant will work too, but if you're not getting good results, I'd try another one. If you get active dry yeast, make sure you mix it with water and a little sugar and let it activate for 5-10 minutes until it gets frothy. That way you know it's alive and active.
Hi,😀how do you keep it soft ,I have made bread before and after 1 day becomes hard
If I don't eat it right away, I keep mine in an airtight container and it stays soft. A neat trick is to put it on a hot pan, sprinkle some water on the pan (just a few drops) and close the lid. In a few minutes, it'll regain its softness and be as good as new.

Just baked these. Pro tip to all: don’t flour the table unless you are a professional because flouring the table or adding too much flour on the dough, the dough will become longer and not get a good shape and sticky. You want it to stick in the table, only flour the dough.

Oh my Gosh! You have no idea what an art it is bake fresh bread with simple ingredients. These so called artisan bakeries in Spokane, WA., make these loaves that are so heavy with grains, because they think they know what we, the customer wants, then charges an " arm and leg " needing a fork lift to take it to your car! Disgraceful! But this is the way to make beautiful light tasty bread without all the extras! Thank you for this wonderful video!!
